Sweet Potato Pie

Sweet Potato Pie Recipe

2 sweet potatoes

1 cup frozen mango, thawed and chopped

½ cup honey or agave nectar

½ tsp ground cinnamon

1 (8in) pie crust of your choice

Directions: Pre heat the oven to 350 degrees Fahrenheit, bake the sweet potatoes for 20 to 30 minutes or until soft. Let cool. Peel potatoes until smooth, stopping occasionally to scrape down work bowl. Pour the filling into the pie crust. Bake for 30 minutes or until the top starts to brown.

Serving Size: 8

Curry Ice Cream

Curry Ice Cream

2 pitted dates, soaked for 2 hours

½ cup coconut meat

½ cup raisins

1 Tbsp agave nectar

1 ½ tsp curry powder

Directions: Drain dates, reserving about 3 Tbsp of the soaked water. Transfer the dates and the reserved soaked water to a blender with all the remaining ingredients. Process on high speed until smooth and creamy, stopping occasionally to scrape down the blender jar. Pour into an ice cream maker until forms  a sturdy, creamy texture or follow manufactures instructions.

Serving Size: 1 quart

TCM Evaluation:  Dates are sweet, strengthens SP and nourishes body; coconut meat is sweet, warm, nourishing and strengthens body; raisins are sweet, sour strengthens bones and tendons; agave nectar is sweet, neutral, nourishes and harmonizes MJ; curry powder is pungent, warm and disperses cold, rectifies qi.

 

Sprouted Black Bean Soup

Sprouted Black Bean Soup

2 quarts water

2 cups dried black beans sprouted

¼ cup plus 1 Tbsp extra virgin olive oil

2 bay leaves

2 cloves garlic

½ yellow onion chopped

½ green and ½ red bell pepper chopped

2 roma tomatoes, chopped

1 stalk celery, chopped

2 Tbsp chili powder

2 Tbsp ground cumin

Sea Salt

Directions: Pour water, beans, ¼ cup of oil, bay leaves and garlic into large soup pot on high heat. Bring to a boil. Immediately decrease heat. Simmer while preparing remaining ingredients. Heat remaining 1 Tbsp of oil in large saucepan on medium heat. Add onion, bell peppers, tomatoes, celery, chili powder and cumin, cook and stir for about 7 minutes or until onion is translucent. Transfer bell pepper mixture to soup pot. Bring soup to a boil. Cook for about 30 minutes or until vegetables are soft. Season with salt to taste.

Serving Size: 6 to 8

Breakfast Potatoes and Onions

6 red potatoes, scrubbed

¼ cup olive oil

2 yellow onions, chopped

2 Tbsp ground dried papaya seeds

Sea Salt

Directions: Put the potatoes in a medium saucepan with enough water to cover, bring to a boil, decrease the heat then simmer for about 15 minutes or until it’s tender. Drain and let the potatoes cool. Chop them into bite sized pieces. Heat the oil on medium skillet on medium heat. add onions and fry for 5 to 10 minutes or until onions start to brown. Stir in potatoes, grounded papaya seeds and salt to taste. Mix well. Cook for about 10 minutes or until potatoes are crispy.

Serving Size: 4

TCM evaluation: Red potatoes are sweet and neutral, strengthens and harmonizes the MJ and is good for constipation; olive oil is sweet, sour, astringent and neutral, clears LU, benefits throat; yellow onions are pungent, neutral, goes to the LU and LI, clears heat, relieves toxicity, kills parasites; Papaya seeds are bitter, sweet, moistening and descends qi; sea salt is salty and cold, eases bowel movements.

 

Southern Style Greens

Southern Style Greens

2 ½ bunches (1 lbs) collard greens, stemmed and chopped

½ cup olive oil

¼ yellow onion chopped

1 Tbsp of nutritional yeast flakes

1 tsp hickory smoke powder

Sea Salt

Directions: Bring large pot of water to a boil on high heat. Add collard greens, oil, onion, nutritional yeast, hickory smoked powder. Stir and cover. Cook for 45 to 60 minutes or until collard greens are soft. Drain and season with salt.

Serving Size: 4

Vegan Cassava Cake

Vegan Cassava Cake

2 lbs cassava grated

1 can coconut milk

½ lbs coconut meat

1 cup mangosteen juice

handful of goji berries

Directions: pre heat oven to 400 degrees Fahrenheit, mix all ingredients together until evenly dispersed in baking tray, place in oven for 60 minutes or until top becomes golden brown.

