Sweet Potato Pie

Sweet Potato Pie Recipe

2 sweet potatoes

1 cup frozen mango, thawed and chopped

½ cup honey or agave nectar

½ tsp ground cinnamon

1 (8in) pie crust of your choice

Directions: Pre heat the oven to 350 degrees Fahrenheit, bake the sweet potatoes for 20 to 30 minutes or until soft. Let cool. Peel potatoes until smooth, stopping occasionally to scrape down work bowl. Pour the filling into the pie crust. Bake for 30 minutes or until the top starts to brown.

Serving Size: 8

Curry Ice Cream

Curry Ice Cream

2 pitted dates, soaked for 2 hours

½ cup coconut meat

½ cup raisins

1 Tbsp agave nectar

1 ½ tsp curry powder

Directions: Drain dates, reserving about 3 Tbsp of the soaked water. Transfer the dates and the reserved soaked water to a blender with all the remaining ingredients. Process on high speed until smooth and creamy, stopping occasionally to scrape down the blender jar. Pour into an ice cream maker until forms  a sturdy, creamy texture or follow manufactures instructions.

Serving Size: 1 quart

TCM Evaluation:  Dates are sweet, strengthens SP and nourishes body; coconut meat is sweet, warm, nourishing and strengthens body; raisins are sweet, sour strengthens bones and tendons; agave nectar is sweet, neutral, nourishes and harmonizes MJ; curry powder is pungent, warm and disperses cold, rectifies qi.

 

Vegan Cassava Cake

Vegan Cassava Cake

2 lbs cassava grated

1 can coconut milk

½ lbs coconut meat

1 cup mangosteen juice

handful of goji berries

Directions: pre heat oven to 400 degrees Fahrenheit, mix all ingredients together until evenly dispersed in baking tray, place in oven for 60 minutes or until top becomes golden brown.

Serving Size: 15

TCM Pattern: SP qi xu; ST yin xu

TCM Evaluation: cassava is sweet and neutral and nourishing to SP and ST, clears heat; coconut milk is sweet and neutral, strengthens the body, reduces swelling; coconut meat is sweet and warm, strengthens the body and stops bleeding; mangosteen juice is sweet and cool; goji berries are sweet, sour and neutral, nourishes blood and yin, improves vision.

 

 

 

Fig and Grape Couscous Pudding

Fig and Grape Couscous Pudding

Ingredients:
2 figs
2 cups of red grapes
½ cup of raisins or goji berries
1 cup of couscous
2 tbsp raw honey
1 tsp sea salt
1 ½ cups water.

Preparation:
Blend figs and grapes together until they form a thick soup. Bring water
to a boil and add couscous and blended fruits. Reduce heat to low and
boil for 5 minutes. Remove from heat and stir in raw honey, sea salt, and
raisins/goji berries. Cover and let sit for five minutes, then spoon out
onto a plate and mold as desired (pudding will begin to cool and thicken
to a pasty consistency).

Makes 3-6 servings.

This recipe may be used to nourish Kidney yin and, to some extent, jing.

Figs: sweet, neutral, SP, LU, LI. Reinforces the SP/ST, moistens the LU
and throat, moistens the Intestines and promotes bowel movements. From the
vantage point of systematic correspondence, figs could be said to benefit
the male reproductive system, particularly in cases of impotence from low
sperm count. They grow in pairs, closely resemble the testicles, and
contain many small seeds.

Grapes/raisins: sweet, sl. sour, neutral. KD, LV, ST. Reinforces the LV
and KD, replenishes qi and blood, promotes production of body fluids,
promotes urination.

Raw honey: It is important to use raw honey that has not been filtered
because it will then retain active enzymes and bee pollen which benefit
the middle jiao and nourish KD jing.

Couscous: Couldn’t find any info on the energetic properties of this
grain. Seeing as how it’s in the wheat family, I would judge its
properties to be sweet and neutral – warm, entering the SP, ST, and KD.

Raw BlueBerry Blaster Pie

Raw BlueBerry Blaster Pie
2 C Raw Walnuts
1 C Unsweetened Shredded Dried Coconut
¼ t Salt
½ C Medjool Dates (pitted) + ¾ C Medjool Dates (pitted)
4 C Fresh Blueberries  (if you use frozen, thawed and well-drained)

1 T fresh lemon juice

Serves 8-12 (Depending on the slicer)

Crust
Blend Walnuts, Coconut and Salt in a food processor until coarsely ground. Add 1/2 c dates and process until the mixture resembles coarse crumbs and begins to stick together. Don’t over process/blend. (Any extra crust will store for about a month in the refrigerator or 3 months in the freezer).  Scoop Crust into a pie plate or tart pan. Use a light circular motion with your palm and finger to distribute th crumbs uniformly along the bottom and up the sides of the pan. There should be a ¾ inch lip of crumbs along the sides of the pan. After the crumbs are evenly distributed press the crust down on the bottom of the pan using your fingers and palm. Be sure to press especially firmly where the bottom of the pan joins the sides. Then press the crust against the pan’s sides, shaping it so that its edges are flush with the rim. Place in the freezer for 15 minutes.

