Beet and Goat Cheese Salad

BEET AND GOAT CHEESE SALAD serves 4

  • 4 beets, peeled
  • 4-1/2 oz goat cheese
  • 1 tbs chives
  • Salt/pepper
  • Several handfuls of young arugula
  • ½ apple, julienned
  • 2 tbs turbinado/brown sugar
  • 2 tbs rice vin
  • 2 tbs soy sauce
  • Extra virgin olive oil
  • Black sesame seeds

1) Bring water and beets to a boil, simmer until tender, 30 min. Drain and cool. Cut each beet into 8 wedges.

2) Blend cheese and chives and season with s & p.

3) Combine sugar, vinegar, and soy sauce. Beat dressing with enough olive oil until emulsified.

4) Toss beets and arugula with the dressing, scatter chunks of the cheese and julienned apple over the salad, drizzle with more evoo and sesame seeds.

Spiced Pears and Pomegranate

3 pears – peeled, cored and cut into wedges
1 pomegranate, skin and light-colored membrane removed
1 tablespoon fresh lemon juice
2 tablespoons light brown sugar
1/4 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 tablespoons finely chopped almonds
4 sprigs fresh mint leaves for garnish

The recipe feeds 4 so the serving size would be 1/4 of the recipe.

Fruit Salad with Fresh Mint
yield: Serves 6

Ingredients
1 1/2 cups strawberries, cleaned and quartered
3/4 cup fresh pineapple chunks
1 cup apples, cored and cut into chunks
1 cup pears, cored and cut into chunks
1/4 chopped finely cup mint

Preparation
In a mixing bowl, combine the cut fruit and toss. Add the fresh mint and stir gently. Serve in parfait dishes or small bowls.

The recipe is cool while each ingredient enters the lungs to clear heat or moisten the lungs. The ingredients are indicated for cough, summerheat, and Lung heat overall. The mint helps release the exterior.

Avocado and Mushroom Salad
Ingredients
2 small firm, ripe avocados
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 tablespoon red-wine vinegar
2 tablespoons Dijon mustard
1 tablespoon finely chopped garlic
2 tablespoons finely chopped parsley
1/3 pound mushrooms, thinly sliced
Salt to taste
Preparation

  • Peel the avocados, and cut them in half. Remove and discard the pit. Cut the avocados into 1 1/2-inch lengths.
  • Thoroughly blend the oil, lemon juice, vinegar, mustard, garlic and parsley with a wire whisk in a salad bowl. Add the mushrooms, avocado and salt to taste. Toss well and serve.

Horseradish Potato Salad

3 pounds small (2-inch) potatoes
1/4 cup red onion, chopped
1 tablespoon white-wine vinegar
1 cup sour cream (or 1/2 cup sour cream, 1/2 cup yogurt)
2 tablespoons fresh dill, finely chopped
1/4 cup chopped fresh chives
1 tablespoon Dijon mustard
3 tablespoons prepared horseradish
1 teaspoon salt
1/2 teaspoon black pepper

Boil the potatoes until fork tender, cool them to room temperature and quarter them. In a large bowl, mix the remaining ingredients and fold over the potatoes. Adjust seasoning to taste.

Beet and Goat Cheese Salad (serves 2):

Ingredients:
* 1/8 cup balsamic vinegar
* 1.5 tablespoons shallots, thinly sliced
* 1/2 tablespoon honey
* 1/4 cup extra-virgin olive oil
* Salt and freshly ground black pepper
* 3 medium beets, cooked and quartered
* 3 cups fresh arugula
* 1/4 cup walnuts, toasted, coarsely chopped
* 1/8 cup dried cranberries or dried cherries
* 1/4 avocado, peeled, pitted, and cubed
* 1.5 ounces soft fresh goat cheese, coarsely crumbled
Preparation:
1. Line a baking sheet with foil. Preheat the oven to 450 degrees F.
2. Whisk the vinegar, shallots, and honey in a medium bowl to blend. Gradually whisk in the oil. Season the vinaigrette, to taste, with salt and pepper. Toss the beets in a small bowl with enough dressing to coat. Place the beets on the prepared baking sheet and roast until the beets are slightly caramelized, stirring occasionally, about 12 minutes. Set aside and cool.
3. Toss the arugula, walnuts, and cranberries in a large bowl with enough vinaigrette to coat. Season the salad, to taste, with salt and pepper. Mound the salad atop 2 plates. Arrange the beets around the salad. Sprinkle with the avocado and goat cheese, and serve.

