Stir-Fried Kale and Beet Greens

Stir-Fried Kale and Beet Greens (2 servings):

* 1 tablespoon olive oil
* 1/3 onion, chopped
* 1 clove garlic, minced
* 1/3 cup whole grain bread crumbs
* 1/2 bunch kale – washed, dried, and shredded
* 1/2 bunch beet greens – washed, dried, and shredded
1. Heat oil over medium-high heat in a large frying pan. Add onions and garlic; cook and stir until soft.
2. Mix in breadcrumbs, and cook and stir until brown.
3. Stir in kale and beet greens, and cook until wilted. Serve hot or warm.
