Stuffed Lotus Root Ingredients: 1 medium lotus root ½ C dry mung beans ½ C carrot, diced Instructions: Soak mung beans in water for 30 minutes. Chop off one end of the lotus root (about 1 inch). You will see several holes in the root. Fill the holes with mung beans and diced carrot. Press stuffing in with a fork or chopstick. Steam for 1 hour, or until the lotus root is thoroughly cooked.
