Watermelon Soup Recipe

Ingredients
4 cups seeded watermelon cubes
1/3 cup pomegranate juice
2 tablespoons fresh lime juice
1 teaspoon chopped fresh mint
1/4 to 1/2 teaspoon ground ginger
1 tablespoon honey (optional)
1/3 cup plain nonfat yogurt
Preparation
Process first 5 ingredients and honey, if desired, in a blender or food processor until smooth, stopping to scrape down sides. Cover and chill 1 hour. Serve in individual bowls with a dollop of yogurt.

Watermelon soup could be used to quench thirst and relive summerheat and irritability. Watermelon is considered, in TCM, to be sweet and cold and it goes to the UB, HRT, and ST channels. The functions of the watermelon in the soup promotes: urination, can help relieve constipation, sore throat, dry mouth, and even toothache. The pomegranate also has some actions that benefit the KD, as well as the LU and LV. In TCM, pomegranate is considered to be sweet, astringent, and cold. The pomegranate juice in the soup can help promote fluids, quench thirst and astringe intestines which would help issues of leucorrhea, bleeding, and diarrhea. The mint in the recipe and help clear heat from the body, and help relieve a sore throat.
