Dragon Eye Pudding

1 13-oz. can Longans (sweetened)
3 T. Rice Flour
1 tsp. Brandy (flavored brandy or triple sec)

Drain longans and reserve enough syrup to make two cups with added liquor and water if needed (add liquor first).

Combine liquid with rice flour in a saucepan and bring it to a slow boil, stirring constantly, and cook until it thickens (about 10 to 12 minutes).

Add longans and serve hot or warm in individual bowls. You may also substitute lichee fruits if you like.

This takes about 15 minutes to make and serves 4.

Longans: sweet, warm, nourish qi and blood, calm shen

Brandy: expels cold, invigorates blood
