Breakfast potatoes and onions

Breakfast Potatoes and Onions

6 red potatoes, scrubbed

¼ cup olive oil

2 yellow onions, chopped

2 Tbsp ground dried papaya seeds

Sea Salt

Directions: Put the potatoes in a medium saucepan with enough water to cover, bring to a boil, decrease the heat then simmer for about 15 minutes or until it’s tender. Drain and let the potatoes cool. Chop them into bite sized pieces. Heat the oil on medium skillet on medium heat. add onions and fry for 5 to 10 minutes or until onions start to brown. Stir in potatoes, grounded papaya seeds and salt to taste. Mix well. Cook for about 10 minutes or until potatoes are crispy.

Serving Size: 4

TCM Pattern: LU yin xu; Dryness invading LU; Damp heat in LI

TCM evaluation: Red potatoes are sweet and neutral, strengthens and harmonizes the MJ and is good for constipation; olive oil is sweet, sour, astringent and neutral, clears LU, benefits throat; yellow onions are pungent, neutral, goes to the LU and LI, clears heat, relieves toxicity, kills parasites; Papaya seeds are bitter, sweet, moistening and descends qi; sea salt is salty and cold, eases bowel movements.

 

Smooth Move Smoothie

Smooth Move Smoothie
L.I. shi heat leading to constipation

1 apple, cored/sliced
1 pear, cored/sliced
1 plum, pitted/sliced
2 bananas
1/2 avocado
1/2 c. silken tofu
1-2 c. green tea (depending upon your preference of consistency)
1-2 tbsp. Maple syrup (to taste)
Cinnamon, to taste

Place the apple, pear, plum, bananas, avocado & tofu in your blender. Boil 8-16 oz. of water and add to 1-2 heaping tsp. of green tea leaves, steep for about 5 minutes. Once steeped to your liking, add green tea (w/o leaves) to your blender. Blend all ingredients until smooth. Give it a taste test & add maple syrup & cinnamon to your liking!

Serving size: 2-3 people

TCM analysis:
Apple: reduces dryness, alleviates thirst, tonifies qi
Pear: cools ST heat; generates body fluids, quenches thirst, clears heat, descends qi (& stops cough)
Plum: aids digestion, regulates body fluids, removes stagnation of qi
Banana: moistens the L.I.; clears heat, lubricates intestines
Avocado: nourishes yin & xue, moistens LU, skin & intestines
Tofu: expels heat & moistens/lubricates dryness, strengthens SP/ST
Green tea: cools heat, relieves thirst, promotes digestion
Maple syrup: sweet, tonifies SP/ST
Cinnamon (gui zhi): strengthens ST, warms coldness

The overall focus of this recipe is to cool L.I. heat, generate fluids & stimulate digestion. The cinnamon will counteract the mostly cold nature of this recipe, while stimulating the digestive organs. The fruits, tofu & tea cool heat & moisten the bowels.

Salmon Steamed in Napa Cabbage

Salmon Steamed in Napa Cabbage

Ingredients

  • 12 leaves Napa cabbage
  • 2 lbs salmon fillets, skinned
  • 2 tb olive Oil
  • 1 tb lemon juice
  • 1 tsp minced garlic
  • 1/4 c minced shallots or scallions
  • 1/4 tsp pepper
  • 1/2 tsp salt
  • 1 tsp chopped fresh thyme (1/4 tsp dried thyme)
  • 1 tsp chopped fresh basil (1/4 tsp dried basil)

FOR THE SAUCE

  • 1/2 c Seafood stock
  • 2 Red bell peppers roasted puree
  • 1 1/2 tsp Lemon juice
  • 1 tsp Anchovy paste or salt
  • 1 pinch white pepper

Instructions

  1. Bring water to a boil, and blanch the cabbage leaves until pliable, about 2 minutes.  Drain and set aside.
  2. Cut the salmon and sole into 1/2-inch cubes, and set aside.
  3. Heat the oil in a small skillet over medium heat.  Add the shallots and garlic, and saute, stirring frequently, for 5 minutes.  Add to the fish, along with the lemon juice, pepper, salt, thyme and basil.  Mix gently.
  4. Place 2 cabbage leaves overlapping slightly.  Divide mixture in the center of the six sets of leaves. Roll cabbage, tucking in the sides to enclose the filling, and secure the rolls with toothpicks.  Place in a bamboo steamer, and steam over boiling water for 7 to 10 minutes.
  5. While the rolls are steaming, puree the stock, peppers, lemon juice, anchovy paste and pepper in a blender or food processor with a steel blade.
  6. Pour into a small saucepan, and bring to a boil over medium heat.  Reduce by half, stirring frequently.
  7. To serve, place a pool of sauce on the plate, and top with a cabbage roll.

