STEAMED CORN BREAD

Serves 6 people

INGREDIENTS:
1 C grated apple — Cool, sweet and slightly sour. Strengthens HT, tonifies qi, quenches thirst, resolves mucus and lubricates LU
2 C pineapple-coconut juice — Pineapple = warm, sweet and sour. Aids digestion, stops diarrhea, dispels summer heat. Coconut = warm and sweet. Strengthens the body, reduces swelling, stops bleeding, kills worms and activates heart function
1 medium banana —Cold and sweet. Clears heat, lubricates lungs, lubricates intestines, lowers blood pressure, helps alleviate alcohol intoxication.
1/3 C whole-wheat flour — Slightly cool and sweet, clears heat, quenches thirst, relieves restlessness, promotes diuresis, calms spirit and stops sweating.
1 C cornmeal — neutral and sweet. Tonifies qi, strengthens the ST and SP, benefits the HT, is a diuretic and stimulates the flow of bile.
½ C. oatmeal — warm and sweet, strengthens spleen, tonifies and regulates qi, harmonizes ST
1/8 C goji berries — sweet, sour, neutral, nourishes blood and yin, strengthens the LU, benefits LV and KD, improves vision.

Preparation and cooking:
Blend the liquid with the banana. Add the rest of the ingredients and mix well. Pour into a pie plate and steam 30 minutes over medium flame. The bread is done when the toothpick inserted in the center comes out clean.
