Mustard Greens

Mustard Greens

Ingredients:

  • ½ C thinly sliced onions
  • 2 cloves garlic, minced
  • 1 Tbsp olive oil
  • 1 lb. mustard greens, washed and torn into large pieces
  • 2-3 Tbsp chicken broth
  • ¼ tsp dark sesame oil

Instructions:

  1. In a large saute pan, saute onions in olive oil over medium heat until the onions begin to brown and caramelize, about 5 to 10 minutes. Add the minced garlic and cook a minute more, until fragrant.
  2. Add the mustard greens and broth and cook until the mustard greens are just barely wilted. Toss with sesame oil. Season with salt and pepper.

Makes 4 servings.

This recipe is primarily acrid, sweet, and warm.  According to the Clinical Handbook of Internal Medicine, mildly acrid flavor promotes the movement of qi to regulate the LV.  The sweet ingredients in the recipe (primarily the oils) moisten the LI and promote body fluids.  The main ingredient, mustard greens, also strengthens and lubricates intestines.  For these reasons, I would recommend this recipe to patients with IBS due to LV qi stagnation leading to constipation, especially if their bowel movements are dry.

Beef Essence

Beef Essence
(2-4 servings)

1 pound lean beef, cut into thin strips
5 slices fresh ginger
¼ cup rice wine
5 ½ cups water

1. Place the beef and ginger in a pot with a tight-fitting lid. Add the wine and the water and bring it to a simmer. Do not let it boil.
2. Cook over low heat for 2 hours, adding water if necessary. Cover and continue cooking another 2 hours over low heat or until broth is flavorful.
3. Strain and discard the beef. Serve the soup flavored with desired seasonings to taste.

Analysis:
Beef is sweet and warm, it supplements SP and ST, nourishes qi and blood, and strengthens tendon and bone. Ginger is pungent and warm, disperses exterior cold, stops nausea and vomiting, detoxifies other substances, and reduces inflammation. Rice wine is warm, pungent and sweet; it promotes circulation.

Overall, this dish is warm and sweet, nourishing the SP, ST and blood. It provides a boost of energy, and is especially good for someone who is ill and has little appetite.

Note:  Tonifies Kidney Qi and Yang as well.

Herbal Gomasio

Herbal Gomasio – makes approximately ½ cup

Water or Wood Imbalance – Kidney Qi Deficiency or Liver Blood Deficiency

Ingredients (use organic when possible)

  • ½ cup sesame seeds
  • 1 teaspoon dulse flakes
  • 1 teaspoon nettle leaf
  • ½ teaspoon sea salt (optional)

Directions

  1. Toast sesame seeds in a dry skillet over medium heat, stirring regularly, for 5-10 minutes, or until slightly golden and aromatic.
  2. Cool seeds slightly, then mix with dulse flakes and nettles in blender, seed grinder, coffee grinder or with mortar and pestle. Grind coarsely, just enough to break the seeds and coat herbs with sesame oil.
  3. If the dulse or nettles are whole leaf, grind them into flakes first before mixing with sesame seeds.
  4. Taste and add optional salt if desired.
  5. Store in a jar or large opening shaker. Can also be used in a spice mill to further grind over food. If not used up within the week, store in the refrigerator to maintain freshness.

Options: Try mixing with other edible seaweeds – kombu, nori, kelp granules or a blend of seaweeds will work well. May be modified in various proportions to taste.

