Barley With Vegetables

Barley with Vegetables
1 cup barley, soaked
½ c. diced onion
½ c. diced carrots, beets, celery, or vegetables of your choice
1/3 c. shiitake mushrooms, soaked and sliced
1 tsp. sesame oil
3 cups water
¼ tsp. sea salt
Sautee vegetables.
Oven toast the barley just until dry.
Place barley and vegetables in pot with salt and water.
Cover and bring to a boil. Reduce heat and simmer for 40 minutes.
Serve with a parsley garnish. Serves 4.
