Simple Chicken Salad

Chop 1 large potato into 1/2 inch cubes and boil in salted water until tender, but not falling apart, al dente.
Any pre-cooked chicken can be used. Such as the roasted ones from the grocery store. Tear chicken into bit size pieces. About 1-2 cups will be used.
Chop 1 green pepper into bite size pieces. Steam or blanch lightly before using.
Finely chop 1-2 radishes or more for extra zing!
Combine the chicken, green pepper, potato, and radish in a mixing dish.
In a separate dish, combine equal parts olive oil and vinegar. Add salt and pepper to taste.
Pour dressing over Chicken mixture. This will taste best when it is made a day in advance.
Makes 2-3 servings.

Potato: strengthens spleen, supplements qi, and heals inflammation
Chicken: supplement qi and blood
Green bell pepper: moves qi and blood
Radish: loosens blood stasis, blood heat
Pepper (for seasoning, a mix of green and black): Enriches yang, expels cold, stimulates qi coursing
Vinegar: stimulates circulation, gastric juices
Olive Oil: moistens, anti-inflammatory
Salt: anti-inflammatory, softens