Cranberry and Goji Berry Chutney with Shu di Huang

Fire Imbalance – Heart Blood Deficiency

Cranberry and Goji Berry Chutney with Shu di Huang

Ingredients

  • 9 grams Shu di Huang
  • 1 1/2 tablespoon fresh grated ginger
  • 12 ounces fresh cranberries
  • 1 teaspoon ground cinnamon
  • 2/3 cup goji berries
  • pinch cayenne pepper
  • 1/4 cup chopped dried apricots
  • pinch allspice
  • 1 medium shallot, chopped
  • 1/2 teaspoon salt
  • 1 cup apple cider
  • 1/3 cup chopped walnuts
  • 2/3 cup white or brown sugar or 1 cup brown rice syrup
  • one orange, Zest of
  • 2 tablespoons maple syrup

 

Directions

  1. Combine cranberries, goji berries, apricots and shallots in saucepan.
  2. Add cider and enough water to cover. Let sit for 20 – 30 minutes.
  3. Bring to a boil, then turn down to a simmer.
  4. Cook for 15 minutes, or until goji berries are soft and plump, and the cranberries pop.
  5. Stir in sugar, maple syrup, spices and salt.
  6. Cook 5 minutes longer.
  7. Adjust seasonings. Remove from heat.
  8. Stir in walnuts and orange zest.
  9. Cool to room temperature.
  10. Store in a covered container in the refrigerator for up to 2 weeks.

Beet Soup

Beet Soup

This soup can help build blood, and help your blood move freely throughout the body.  It helps break up blood stagnation.  Beets are also beneficial for the eyes. This soup can help strengthen the eyes and improve vision.  The soup is also gentle on your digestive system. It can help drain damp, and strengthen the spleen and stomach.

Ingredients

  • 5-6 carrots
  • 2-3 large beets
  • 2 onions
  • 2-4 stalks celery
  • 3-4 cloves garlic
  • 2 Tablespoon miso
  • 2 Tablespoon Olive oil
  • 1 teaspoon fresh basil, chopped
  • 1 teaspoon fresh oregano, chopped
  • 3-4 cups of water

Directions

  1. Cook vegetables with 3-4 cups of water until tender.
  2. Blend vegetables with the cooking liquid.
  3. Add the miso, olive oil, basil, oregano, and plum paste.
  4. Return to flame and simmer for 20 minutes to mix flavors. (The Tao of Nutrition page 171).

Options:  consider adding miso at the end of cooking time so that it’s beneficial organisms aren’t destroyed by heat.  To do so, put the miso in a bowl.  Add a small amount of soup to it.  Stir to make a smooth paste.  Return miso/soup paste to soup.  Stir to incorporate.

Carrots- Sweet, neutral; spleen, liver, lung heart; Strengthens spleen and liver, nourishes and soothes liver, benefits the lung, diuretic drains damp, anti-inflammatory.

Beets- neutral to cool; spleen, stomach, liver, heart; nourishes liver blood, tonify heart, calm spirit, lubricate intestines, cleanse liver, expand chest, clear heat toxin.

Onions- Pungent; lung; clears heat relieves toxicity.

Celery- Sweet, bitter, cold; liver, stomach; clears heat, tonifies kidneys, strengthens spleen/stomach, lowers blood pressure, benefits blood, calms liver and shen, promotes diuresis, drains damp transforms phlegm.

Garlic- Hot, acrid; large, intestine, lung, spleen, stomach: removes stagnate blood or food, reduces abscess, warms yang, dispels cold, anti-bacterial, anti-fungal, anti-viral, detoxifies meat and seafood, kills worms.

Miso- Salty, neutral; Spleen, stomach; promotes digestion, strengthens the stomach.

Olive oil- Sweet, cool; liver, gallbladder; moistens, benefits the liver and gallbladder.

Basil- Pungent, warm; stomach, lung; diaphoretic, harmonizes stomach, counteracts seafood poisoning.

Oregano- Pungent, bitter, neutral; heart, small intestine, lung, large intestine; drains damp, fever, vomiting, dysentery, colds, jaundice and diarrhea. It is antiseptic, antimicrobial and antiviral. It has been used to promote menstruation and as a digestive aid.

