Honey Glazed Peach Tart

Honey Glazed Peach Tart

Crust ( you can use pre-made pie dough from the grocery store)

* 1 1/2 cups all purpose flour (clears heat)
* 3 tablespoons powdered sugar (tonifies Mother of LU)
* 1/4 teaspoon salt
* 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes (moistens dryness)
* 3 1/2 tablespoons (about) ice water

Filling

* 1/4 cup sugar
* 3 tablespoons all purpose flour (clears heat)
* 2 teaspoons grated lemon peel (regulates qi)
* 6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups) (lubricates lungs, astringes LU Qi, clears heat)
* 2 tablespoons honey (moistens lungs)
* 2 tablespoons chilled unsalted butter, cut into small pieces (Lubricates dryness)
* 2 tablespoons sliced almonds (ventilates lungs, relieves cough)
* 2 tablespoons peach preserves, melted (same as peaches)

For crust:
Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.

Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.

Preheat oven to 400° F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)

For filling:
Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead. Store tart at room temperature.)

Walnut Sesame Clusters

Walnut Sesame Clusters

Ingredients:

  • 2 C walnuts
  • 2 Tbsp black sesame seeds
  • 1-2 Tbsp toasted sesame oil
  • honey

Instructions:

  1. Toast walnuts and black sesame seeds in a saute pan with the sesame oil until the seeds stick to the nuts. Stir and flip nuts occasionally to prevent burning.
  2. Remove from heat. Pour honey over nuts and seeds. Spoon clumps onto wax paper to cool.

Makes enough clusters to cover one dinner plate.

walnuts: sweet, warm; LU, LI, KD; tonifies KD and LU, lubricates LI, nourishes jing/marrow
black sesame seeds: sweet, neutral; LV, KD, LU, LI; nourishes LV/KD, moistens LI, nourishes jing/marrow
honey: sweet, neutral; SP, LU, LI; nourishes/harmonizes MJ, moistens dryness, antidote to food poisoning

This recipe deeply tonifies the KD while moistening dryness in the LI. It is an easy-to-make treat for weak or elderly patients with constipation, since it tonifies both KD yin and yang and promotes bowel movements. Honey increases the moistening action of the recipe and makes it easier to digest.

Applesauce with Pears and Peaches

Applesauce with pears & peaches
Yields: 8 servings

2 lbs of apples, peeled, cored and chopped
½ lb of pears, peeled, pitted, and chopped
½ lb of peaches, peeled, cored and chopped
3 cups of water
1 cup of white sugar
1 tbsp lemon juice

1. Place all the fruit in a large saucepan and just barely cover with water. Simmer over medium-low heat until fruit is tender, 15-20 minutes.
2. Run cooked fruit through a food mill or blender. Stir in sugar and lemon juice. Cook over medium heat for about 3-5 minutes.

TCM analysis: Overall cools the heat in the LU from LU yin xu
Apples: cool, sweet, slightly sour. strengthens HT, tonfiies qi, quenches thirst, reduces dryness, alleviates thirst, lubricates LU, resolves mucus
Pears: cold, sweet. Regenerates body fluids, quenches thirst, calms HT, lubricates LU, relieves restlessness, promotes urination, clears heat, detoxifies, lubricates throat, dissolves mucus, descends qi and stops cough
Peaches: very cool, sweet and slightly sour. Lubricates LU, clears heat, aids diabetes, promotes body fluids, induces sweating.

Modifications

  • Taste the milled fruit before adding sugar.  Then, just add sugar to taste.  May be sweetened with an alternative sweetener such as honey or maple syrup.
  • Add a little bit of cinnamon for depth of flavor and to change temperature of food to slightly warm.

 

Zhi Ma Hu (Black Sesame Soup)

Zhi Ma Hu (Black Sesame Soup)

Treatment Principle: foster LV and KI yin

Serves 4

Ingredients
8 tsp long-grain white rice
¾ cup black sesame seeds
5 cups water
¾ cup sugar

Soak the rice for an hour, then drain but do not discard the water.  Clean the sesame seeds by hand and discard any grains of sand.  Then wash, drain and dry them.  Roast the sesame seeds in a dry wok for 5-10 minutes.  In a food processor, grind the roasted sesame seeds and rice with some of the rice water you have reserved, until the paste is smooth.  Push the mixture through a sieve into a saucepan.  Add sugar and the remaining water.  Simmer at low heat, stirring constantly until the paste thickens.  Serve warm in individual bowls.