Now place 1 -½ C of the blueberries along with the dates and lemon juice in a blender and process until smooth. Transfer to a mixing bowl, add the remaining blueberries, and mix well. Remove the crust from the freezer. Pour the blueberry filing into it and press down with a rubber spatula. Put in the freezer for at least 30 minutes. Cut and serve.

Overall Intended Action(s)
Strengthen and regulate the Spleen and Stomach Qi to improve digestion as well as providing the needed food processing to properly form stools, move stagnation and aid in constipation. Adding the Medjool Dates, Blueberries and Lemon Juice provides fluids and lubrication to assist the stool movement.

Orange apricot crisp

ORANGE APRICOT CRISP

8 oranges
1 tbsp grated orange zest
2 cups dried apricots, thinly sliced
½ cup dried raisins
½ cup chopped candied ginger
1 cup brown rice flour
½ cup sugar
1 tsp salt
6 tbsp vegan margarine
½ tsp vanilla extract

Pre heat oven to 350. Coat 9 inch square baking pan with cooking spray.
Cut ends off oranges. Stand 1 orange on cutting board and slice away pitch and peel. Cut orange into quarters, cut quarters into ½ inch slices. Repeat with remaining oranges and transfer to bowl. Stir apricots, raisins, and candies ginger into oranges. Spread mixture into baking pan.
Stir together brown rice flour, sugar, orange zest, and salt in bowl. Rub margarine and vanilla into rice flour mixture until mixture forms large crumbs. Spread crumbs over orange mixture.
Bake 30-40 minutes until top is golden brown.

LV Yin Xu Recipe

Oranges: sweet, sour, cool. Clears heat, soothes liver, nourishes fluids.
Orange zest: moves liver qi
Apricots: sl. Cool, sweet, sour. Regenerates body fluids, clears heat, quenches thirst
Raisins: sweet, warm, sour. Nourishes blood, relieves irritability
Ginger, acrid, warms (+ sweet): LU/SP/ST. disperses cold, redirects counterflow qi.
Brown rice flour: sweet, sl. Warm. SP/ST. Supplements qi, drains damp.
Sugar: sweet, warm. Sp/ST. Supplements and harmonizes Middle jiao.
Salt: salty, cold Clears heat, cools the blood.
Vegan margarine: Tonifies yin

Sticky Sesame & Walnut Balls

Ingredients:
1/3 cup (2 ounces) black sesame seeds
1/3 to ½ cup of chopped walnuts
3-4 TBL. Honey

Directions:
1. Roast the sesame seeds in a wide skillet over medium heat, stirring occasionally. Fry until fragrant, 3-5 minutes. Transfer the seeds to a bowl & let cool for a couple of minutes.
2. In a food processor, whir together the sesame seeds, walnuts, & 3 TBL Honey.
3. Roll into ¾ in. balls. If the balls don’t stick together, add a little more honey & mix well.
4. Serve.

Black Sesame seeds: Neutral, sweet & tonifies the kidney & liver, harmonizes blood & nourishes yin.
Walnuts: Slightly warm, sweet, tonifies kidneys, astringes lung, moisten intestines & descends rebellious qi.
Honey: Neutral/warm & sweet, nourishes yin, lubricates dryness, tonifies weakness, harmonizes stomach & strengthens spleen.

TCM: This dish addresses Kidney deficiency.

Strawberry and Pear Delight

Strawberry and Pear Delight
1 pint fresh strawberries
1 pint pears, halved and cooked
2 cups mint tea or apple juice
1/4 teaspoon sea salt
1 bar agar-agar
-Rinse agar-agar in cold water. Squeeze out excess water and tear into small pieces.
-Simmer in tea or juice 15 minutes. Skim off foam.
-Arrange pear halves on the bottom of a glass dish or mold. Cover with strawberries.
-Pour agar-agar over fruit and let set until firm.
Serves 6

Strawberry- sweet, cold, sour, LU/ST/UB, moistens LU, promotes fluids, promotes urination, clears heat
Pear- sweet, cold, LU/LI/ST, nourishes fluids, decreases thirst, moistens LU, dissolves phlegm, clears heat
Apple Juice- sweet, sour, cool, supplements LU/SP/ST, moistens LU and LI, clears heat and promotes body fluids
Salt- salty, cool, moistening, softening, KD
Agar-Agar- cool, sweet, benifits LU, influences LV, reduces inflammation
Overall Pattern: This dessert is great for moistening the Lungs. It is also very cooling and can be used for Stomach heat. To make it even colder you can sub out the apple juice and use the mint tea.

Baked pears

Baked Pears
Serving Size 1-2

2 medium ripe pears, peeled and halved
4 teaspoons butter or margarine
1 teaspoon lemon juice
2 teaspoons honey
1/4 teaspoon ground cinnamon
4 teaspoons orange marmalade

Directions
Place pear halves, cut side up, in a shallow 1-qt. baking dish. Place butter in the center of each; drizzle with lemon juice. Combine sugar and cinnamon; sprinkle over pears. Top with marmalade. Cover and bake at 350 degrees F for 15-20 minutes or until heated through.

This recipe is design for someone with Stomach Yin Xu.

lemon juice- tonifies yin, regulates liver, harmonizes stomach

honey- tonifies yin

cinnamon- tonifies stomach, stops pain

orange marmalade- tonifies lungs, helps with mucus, tonifies yin