Beet and Apple Muffins

Beet and Apple Muffins

Makes 30 muffins

Ingredients

  • 4 eggs-cool, sweet, nourishes yin, tonifies blood
  • 1.5 cups light brown sugar-warm, sweet, strengthens digestion
  • ¾ cup olive oil- neutral, sweet, sour, astringent
  • ¾ cup orange juice-cool, sweet, sour, clears heat, soothes liver, strengthens spleen
  • 3 cups whole wheat flour-sweet, slightly cool, nourish heart, calm shen
  • 1 ½ tsp. baking soda
  • 2 tsp. baking powder
  • 4 small green apples, peeled and shredded-cool, sweet, slightly sour, strengthens heart
  • 1 tsp. cinnamon-pungent, sweet, warm, promotes blood circulation, warms the mingmen fire
  • 1 tsp. lemon juice- cool, sour, regulates qi, benefits liver
  • 2 cups shredded, cooked beets-cool, sweet, nourishes blood, tonifies heart, calms spirit

Directions

1. Preheat the oven to 350

2. Put all four eggs into the mixer and beat for 3 minutes. Then add in the oil, orange juice, flour, baking soda and baking powder in the exact order listed, while the mixer is beating on a low speed. When the batter is smooth, turn off the mixer.

3. Toss the shredded apples with the cinnamon and the extra bit of sugar and lemon juice. Add them into the batter, together with the shredded beets. Using a spatula, gently turn and mix it into the batter until it is all incorporated. The batter should turn a deep pinkish color.

4. Line your muffin trays with muffin liners and fill a little over halfway with batter.

5. Bake about 15 minutes

Beet and Goat Cheese Salad

BEET AND GOAT CHEESE SALAD serves 4

  • 4 beets, peeled
  • 4-1/2 oz goat cheese
  • 1 tbs chives
  • Salt/pepper
  • Several handfuls of young arugula
  • ½ apple, julienned
  • 2 tbs turbinado/brown sugar
  • 2 tbs rice vin
  • 2 tbs soy sauce
  • Extra virgin olive oil
  • Black sesame seeds

1) Bring water and beets to a boil, simmer until tender, 30 min. Drain and cool. Cut each beet into 8 wedges.

2) Blend cheese and chives and season with s & p.

3) Combine sugar, vinegar, and soy sauce. Beat dressing with enough olive oil until emulsified.

4) Toss beets and arugula with the dressing, scatter chunks of the cheese and julienned apple over the salad, drizzle with more evoo and sesame seeds.

Beet Broccoli Dish

1 medium beet (roasted until soft) sliced 1-inch cubes

2 cups broccoli – chopped

1 cup brown rice

Beet- sweet, neutral, SP, ST, LV. HT. Nourishes LV blood, strengthens middle jiao, calms the shen.

Ingredients:

8 oz (260g) Burdock root – benefits the lung, helps disperse wind heat and sore throat

8 oz (260g) 260g Radish – sweet pungent and cold going to lung and LI to move qi, blood and unblock bowel.

8 oz (260g) 260g Carrot – sweet and goes to liver spleen lung and heart, to tonify qi and blood

8 oz (260g) 50g Radish leave – enters spleen and stomach, and lung. Its bitter and pungent nature promotes qi flow and digestion.

8 oz (260g) 2-3 Shitake Mushroom – goes to lung and spleen, boost qi, benefits liver protects body.

Directions:

  1. Clean all the above ingredient and cut into large pieces.
  2. Add in 6 cups water or broth (chicken, vegetable or beef) and bring to boil.
  3. Turn down heat and simmer for 1 hour.

This soup can clear heat, relieve toxin, nourish 5 organs, strengthen body.

Lactation Cakes

General/promote lactation

Ingredients:

½ lb lean ground pork – benefit the kidney and lactation

1 stalk green onion 1 tspr – warming, upward moving, dispersing to benefit flow of breast milk

1 tsp Soy sauce

1⁄2 tsp salt

50 g (1.5 oz) lily flower ( Bai He) – clear heat, moisten dry and goes to heart channel to benefit lactation.

Serves: 2

Directions:

1. Chop lily flower and mix with rest of ingredients, make into flat patty.

2. Steam for 15 minutes,