Cabbage and Salmon in particular are great foods to use to tonify KD Jing.  Cabbage is sweet and neutral, goes to KD/ST and harmonizes the ST and nourishes KD Jing.  Salmon is also sweet and neutral, goes to the SP/KD and nourishes yin, blood and KD Jing.  This would be a well balanced dish making it a fairly neutral temperature meal.  The garlic and shallots would be warming and help with digestion.  (Tao of Nutrition states that Napa cabbage is actually sweet and cold.  It’s actions are clearing heat and lubricating intestines.)

Hong Dou Sha (Red Bean Sand)

Treatment Principle: strengthens SP, promotes urination, drains Damp.

Serves 4

Ingredients
2/3 cup dried azuki beans
1/4 cup long-grain white rice
3/4 cup of white sugar

Soak the azuki beans overnight in 4 cups of water.

Bring to a boil, reduce to medium low, cover the pan and cook for 30 minutes. Add a further 4 cups of water and bring back to a boil. Reduce the heat to low and cook for a further 15 minutes. Add the rice and cook for another 15 minutes.

To test to see if they are ready, press one bean between the fingers. It should crush without any effort. If it is still hard, cook for another 15 to 20 minutes, then check again.
Add half of the sugar to the pan containing the beans and stir gently continuing to add more sugar until it is sweet to your taste. Simmer for a few minutes longer.

Serve hot.

Azuki Beans: sweet sour neutral HT SP SI
Actions: strengthens the SP, promotes urination, and eliminates stagnant Blood.
Indications: SP deficiency edema, Damp and Damp Heat painful urination, diarrhea, leucorrhea, intestinal abscess, hemorrhoids, bleeding from the bowel.

White Sugar: sweet neutral LU SP
Actions: moistens the LU, increases yin fluids, and benefits the SP.
Indications: dry cough, dry throat, thirst, dull abdominal pain.

White Rice: sweet neutral SP ST
Actions: strengthens the SP and ST, supplements qi.
Indications: SP and ST weakness, generalized weakness, reduced appetite, nausea and vomiting, post febrile yin damage, thirst and dry mouth.

Red Bean Sand (composite): sweet sour neutral LU HT SP ST SI
Actions: strengthens SP, promotes urination, and eliminates stagnant Blood.
Indications: SP deficiency edema, Damp and Damp Heat painful urination, diarrhea, leucorrhea, intestinal abscess, hemorrhoids, bleeding from the bowel.

Sauted Chinese Vegetables

Serves 3 to 4

1 hand full of Bok Choy- chopped

4 carrots chopped into 1-inch cubes

1 large onion finely chopped

Bok Choy- sweet, neutral, ST, LU, LI. Cleat, promotes bowel movement.

Carrot- sweet, neutral, LU, SP, LV, HT. Benefits the lung, drains damp.

Onion- pungent, LU. Clears heat resolves toxicity.

Overall TCM Functions:

Clears heat from the LU and drains dampness.

Tropical Smoothie

Servings: 1 large or 2 small

Prelude: Enjoy the tastes of the tropics with a thick, rich and healthy smoothie. It’s packed with fruits

so make sure to pick seasonal varieties – they’re higher in vital nutrients and they taste so much better.

However, if it’s the dead of winter, frozen fruits will get the job done too.

Ingredients:

½ cup pineapple (chilled or frozen) – clears heat and promotes fluids

½ cup mango (chilled or frozen) –

½ cup watermelon (chilled or frozen) – relieves irritability and dry mouth

1 cup low-fat cottage cheese

1 cup low-fat milk

Instructions: Combine all ingredients in a countertop blender. Blend on high until mixture is a smooth consistency.

Contraindications:  Spleen Qi or Yang Vacuity leading to Damp

A recipe to help ease diarrhea caused by d-h in the L.I.

