Millet Patties with Mushroom Gravy

• 1 cups millet (washed)
• 1 cup garbanzo beans (1 cup corn, squash- be creative)
• 4 cups water
• 1 medium onion- chopped

• Put everything into a pot
• Bring to a boil without a cover
• Add salt, turn down to simmer and cover for 20 minutes
• Stir, and cool- put in fridge till cold (1 hour- over night)

To make patties take the cold millet/beans and combine with 2 Tablespoons flour (rice or starch) —makes 8 patties

• Combine into a texture that is neither too dry nor too wet, and mold the patties into round and flat “burger†shapes until it holds together
• Dust each side with a bit of flour
• Pour virgin sesame oil into a frying pan (enough to cover the bottom) and fry both sides of the patties until golden brown

Mushroom Gravy Ingredients (makes 8 oz)
• 1 cup scallions diced
• 1 cup mushrooms (sliced)
• 1 cup water
• 1 TBS flour (or Kudzu)
• 2 tsp Soy Sauce (or Tamari- shoyu)
• Sesame oil

• Pour some sesame oil into a pan and sauté the scallions and mushrooms until soft and golden
• Add the soy sauce and cook for a couple of minutes on a low heat
• Dilute the flour with a little bit of water first and then add the rest of the cup of water while stirring
• Add the water and kudzu to the leeks and mushrooms, bring to a boil while still stirring
• As you are stirring and the water comes to a boil, the gravy will thicken
• When the gravy has reached the desired consistency, adjust the seasoning by adding whatever spice or flavoring you would like to add

Mushroom- SP/ST — Supplement spleen and stomach, rectifies qi, transforms phlegm, boosts wei qi, detoxifies, improves appetite, stops diarrhea, resolves phlegm
Soy Sauce — SP/ST/KD — harmonize the middle jiao, clears heat

If one wants to tonify lung and clear phlegm can add daikon radish or use chen pi in the stock
