Beet, Pea and Carrot salad. 6 beets, peeled and steamed and chopped into small 1 inch squares 1 cup peas. 1 cup carrots 2 eggs hardboiled, chopped  1 teaspoon vinegar 2 tablespoons mayonnaise or vegan version, added for flavor, similar properties to eggs and vinegar.
