Whole Wheat Coconut Pancakes

The best way to calm your shen is through sweet whole-wheat coconut pancakes. Sweet coconut helps strengthen heart qi, while the whole wheat nourishes the heart and calms the shen. This recipe will also help nourish your blood and yin. It is a great breakfast to help start your day.

• 2 cups whole wheat flour

• 4 1/2 tsp baking powder

• 2 tsp cinnamon

• 2 tsp sugar

• 2 large eggs

• 2 cups + 2 tbsp coconut milk

• 2 tsp of coconut flakes

• Olive oil

Directions:

Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots; don’t over-mix.

Heat a large skillet on medium heat. Lightly put oil to coat and pour 1/4 cup of pancake batter. When the pancake starts to bubble, you may add your fruit if you wish (lychee, strawberry, peach or pear). When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter.

Baking helps build yin and yang.

Whole wheat flour- Sweet, slightly cool; spleen, heart, kidney; supplements qi, nourishes heart and calms shen, reduces thirst.

Baking powder- Moderates the affect of the other ingredients

Cinnamon- Acrid, sweet and warm; spleen, stomach and urinary bladder; Invigorates yang, dispels cold, promotes blood circulation, warms the mingmen fire.

Sugar- Sweet, neutral; lung and spleen; boosts the qi, harmonizes the center and moistens the lungs, treats lung dryness, lung vacuity, wind cold, taxation and fatigue. coughing and panting, mouth sores, wind-fire toothache.

Egg- Sweet, neutral; lung and large intestine; strengthens blood, jing and yin.

Coconut milk- Sweet, neutral; spleen, stomach, kidney; nourishes blood, yin and jing.

Coconut- Sweet, warm; heart and lung; strengthens heart and lung qi

Olive oil- Sweet, cool; liver, gallbladder; moistens, benefits the liver and gallbladder.

Contraindicated in anyone who is allergic to coconut. It is also very sweet and should be cautioned in diabetics.