Serving Size: 15

TCM Pattern: SP qi xu; ST yin xu

TCM Evaluation: cassava is sweet and neutral and nourishing to SP and ST, clears heat; coconut milk is sweet and neutral, strengthens the body, reduces swelling; coconut meat is sweet and warm, strengthens the body and stops bleeding; mangosteen juice is sweet and cool; goji berries are sweet, sour and neutral, nourishes blood and yin, improves vision.

 

 

 

Winter Melon Soup

Winter Melon Soup

3 qt vegetable broth

3 c winter melon, peeled and chopped

2 carrots

2 celery stalks

1 onion

12 Chinese mushrooms, stems removed

6 oz tofu noodles or finely sliced baked tofu

1 tsp chives

1 tsp peanut oil

1 Tbsp tamari

Directions: cook together until tender, about 25 minutes, season with chives, tamari and peanut oil.

Serving Size: 4

TCM pattern: UB damp heat; KD water overflow

TCM Evaluation:  winter melon is sweet, bland and cool, detoxifies and drains damp; carrots are sweet and neutral, diuretic and drains damp; celery stalks are sweet, bitter and cold, drains damp and transforms phlegm; onion clear heat, relieve toxicity, transform phlegm and damp; Chinese mushrooms are sweet and cool, rectifies qi and boost wei qi; tofu noodles are sweet and neutral, promotes urination and resolves toxicity

Barley tea

Mugicha (Barley Tea)

Made of whole grains of roasted barley, mugicha is drunk cold in the summer and after strenuous workouts.

Add ½ – 1 cup mugicha to 8 ¾ cups of boiling water. Bring back to a boil and then simmer for 5-10 minutes. Strain discarding the barley, transfer the mugicha to a pitcher and chill. Mugicha is also available in teabags.

TCM ANALYSIS

Barley and Barley Tea: sweet sl. salty cool SP ST UB
Actions: strengthens SP and ST; supplements qi; leaches damp and promotes urination.
Indications: bloating, gas, poor appetite, loose stool, edema, painful urination, fever with thirst, Summerheat, SP deficiency with Damp Heat.

Fruit Salad with Fresh Mint
yield: Serves 6

Ingredients
1 1/2 cups strawberries, cleaned and quartered
3/4 cup fresh pineapple chunks
1 cup apples, cored and cut into chunks
1 cup pears, cored and cut into chunks
1/4 chopped finely cup mint

Preparation
In a mixing bowl, combine the cut fruit and toss. Add the fresh mint and stir gently. Serve in parfait dishes or small bowls.

TCM ANALYSIS
Strawberries — Sweet, sour, cold; Lu, St, UB; Moistens Lung, promotes fluids, promotes urination, clears heat.
Pineapple — Sweet, sour, neutral; St, Lu; Clears heat, promotes fluids, aids digestion, drains damp.
Apple — Sweet, sour, cool; Sp, St, Ht, Lu; Supplements Lu, Sp, St, moistens Lung and LI, clears heat and promotes body fluids.
Pears — Sweet, cold; Lu, Li, St; Nourishes fluids, decreases thirst, moistens Lu, dissolves phlegm (w/ Bei Mu), Clears heat, resolves toxin.
Mint — Acrid, aromatic, cooling; Lu, Lv; Disperses wind heat, clears and benefits the head, eyes, and throat, vents rashes, allows constrained Lv qi to flow freely, expels turbid filth.

The recipe is cool while each ingredient enters the lungs to clear heat or moisten the lungs. The ingredients are indicated for cough, summerheat, and Lung heat overall. The mint helps release the exterior.

Avocado and Mushroom Salad

Avocado and Mushroom Salad
Ingredients
2 small firm, ripe avocados
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon red-wine vinegar
2 tablespoons Dijon mustard
1 tablespoon finely chopped garlic
2 tablespoons finely chopped parsley
1/3 pound mushrooms, thinly sliced
Salt to taste
Preparation

  • Peel the avocados, and cut them in half. Remove and discard the pit. Cut the avocados into 1 1/2-inch lengths.
  • Thoroughly blend the oil, lemon juice, vinegar, mustard, garlic and parsley with a wire whisk in a salad bowl. Add the mushrooms, avocado and salt to taste. Toss well and serve.
