Shiitake and Shan Zha Congee

Shiitake and Shan Zha Congee

 

Spleen Qi Vacuity with high cholesterol

Function: strengthen SP, help digestion, regulate qi and relieve stagnation.  It could use for sp/st xu with blood stasis and to lower LDL.

Ingredients : shan zha 15g, shiitake 10g, Geng mi 50g, sugar 1/2 tbs ,Water – enough amount to create congee
Serves: 3-5 people

How to cook:
1. soak shan zha, shiitake in warm water about 30 minutes then drain out water
2. in another pot make shan zha and shitake as tea , then add geng mi and sugar to make as congee

Function of ingredients:
Shan zha: disperse food stagnation, dissipate blood stasis, reduce blood pressure and cholesterol
Shiitake (xiang gu): sweet, neutral/ Spleen, Lung, strengthen qi, boost wei qi; lower cholesterol and prevent cancer
Geng mi: supplements the center and boots qi, fortify the Spleen and harmonize the Stomach

Natto (Fermented Soy Beans)

Natto (Fermented Soy Beans)
Japan

Serves 1-2

Ingredients
1 package natto (about 1/3 cup)
1/8 tspn karashi (Japanese mustard)
1/4 tspn soy sauce
1 tbsp scallion (white portion)

Mix together and serve. May be used as a condiment for rice.

Natto: bitter sweet neutral HT SP KI
Actions: invigorates the blood, tonifies KI jing, harmonizes middle jiao, smooths the skin.
Indications: high cholesterol, thrombosis, excessive immune reactions, dysentery, weak bones, osteoporosis, hair loss.

Mustard: acrid warm LU
Actions: penetrates to the yin to restore movement to the yang, regulates qi, transforms cold phlegm, dissipates clumps, unblocks the collaterals, stops pain.

Soy Sauce: salty cold SP ST KI
Actions: harmonizes middle jiao, clears heat, antidote to food poisoning.
Indications: interior heat toxin, fullness secondary to febrile diseases.

Scallion: warm acrid LU ST
Actions: diaphoretic, tonifies and regulates qi, clears heat, promotes circulation of yang qi in the chest, dispels cold, dries damp, diuretic, invigorates blood.

Liver Blood Xu-Bu Xue Dang Gui Ya

ingredients:
Dang gui 5g,Shu di 3g,Chaun xiong1g,Bai shao 2g,Dan shen 2g,Huang qi 2 g, Gou qi 5g,Gui zhi 1g,Duck*1 ( 3kg),Fresh ginger 1g,
Fx of herbs
Dang gui : moisten the bowel and tonify , nourish the blood
Shu di :tonify blood, benefit yin
Chaun xiong: move and nourish the blood
Bai shao: nourish the blood
Dan shen : active blood, break up blood stasis and clam the spirit
Huang qi : tonify qi and blood , increase immunity
Gou qi zi: enrich the kd, supply the liver
Gui zhi : warm and unblock channels
Duck- nourish kd yin ,moisten dryness
Fresh ginger-harmonize mj
rice wine- support other ingredients

How to cook:
1. In ceramic pot and boil 6 cups of water( 1 cup=150cc) then add all herbs cook for 40 minuets.
2. keep the tea you made
3. take out all organ from the duck and wash and clean
4. add #2 and ginger, rice wine , salt and cover duck w/ enough water and put in a rice cooker to cook.
5. wait until the rice cooker told you the food is done

chuan xiong & hong hua tea

Fx: invigorate blood, dispel stasis
INGREDIENTS:Chuan xiong 6g, hong hua 3g, green tea leaf 3g, water 150-300 cc
FX OF HERBS:
chuan xiong:enter liver, GB and PC channels, acrid, warm. active theblood, move qi , and alleviate pain
hong hua:enter liver and heart channels, acrid warm. active the blood, dispel blood stasis and stop pain
greenn tea: cool and help blood circulation

serve size: 1 cup

For HEART BLODD STASIS-

Mackerel Fillets Simmered in Soy Sauce

MACKEREL FILLETS SIMMERED IN SOY SAUCE
Yields: 4 servings
1/2 cup soy sauce
1/3 cup sake or dry (fino) sherry [warm, pungent, sweet]
1 tablespoon sugar
2 tablespoons rice vinegar or white wine vinegar [warm, sour, prevents EPI]
5 or 6 thin slices peeled fresh ginger [warm, pungent, benefits LU, ST]
Finely grated zest of 1 lemon [cool, sour]
3 or 4 crushed garlic cloves [hot, pungent, moves blood stasis]
4 mackerel fillets, about 1 pound total, skin on [cool, sweet, strengthens SP, qi, removes damp, regulates blood]
Cooked white rice for serving [slightly cool, sweet, moistens yin, clears heat]
Chopped scallions for garnish

Method
1. In a 12-inch skillet with a cover, mix together all ingredients except fish, rice and scallions. Add 1/2 cup water. Bring to a boil and simmer over medium heat for about 5 minutes, uncovered.
2. Add fish skin-side down and simmer until cooked through, 7 to 10 minutes. (You can hasten cooking a bit by covering pan, but it is not necessary.) Spoon a fillet and some sauce onto a mound of white rice; garnish and serve.

