Barley Primavera

Barley Primavera

3 scallions, sliced thinly and diagonally
6 c. water
¼ c. canola oil
1 ¼ c. pearl barley
4 cloves garlic
¼ c. minced parsley
½ c. shiitake mushrooms

1 small zucchini, chopped
1 small yellow squash, chopped
1 medium carrot, grated

1 large red pepper, seeded and chopped
1 small yellow and green peppers, seeded and chopped
¼ c. raspberry vinegar
1 tsp. sea salt
½ tsp. freshly ground pepper

Place the barley and water into a saucepan. Bring the water to a boil, cover the pan with a lid, and simmer the barley for 20 minutes, until tender.

When the barley is cooked, drain it well and chill completely.

Heat the canola oil and garlic in a small saute pan over low heat. Slowly cook the garlic for 2 minutes, until golden brown, and transfer to a large mixing bowl.

In the same bowl, combine the peppers, parsley, zucchini, yellow squash, carrot, scallions and mushrooms with the cooked barley.

Add the vinegar and season with salt and pepper.

Light-n-Lively Starfruit Juice

Light-n-Lively Starfruit Juice

for after a tough day in the garden, or as an anecdote to too much Mexican and Margaritas.

To make a pitcher :
5 large stalks of Celery (cleaned, but don’t need to be trimmed)
4 Starfruit (Carambola)
3 cups of Grapes (cleaned with skins and seeds)
1 Lime (If possible, use mature, dark green limes that are kept at room temperature and rolled around on a hard surface before juicing. This will give you the most amount of juice and the best quality.)
And a few Sprigs of Mint.
Serve with halved grapes or sliced starfruit in a chilled glass. Enjoy!

Recipe for Damp Heat in the UB
When a patient is suffering from damp heat in the lower burner, there are not many dessert recipes they should probably be eating- since sweet and nourishing foods will not encourage the pattern to resolve. Therefore, I have written a recipe for a drink that will be very refreshing and will aid in removing the damp heat from the body.
This recipe would be cool and detoxifying. Some of the ingredients drain damp, treat Lin disorder and promote urination- while also promoting fluids. This would be great for Damp Heat in the Lower Burner, Summer Heat, and many other patterns dealing with Heat and Damp conditions. It could also be used to detoxify the body and purify the liver.

For Damp Heat drink 1 cup twice daily.
Drink 3 cups and eat minimally if the goal is to detoxify the body.

Barley with Vegetables

1 cup barley, soaked
½ c. diced onion
½ c. diced carrots, beets, celery, or vegetables of your choice
1/3 c. shiitake mushrooms, soaked and sliced
1 tsp. sesame oil
3 cups water
¼ tsp. sea salt

Sautee vegetables.

Oven toast the barley just until dry.

Place barley and vegetables in pot with salt and water.

Cover and bring to a boil. Reduce heat and simmer for 40 minutes.

Serve with a parsley garnish. Serves 4.