1 cup Chinese cabbage, shredded

Apple, Peanut, and Arame Stir Fry Salad

Ingredients:

1/2 cup Arame (can use other forms of seaweed), chopped
1″ knob Ginger, minced or grated
1/4 cup Asparagus
1/4 cup White Mushrooms

1/4 cup snowpeas

1/4 cup + 2 TBS Olive Oil
1/4 cup Rice Wine Vinegar
1/4 head of Lettuce, chopped
handful of Sunflower Seeds
handful of Peanuts
1 Tomato, cut into wedges or sliced
1 TBS Lemon Juice
1 TBS Lime Juice
1 Apple, diced

Directions:

Serving Size: 1

½ cup cut arame in pot full of water. Cook until arame is a lighter shade of green and doubles in size.

Place desired amount of peanuts and sunflower seeds on a pan and spread out. Put in the oven at 400 degrees and take out when dark brown. This will be sprinkled on top of the salad to give it a crunch.

Cut ¼ head of lettuce and chop. This will be the bottom layer of the salad.

¼ olive oil mixed with ¼ cup rice wine vinegar. Add desired amount of lime juice and lemon juice. This will be the salad dressing.

Add olive oil to a frying pan and heat, medium high,  until it bubbles.  Add ginger, 3 minutes. Place diced mushrooms, asparagus, cooked arame, snow peas and fry until vegetables are softer.

Lay stir fried veggies on top of lettuce with dressing. Add Tomato wedges and diced apples. Sprinkle peanuts and sunflower seeds on the top.

Meal Design:
This meal is designed for a patient with hypothyroidism with High Blood Pressure. Most hypothyroid patients have a spleen or kidney yang vacuity pattern, but the main item in the recipe for the thyroid is the Arame.  Arame is a rich source of iodine, which directly influences the thyroid’s actions. The rest of the meal addresses hypertension, and are said to lower blood pressure. Arame has an anti-hypertensive effect as well.

Chilean Celery and Avocado Salad

ingredients:
6-8 large ribs of celery, well washed and sliced horizontally about 1/4 inch thick
4 large pieces organic romaine, washed well and torn into bite sized pieces
1 large avocado, mashed
2 large limes, juiced
pinch of salt

combine all ingredients in a large non-reactive bowl. serve as a side or eat as a snack. serves 4.

analysis:
celery and lettuce are cool, sweet and bitter and drain fire. avocado is sweet and heavy and nourishes yin and cools the digestive tract; its heavy nature may also harmonize the liver by anchoring floating yang. lime is cooling, sweet and sour and soothes the liver by coursing it.

Honey-Balsamic Bean Salad

As I mention in the main post, the original recipe called for green beans, which are out of season here in San Francisco as I type this. I chopped up a head of structured, romaine lettuce instead. I also added and tweaked a few things, as I’m prone to do. If you’re trying to come up with a substitute for the green beans, imagine ingredients that might go nicely with the honey-balsamic vinegar. And I suspect it goes without saying, but you can certainly play around with the type of beans you use here. I would have used borlotti beans in place of the black beans, but I went with the beans I had on hand, rather than make a trip to the store.

8 oz / 225 g (about 1 1/2 cups) EACH cooked chickpeas, pinto beans, black beans

1 small head of romaine lettuce, washed, dried, shredded

1/3 cup / 1 oz / 30g sliced almonds, toasted

2 teaspoons extra-virgin olive oil
1 1/2 tablespoons runny honey
2 tablespoons balsamic vinegar
1 1/2 tablespoons fresh lemon juice
1/4+ teaspoon fine grain sea salt

10 sprigs fresh thyme

Combine the beans, lettuce, and most of the almonds in a large salad bowl. Set aside. Make the dressing by whisking the olive oil, honey, balsamic vinegar, lemon juice, and sea salt in a small container. Taste, and adjust to your tastes.

Run your fingers up each thyme sprig, removing the leaves. Add to the salad bowl along with a good amount of the dressing. Toss well, and add more dressing if you like. Finish by sprinkling with the remaining almonds.

Serves 4- 6