1 c. mung beans, soaked overnight in water
1 c. amaranth
4 c. vegetable broth
1 small honeydew melon, peeled & chopped, seeds removed. Pureed in the blender
1/2 c. bamboo shoots
1/2 c. lotus root, chopped to your liking
1/2 c. button mushrooms, stems removed & chopped to your liking
Salt to taste

Place mung beans, amaranth & bamboo shoots in a slow cooker & cover w/ 4 cups of vegetable broth. Add a salt & pepper to taste.

Puree honeydew melon in your blender & add it to slow cooker just before the dish is done. Allow soup to warm up.

Upon serving the soup, place chopped spinach on top & allow it to wilt.

Serves: 4 people

Mung beans – v. cool & sweet: clears heat, detoxifies, counteracts toxins, quenches thirst
Amaranth – sweet, bitter, warm: tonifies qi, nourishes blood, strengthens SP, reduces dampness

The overall gist of this recipe is to clear heat from the L.I. and resolve dampness. The mung beans, melon, bamboo shoots, lotus root & mushrooms serve to cool the heat in the LI, while the broth warms & supplements the MJ. Amaranth is also warm & bitter to nourish & reduce dampness. The salt is added for taste & its anti-inflammatory action in the body.

Pearl Barley with Aduki Beans

To Drain Damp in San Jiao/GallBladder/Liver

Ingredients:
1 Cup Barley Cold Sweet, Sl. Salty SP, ST, UB Drains Damp,Tonifies SP, ST
3 Cups Stock
½ Onion Chopped Neutral Pungent LU, ST, LI Transforms Phlegm and Damp
1 Celery Stalk Neutral Sweet Liver, Stomach Drains Damp transforms phlegm, Clears Heat, Subdues Liver Yang
1 Carrot Chopped Neutral Sweet SP, LV, LU H Drains Damp, Clears Heat, Strengthen SP and H.
1 Tbsp. Olive Oil
½ of a 16 Ounce Can of Aduki Beans Neutral Sweet H, SP, SI Drain Damp, Reduces Edema

*Makes 4 Servings

Directions:
1) Heat 1 Tbsp. of Olive Oil in Sauce pan over medium heat add the onions, celery, carrots, and sauté until the onions have become translucent.
2) Add Stock, and Pearl Barley and bring to a boil.
3) Lower heat to a simmer and Cover and cook 1 hour.
4) Add the Aduki Beans and stir.
5) Cover and heat through, for about 5 minutes.
6) Fluff the Barley with a fork and Serve.

Recipe Treats:
Neutral and Sweet, this recipe Tonifies Earth and Drains Damp in the San Jiao/ GB/ Liver. None of the ingredients technically go to the San Jiao and yet all of the ingredients effect the San Jiao.
All of the ingredients Drain Damp. If you have damp in the body the San Jiao system is effected.

Hearty Mung bean stew

Hearty Mung bean stew
Ingredients: (serves 3-4 people)

200g mung beans (I measured with my soup bowl,makes 1 soup bowl)
1 onion, peeled and diced
1 carrot, peeled,cut lengthwise and then sliced into half-moon shapes
3 tbs olive oil
2 tbs tomato paste
1 ts cumin
salt,grounded pepper and red pepper flake to taste

1)Wash the beans and transfer them into a saucepan. Cover with water, bring to boil and simmer until beans are cooked.
2)Meanwhile saute the onions in olive oil for about 5 minutes.
3)Then add the carrots, let the carrots cook for 10 minutes on low heat.
4)Add the pepper,spices and mix this sauce.
5)Transfer the sauce into the saucepan full with boiled beans, add water to cover the beans.
6)Bring to boil once more and then it’s ready to serve.

Raw Persimmon Pie

Raw Persimmon Pie

9 very ripe persimmons
24 dates (wet)
6 very ripe bananas with outsides brown
24 blueberries

Directions:
Cut dates in half, remove pits, spread on pie plate
Peel bananas, set on top of dates
Mash bananas with fork until custard consistency
Remove skins of persimmons and spread over the bananas
Place blueberries on top.

Analysis of recipe 2B:

Persimmons: cold, sweet, obstructive/astringent. Softens masses. Quenches thirst, empiric for lowering blood pressure.
Banana: cold, sweet. Clears heat, lubricates, lowers blood pressure.
Dates: sweet, warm. Tonifies spleen and stomach.
Blueberries: sweet, sour, tonify blood.

This is a cold, sweet concoction. It will generally slow down the body’s energy systems, anchor yang, and build blood and yin. It contains fruits that are known to lower blood pressure, namely persimmons and bananas.