TCM Analysis: This recipe is blood tonifying, particularly d/t HT blood stasis. Overall it is warming, tonifying SP and blood, removing damp.
This dish is full of omega 3s, great for uplifting mood by increasing serotonergic and dopaminergic transmission.

Shiitake Congee

Calm Mover

Calm Mover

¼ C Longan Fruit (dried)
2 Carrots
1 Bottle Wine

Open the wine bottle.

Cut the carrots lengthwise (just the right size to squeeze through the neck of the wine bottle.

Squeeze the carrot pieces and Longan Fruit into the neck of the wine bottle.

Re-cork and let sit for about 3 months. Shake lightly periodically (every week or so).

Serve for guests or when you need to kick back n’ relax!

TCM Analysis
Longan: Sweet, Warm; HT, SP; Nourish Qi and blood, Calm the shen, Strengthen SP and ST; General xu, HT and SP xu, Yin and fluid xu
Carrot: Sweet, Neutral; SP, LV, LU, HT; Strengthen SP and HT, Nourishes and soothes the LV; Qi and blood xu, Dry skin and poor vision
Wine: Pungent, Sweet, Warm; ST, LV, HT; Expels cold, Invigorates blood, Stops pain; Trauma and injury, Prevents HT disease

Overall Intended Actions
Calm the shen, nourish Qi and blood, stop pain (physical and mental), and warm what is cold. The wine in this recipe is going to be the prime mover followed by the Longan Fruit with its warmth.

Spiced Wine

8 cups Cabernet Sauvignon
½ cup sugar
8 sticks of cinnamon
4 slices of orange
1 tbsp. fresh squeezed lemon juice
12 whole cloves

Mix all ingredients in a saucepan. Cover and simmer for 1 hour.

This recipe should not be used in excess, but this would be a very blood invigorating, warming recipe to get stagnancy moving- particularly if the patient is also experiencing cold symptoms.
Wine goes to the heart, stomach and liver. It expels cold, invigorates blood and stops pain. The cloves and cinnamon would add to the warming and circulating properties of this holiday specialty.

White Chicken with Hawthorn Fruit and and Wolfberries

White Chicken with Hawthorn Fruit and and Wolfberries

Combine 30g Hawthorn fruit, 10g of gou qi zi and 150g white chicken meat together. Add a handful of Black Wood Ear mushrooms. Cover with either broth or water and cook until the chicken is done. Add pepper to taste. Serve over quinoa or brown rice or cous cous.

Chicken – sweet, warm. Affects spleen stomach, kidney. Supplements qi, nourishes blood, consolidates kidney, boosts wei qi.
Black wood Ear -sweet, neutral. affects spleen and kidney. Supplements qi and xue, consolidates kidney, softens hardened arteries, prevents cancer.
gou qi zi – sweet, nuetral. Affcts Lung, Liver, Kidney. Nourishes Liver and kidney, improves vision, moistens lungs.
shan zha – sour, sweet, slightly warm. affects Spleen, stomach, liver. aids digestion. invigorates xue.
Pepper – pungent, warm. Affects stomach, LI. Warms MJ, decends stomach qi, invigorates xue.

Indications: chest pain or other severe localized pain, dark or dusky tongue, choppy pulse.

Although these ingredients don’t enter the Heart itself, they work together to treat arteriosclerosis which can be a result of Heart Xue stasis.

Eggplant with Rice and Side Salad

Eggplant with Rice and Side Salad

Serving Size for 1 person

Ingredients:
Eggplant ½ Eggplant Moves blood and breaks stasis, moves qi and opens chest
Brown Rice ½ Cup Supplements Qi, Drains Dampness
Water 1 Cup
Black Pepper ¼ tablespoon Warms MJ, Invigorates blood, expels damp
Celery ½ cup Subdues Liver Yang and wind, drains damp and transforms phlegm, calms shen
Carrots ½ cup Strengthens Heart, Nourishes and Soothes Liver, Drains Damp
Reishi Mushroom ½ cup Transforms phlegm, tonifies wei qi
Butter 1 tablespoon Invigorates blood
Rice Wine Vinegar 2 tablespoons Invigorates blood, Clears Toxins, Astringent
Olive Oil 2 tablespoons
Ginger 1 teaspoon Transforms phlegm
Lettuce 1/3 head of Romaine lettuce Clears heat and cools blood,
Cucumber ½ cup Clears heat, influences the heart

This recipe is intended for someone with phlegm and dampness in the chest caused by blood stasis and qi stagnation. The bulk of the recipe moves blood in the chest and heart, and the rest transforms dampness and phlegm. There are also some qi tonifications as well.

Cooking Instructions:

Melt butter in a small bowl and put in 1/8 tablespoon of black pepper and one teaspoon of ground ginger and mix well. Take ½ of a peeled eggplant and cut into slices. Brush butter/pepper/ginger mix onto both side of the eggplant slices and put onto a cooking tray and broil for 5 minutes each side.
Mix ½ cup of carrots, celery, and mushrooms together and steam in a small pot with water and cover until softened.
Mix ½ cup brown rice with 1 cup of water in a pot and bring to a boil. Cut heat to low and simmer until rice is dry and starts to stick to the pot. Mix Rice with steamed vegetables and place cooked eggplant on top and serve.
Mix 1/8 tablespoon black pepper with 2 tablespoons of both Olive Oil and Rice Wine vinegar. Use this as a dressing for the wedge of lettuce for a side salad.
