Truffled Beet Salad

1 bunch beets
1 tablespoon sliced black truffles (jarred)
1 tablespoon olive oil
salt and pepper to taste

Wash the beets and remove the greens. Wrap in tin foil and place on a baking sheet in an oven heated to 375 degrees. Bake for 45 minutes, or until easily pierced with a fork.
Remove beets from the foil and cool to room temperature. Once cooled, the beet skins can be easily removed with your fingers. Cut beets into small cubes.
Chop black truffles finely.
Toss together all ingredients.

Beets: sweet, neutral. Enter the Heart, Liver, Spleen, and Stomach. Nourish the blood and calm the spirit.
Truffles are similar to some wild mushrooms. Their flavor is aromatic and sweet. Nourish qi and blood and benefit the spirit.

Serves 2-4 people.
