Sprouted Black Bean Soup

Sprouted Black Bean Soup

2 quarts water

2 cups dried black beans sprouted

¼ cup plus 1 Tbsp extra virgin olive oil

2 bay leaves

2 cloves garlic

½ yellow onion chopped

½ green and ½ red bell pepper chopped

2 roma tomatoes, chopped

1 stalk celery, chopped

2 Tbsp chili powder

2 Tbsp ground cumin

Sea Salt

Directions: Pour water, beans, ¼ cup of oil, bay leaves and garlic into large soup pot on high heat. Bring to a boil. Immediately decrease heat. Simmer while preparing remaining ingredients. Heat remaining 1 Tbsp of oil in large saucepan on medium heat. Add onion, bell peppers, tomatoes, celery, chili powder and cumin, cook and stir for about 7 minutes or until onion is translucent. Transfer bell pepper mixture to soup pot. Bring soup to a boil. Cook for about 30 minutes or until vegetables are soft. Season with salt to taste.

Serving Size: 6 to 8

Heart Blood Xu – Shen Gui Zhu Xin Tang

Heart Blood Xu – Shen Gui Zhu Xin Tang zhu xin= pig heart
Ingredients: dang shen 50g, dang gui 10g, pig heart*1, salt
Fx : tonify heart blood and heart qi
Sx: palpitation from heart qi xu, insomnia, lots dreams. Also good for postpartum
Fx of herbs:
Dang shen :tonify qi, nourish flood
Dang gui: nourish and tonify blood

How to cook
1. wash pig heart
2. put all ingredients in a ceramic pot and enough amount of water, then use low flame.  Cook until pig heart well done.  Then, add salt.

Mulberry Muffins

Mulberry Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup fat free sour cream
1/4 cup skim milk
2 tablespoons applesauce
1 egg
1/2 teaspoon almond extract
1/2 cup mulberries

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

Fire Imbalance – Heart Blood Deficiency

Cranberry and Goji Berry Chutney with Shu di Huang

Ingredients

  • 9 grams Shu di Huang
  • 1 1/2 tablespoon fresh grated ginger
  • 12 ounces fresh cranberries
  • 1 teaspoon ground cinnamon
  • 2/3 cup goji berries
  • pinch cayenne pepper
  • 1/4 cup chopped dried apricots
  • pinch allspice
  • 1 medium shallot, chopped
  • 1/2 teaspoon salt
  • 1 cup apple cider
  • 1/3 cup chopped walnuts
  • 2/3 cup white or brown sugar or 1 cup brown rice syrup
  • one orange, Zest of
  • 2 tablespoons maple syrup

 

Directions

  1. Combine cranberries, goji berries, apricots and shallots in saucepan.
  2. Add cider and enough water to cover. Let sit for 20 – 30 minutes.
  3. Bring to a boil, then turn down to a simmer.
  4. Cook for 15 minutes, or until goji berries are soft and plump, and the cranberries pop.
  5. Stir in sugar, maple syrup, spices and salt.
  6. Cook 5 minutes longer.
  7. Adjust seasonings. Remove from heat.
  8. Stir in walnuts and orange zest.
  9. Cool to room temperature.
  10. Store in a covered container in the refrigerator for up to 2 weeks.

Whole Wheat Coconut Pancakes

Whole Wheat Coconut Pancakes

The best way to calm your shen is through sweet whole-wheat coconut pancakes. Sweet coconut helps strengthen heart qi, while the whole wheat nourishes the heart and calms the shen. This recipe will also help nourish your blood and yin. It is a great breakfast to help start your day.

• 2 cups whole wheat flour

• 4 1/2 tsp baking powder

• 2 tsp cinnamon

• 2 tsp sugar

• 2 large eggs

• 2 cups + 2 tbsp coconut milk

• 2 tsp of coconut flakes

• Olive oil

Directions:

Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots; don’t over-mix.

Heat a large skillet on medium heat. Lightly put oil to coat and pour 1/4 cup of pancake batter. When the pancake starts to bubble, you may add your fruit if you wish (lychee, strawberry, peach or pear). When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter.

Baking helps build yin and yang.

Whole wheat flour- Sweet, slightly cool; spleen, heart, kidney; supplements qi, nourishes heart and calms shen, reduces thirst.

Baking powder- Moderates the affect of the other ingredients

Cinnamon- Acrid, sweet and warm; spleen, stomach and urinary bladder; Invigorates yang, dispels cold, promotes blood circulation, warms the mingmen fire.

Sugar- Sweet, neutral; lung and spleen; boosts the qi, harmonizes the center and moistens the lungs, treats lung dryness, lung vacuity, wind cold, taxation and fatigue. coughing and panting, mouth sores, wind-fire toothache.

Egg- Sweet, neutral; lung and large intestine; strengthens blood, jing and yin.

Coconut milk- Sweet, neutral; spleen, stomach, kidney; nourishes blood, yin and jing.

Coconut- Sweet, warm; heart and lung; strengthens heart and lung qi

Olive oil- Sweet, cool; liver, gallbladder; moistens, benefits the liver and gallbladder.