Black Sesame: sweet neutral KI LV LI
Actions: tonifies the LV and KI; augments the yin and blood; lubricates the Intestines.
Indications: yin deficiency of the LV and KI; headaches, dizziness, and numbness due to blood or yin deficiency; for constipation due to dry Intestines or blood deficiency.

White Rice: sweet neutral SP ST
Actions: strengthens the SP and ST, supplements qi.
Indications: SP and ST weakness, generalized weakness, reduced appetite, nausea and vomiting, post febrile yin damage, thirst and dry mouth.

White Sugar: sweet neutral LU SP
Actions: moistens the LU, increases yin fluids, and benefits the SP.
Indications: dry cough, dry throat, thirst, dull abdominal pain.

Daikon no Namasu (Carrot and Daikon Salad)

Daikon no Namasu (Carrot and Daikon Salad)
Japan

The color combination of white daikon and red carrot is regarded as a symbol of happiness.

Serves four

Ingredients
8 inch daikon
2 carrots
1 tsp salt
3 tbsp caster (superfine) sugar
4 ½ tbsp rice vinegar
1 tbsp white sesame seeds

Cut the daikon into three pieces, and then thickly peel the skin. Peel the carrots and cut them into 2 inch pieces. Slice both vegetables very thinly lengthwise then across to make very thin matchsticks.

Place the daikon and carrot in a mixing bowl. Sprinkle with the salt and mix well with your hands. Leave for about 30 minutes. Drain in a sieve and gently squeeze out the excess liquid, then transfer them to another mixing bowl.

Mix the sugar and rice vinegar together in a bowl. Stir well until the sugar has completely dissolved. Pour over the daikon and carrot, and leave for at least a day, mixing it two or three times.

Mix the two vegetables evenly and place in a small bowl or plate. Sprinkle with sesame seeds and serve.

Daikon: cool acrid sweet LU ST

Carrot: sweet neutral SP LV LU HT
Actions: strengthens the SP and aids digestion, benefits the LV, improves vision, directs qi downwards, stops cough.
Indications: Indigestion, weak digestion, abdominal distension, constipation, visual weakness, night blindness; LU Heat cough and whooping cough, assists in the rash disorders of childhood, dysentery.

Salt: salty neutral KI
Actions: moistens dryness, softens hardness, benefits digestion, and promotes bowel movements.

Caster Sugar: sweet neutral LU SP
Actions: moistens the LU, increases yin fluids, and benefits the SP.
Indications: dry cough, dry throat, thirst, dull abdominal pain.

Vinegar: sour bitter warm LV
Actions: improves digestion, disperses stagnant Blood, stops bleeding, and balances rich and oily foods.
Indications: food stagnation, abdominal and hypochondriac masses and accumulations, hematemesis, hemafecia, epistaxis, postpartum dizziness and fainting, food poisoning.

White Sesame Seeds: sl. warm sweet LV KI
Actions: LV and KI tonic, lubricates intestines, general tonic.

Daikon no Namasu (composite): cool acrid sweet sour LU SP ST LV HT KI
Actions: clears Heat, transforms Phlegm, cools the Blood, promotes urination, directs qi downwards, and improves digestion, strengthens the SP and aids digestion, improves vision, stops cough, LV and KI tonic, lubricates intestines, general tonic.

Gomashio

Mix a 2:1 portion of dry roasted black sesame seeds and sea salt. Sprinkle on top of a bowl of rice as a condiment.

