Beef Essence

Beef Essence (2-4 servings) 1 pound lean beef, cut into thin strips 5 slices fresh ginger ¼ cup rice wine 5 ½ cups water 1. Place the beef and ginger in a pot with a tight-fitting lid. Add the wine and the water and bring it to a simmer. Do not let it boil. 2. Cook over low heat for 2 hours, adding water if necessary.