Contraindicated in anyone who is allergic to coconut. It is also very sweet and should be cautioned in diabetics.

Beet and Apple Muffins

Beet and Apple Muffins

Makes 30 muffins

Ingredients

  • 4 eggs-cool, sweet, nourishes yin, tonifies blood
  • 1.5 cups light brown sugar-warm, sweet, strengthens digestion
  • ¾ cup olive oil- neutral, sweet, sour, astringent
  • ¾ cup orange juice-cool, sweet, sour, clears heat, soothes liver, strengthens spleen
  • 3 cups whole wheat flour-sweet, slightly cool, nourish heart, calm shen
  • 1 ½ tsp. baking soda
  • 2 tsp. baking powder
  • 4 small green apples, peeled and shredded-cool, sweet, slightly sour, strengthens heart
  • 1 tsp. cinnamon-pungent, sweet, warm, promotes blood circulation, warms the mingmen fire
  • 1 tsp. lemon juice- cool, sour, regulates qi, benefits liver
  • 2 cups shredded, cooked beets-cool, sweet, nourishes blood, tonifies heart, calms spirit

Directions

1. Preheat the oven to 350

2. Put all four eggs into the mixer and beat for 3 minutes. Then add in the oil, orange juice, flour, baking soda and baking powder in the exact order listed, while the mixer is beating on a low speed. When the batter is smooth, turn off the mixer.

3. Toss the shredded apples with the cinnamon and the extra bit of sugar and lemon juice. Add them into the batter, together with the shredded beets. Using a spatula, gently turn and mix it into the batter until it is all incorporated. The batter should turn a deep pinkish color.

4. Line your muffin trays with muffin liners and fill a little over halfway with batter.

5. Bake about 15 minutes

Beet and Goat Cheese Salad

BEET AND GOAT CHEESE SALAD serves 4

  • 4 beets, peeled
  • 4-1/2 oz goat cheese
  • 1 tbs chives
  • Salt/pepper
  • Several handfuls of young arugula
  • ½ apple, julienned
  • 2 tbs turbinado/brown sugar
  • 2 tbs rice vin
  • 2 tbs soy sauce
  • Extra virgin olive oil
  • Black sesame seeds

1) Bring water and beets to a boil, simmer until tender, 30 min. Drain and cool. Cut each beet into 8 wedges.

2) Blend cheese and chives and season with s & p.

3) Combine sugar, vinegar, and soy sauce. Beat dressing with enough olive oil until emulsified.

4) Toss beets and arugula with the dressing, scatter chunks of the cheese and julienned apple over the salad, drizzle with more evoo and sesame seeds.

This recipe is used for Heart Blood Deficiency with Heat. It can be used for conditions like anemia, heart weakness, and hypertension with symptoms like dry throat, insomnia, palpitations, and poor memory.

Ingredients:

8 oz (260g) Burdock root – benefits the lung, helps disperse wind heat and sore throat

8 oz (260g) 260g Radish – sweet pungent and cold going to lung and LI to move qi, blood and unblock bowel.

8 oz (260g) 260g Carrot – sweet and goes to liver spleen lung and heart, to tonify qi and blood

8 oz (260g) 50g Radish leave – enters spleen and stomach, and lung. Its bitter and pungent nature promotes qi flow and digestion.

8 oz (260g) 2-3 Shitake Mushroom – goes to lung and spleen, boost qi, benefits liver protects body.

Serves 4:

Directions:

  1. Clean all the above ingredient and cut into large pieces.
  2. Add in 6 cups water or broth (chicken, vegetable or beef) and bring to boil.
  3. Turn down heat and simmer for 1 hour.

This soup can clear heat, relieve toxin, nourish 5 organs, strengthen body.

Dave’s Mad Mixup- Red Rice Pilaf

Dave’s Mad Mixup-

Red Rice Pilaf– Serves 4-6
Use equal amounts of red rice (3/4 cup) and millet. Place in rice cooker with same volume of water. Toss in lotus seeds (2oz)-lily bulb (2oz) and poria (1oz). Add pinch of fennel and sesame oil if desired.

Stirfry.
Crush 1 oz of whole cumin and 1 oz of whole coriander. Pre heat wok and add cooking oil and sesame oil to taste. Toss in cumin and coriander and mix until their aroma comes out. Toss in firm tofu (8oz) and brown it- then toss in sliced carrots (6oz), green beans (6oz) and shitake (6oz) . Stir so that the seasoning covers the food.
Pour in 6 oz of vegetable stock and cover wok so food is flash steamed for 1-2 minutes.

Serve over the pilaf and garnish with sea salt.
Place your hands either side of your plate and ask please bless my food- wait a few moments and you should feel your hands warm.  Be thankful that you got to eat. About a billion people don’t get the food they need.

Overal I tried to stay bland with a little cooling tonify yin effect. But with easy digestion to promote MJ harmony. I had the idea that the recipe could move fluids in and out to create qi flow cooling and detoxifying at the same time.

Shiitake Congee