Chocolate Coconut Pot de Creme

Chocolate Coconut Pot de Creme

6 oz fine-quality bittersweet chocolate, finely chopped (Bitter,Tonifies KD)
1 1/3 cups Chocolate Almond Milk
2/3 cup Coconut Cream (Tonifies Yin)
7 large egg yolks (Tonifies Yin & Blood)
1 tablespoon sugar (Tonifies SP, Earth)

Preheat oven to 300°F.  Put chocolate in a heatproof bowl.  Bring coconut cream, almond milk , and a pinch of salt just to a boil in a small heavy saucepan, then pour over chocolate, whisking until chocolate is melted and mixture is smooth.
Whisk together yolks, sugar, and a pinch of salt in another bowl, then add warm chocolate mixture in a slow stream, whisking constantly.  Pour custard through a fine-mesh sieve into a 1-quart glass measure and cool completely, stirring occasionally, about 15 minutes.
Divide custard among ramekins, then bake custards in a hot water bath , until custards are set around edges but still slightly wobbly in centers, 30 to 35 minutes.
Transfer ramekins to a rack to cool completely, uncovered, about 1 hour. (Custards will set as they cool.) Chill, covered, until cold, at least 3 hours.
Serves 6

Fruit Smoothie

1 Banana (clears heat, cools blood)
1 cup raspberries (Nourishes LV blood)
1/2 cup Grape Juice (tonifies Qi and Blood)
1/4 cup pureed aduki bean (Relieves toxins)
5 large ice cubes

Puree all ingredients in blender and drink

Black Bean and Tomato Stuffed Sweet Potatoes

Black Bean and Tomato Stuffed Sweet Potatoes

4 medium sweet potatoes, scrubbed
1 15-oz. can black beans, rinsed and drained (or 1-1/2 cups cooked black beans)

1 15-oz.can diced tomatoes with green chilies, (or a can of tomatoes plus 3 tablespoons of diced green chilies from a can, or 1-2 finely chopped fresh jalapenos)

1/2 cup sliced green onions, white and green parts
2 cloves garlic, minced

1 teaspoon dried oregano
1/4 cup chopped fresh parsley or cilantro (opt.)

1/4 teaspoon salt (if needed)

fresh ground pepper, lots

1 small avocado (or vegan sour cream)

2 tablespoons lemon juice

  • Slice a very small piece from the end of each potato. (Or, you can prick them all over with a fork.) Bake at 425ËšF for about 40 minutes or until nice and soft all the way through. You can bake them right on the oven rack. I like to use the toaster oven for this unless I’m using the big oven to make other stuff, too. When they are ready, place them on a plate to cool slightly while you finish up the filling.
  • Cook the the onion, garlic and oregano (and jalapenos, if using fresh) in the oil for one minute. Add the beans, tomatoes, canned chilies (if using), salt and pepper. Heat gently until hot. Stir in the parsley or cilantro. Taste for seasoning.
  • Open the avocado and scoop out the pulp. Mash and mix with lemon juice, a tiny pinch of salt and fresh ground pepper.
  • Split the potatoes lengthwise and gently push the ends towards each other to create a pocket.
  • Fill the pockets with the bean mixture and top with avocado or vegan sour cream.

This is a good recipe to use for KD deficiency. The three main ingredients- Black Beans, Tomato, and Sweet Potatoes all go to strengthening the KD. The recipe would be a nice tonifying recipe over all, with Avocado as another nice ingredient to nourish blood and yin. The green onions and cilantro keep the dish moving, and the black pepper would help with digestion. Its a nice, healthy dish all around- and fairly balanced in temperature, with many of the ingredients being neutral.

Asian Pear Tapioca Dessert

Asian Pear Tapioca Dessert (kids will like this)

Lung Yin Xu
Function: nourish the Lung yin, stop coughing blood, or dry cough
Ingredients:  2 asian pears, 1/2 cup tapioca, a little sugar and some water

Function of herbs
Chinese pear: sweet, cold; LU, LI, ST.  Clear heat, nourish fluids, decrease thirst, moisten lung, dissolve phlegm.
Tapioca: strengthen SP, harmonize MJ

How to cook:
1. soak tapioca for 15 minutes
2. Shred one pear.  Chop one pear.
3. In another pot, boil water.   Then, add sugar and tapioca.  Cook over medium flame until sugar melts and tapioca changes to white color.
4. Lower the flame and add pear.  Stir and serve.

Serves: 3-5 people
