Green Bean/Walnut salad

Green Bean/Walnut salad
Serves 3-4

Ingredients:
1 lb of fresh chopped green beans
2 cups of chopped walnuts
1 clove of chopped garlic
4 tablespoons of olive oil
4 tablespoons of balsamic vinegar
Salt and pepper to taste

Directions:
Add 2 tablespoons of olive oil to frying pan, heat up oil and add the chopped garlic and sautee garlic, then add fresh green beans and stir fry for 3 minutes, then add walnuts and stir fry for 5 minutes. Mix 2 tablespoons with 4 tablespoons of balsamic vinegar and pour over green beans and walnuts. Mix everything together and enjoy.

Sweet Potato Pie

Sweet Potato Pie

1 Recipe of your favorite pie crust.
2 cups cooked, mashed Sweet potatoes (yams).
3 beaten eggs
½ to ¾ cup brown sugar, barley malt, syrup, or honey.
1 tsp. cinnamon.
½ tsp. cloves.
¼ tsp. nutmeg.
½ tsp. allspice.
1 scant tsp. salt.
1 ½ cups evaporated milk (or mixed nonfat dry milk, goat milk, soy milk, or cashew milk).
Whipped cream for topping (optional).

Prepare crust and put into a 9 to 10 inch pie plate.  In a large bowl, beat together all the other ingredients except whipped cream.  Beat thoroughly and pour into pie shell.  Bake in preheated 375 degree oven for nearly an hour.  Cool before serving.  Serves six to eight people.

Sweet potatoes: neutral, sweet; SP/ST/L.I.; Strengthens SP, Tonifies qi/blood.
Eggs: sweet, neutral; nourishes yin/blood, lubricates dryness.
Milk: sweet, neutral; strengthens weakness, Tonifies qi, blood, and yin, lubricates dryness.
Honey: Sweet, neutral; SP, ST. Harmonizes middle jiao.
Cinnamon: acrid, sweet, hot; HT/KD/LV/SP. Warms and Tonifies yang, disperses cold, moves blood.
Overall, this recipe tonifies the SP/ST, nourishes yin and blood, and benefits KD/LU.

Beef Essence

Beef Essence
(2-4 servings)

1 pound lean beef, cut into thin strips
5 slices fresh ginger
¼ cup rice wine
5 ½ cups water

1. Place the beef and ginger in a pot with a tight-fitting lid. Add the wine and the water and bring it to a simmer. Do not let it boil.
2. Cook over low heat for 2 hours, adding water if necessary. Cover and continue cooking another 2 hours over low heat or until broth is flavorful.
3. Strain and discard the beef. Serve the soup flavored with desired seasonings to taste.

Analysis:
Beef is sweet and warm, it supplements SP and ST, nourishes qi and blood, and strengthens tendon and bone. Ginger is pungent and warm, disperses exterior cold, stops nausea and vomiting, detoxifies other substances, and reduces inflammation. Rice wine is warm, pungent and sweet; it promotes circulation.

Overall, this dish is warm and sweet, nourishing the SP, ST and blood. It provides a boost of energy, and is especially good for someone who is ill and has little appetite.

Note:  Tonifies Kidney Qi and Yang as well.

Herbal Gomasio

Herbal Gomasio – makes approximately ½ cup

Water or Wood Imbalance – Kidney Qi Deficiency or Liver Blood Deficiency

Ingredients (use organic when possible)

  • ½ cup sesame seeds
  • 1 teaspoon dulse flakes
  • 1 teaspoon nettle leaf
  • ½ teaspoon sea salt (optional)

Directions

  1. Toast sesame seeds in a dry skillet over medium heat, stirring regularly, for 5-10 minutes, or until slightly golden and aromatic.
  2. Cool seeds slightly, then mix with dulse flakes and nettles in blender, seed grinder, coffee grinder or with mortar and pestle. Grind coarsely, just enough to break the seeds and coat herbs with sesame oil.
  3. If the dulse or nettles are whole leaf, grind them into flakes first before mixing with sesame seeds.
  4. Taste and add optional salt if desired.
  5. Store in a jar or large opening shaker. Can also be used in a spice mill to further grind over food. If not used up within the week, store in the refrigerator to maintain freshness.

Options: Try mixing with other edible seaweeds – kombu, nori, kelp granules or a blend of seaweeds will work well. May be modified in various proportions to taste.

Baked Oatmeal with Mixed Berries and Plums

Baked Oatmeal with Mixed Berries and Plums - Makes 6 servings

Ingredients

  • 1 cup Blueberries-sour, sweet, warm, tonifies kidney
  • ½ cup Cranberries-sour, cooling, strengthens kidney
  • ½ cup Raspberries-slightly warm, sweet, sour, tonifies kidney
  • 3 medium plums, sliced-slightly warm, sweet, sour, regulates body fluids
  • 2 cups oats-sweet, warm, supplements vacuity, rejuvenates nervous and reproductive systems
  • 1 cup walnuts, toasted and chopped, divided into ½ cup servings-slightly warm, sweet, tonifies kidney
  • 1/3 cup brown sugar-warm, sweet, strengthens digestion, warms body
  • 1 tsp. baking powder
  • 1 ½ tsp. cinnamon-hot, pungent, sweet, warms body
  • ½ tsp. sea salt-cold, salty, slightly sweet, strengthens kidney
  • 2 cups almond milk-sweet, neutral, supplements spleen
  • 1 large egg-sweet, neutral, supplements qi
  • 1 ½ tbsp. unsalted butter, plus more for greasing the pan- sweet, neutral, supplements qi
  • 2 tsp. vanilla extract

Directions

1. Preheat oven to 375, grease an 8-inch baking dish. Layer sliced plums in the bottom of the dish.  Top with mixed berries.

2. In a medium bowl, combine oats, ½ cup walnuts, sugar, baking powder, cinnamon and salt. Mix well, and pour the dry ingredients over the fruit.

3. Combine almond milk, egg, butter and vanilla, and whisk well.

4. Pour the milk mixture over the oat mixture. Top with remaining ½ cup walnuts.

5. Bake for about 40 minutes, until the top is golden brown and the oat mixture appears solid. Remove the dish from the oven, and allow the oatmeal to cool for a few minutes. Serve warm.

Fish Soup

Fish Soup– Serves 3 to 4

1 (1-2 inch) piece of ginger, finely chopped

2 cloves of garlic minced

¼ cup goji berries

2 tablespoons rice wine

5 cups water

1 pound fresh salmon (boned and cut into 1-2 inch chunks)

½, chopped into 1/2-inch pieces.

2 teaspoons soy sauce

1 teaspoon dark sesame oil

Overall TCM Functions:

This dish strengthens Kidneys to counteract fatigue and insomnia.  It Nourishes yin and fluids.

Salmon- sweet, neutral, SP/KD. Strengthens spleen, nourishes yin, blood, and KD jing.

Ginger- pungent, warm, LU, SP, ST. Stops nausea and vomiting, detoxifies other herbs, reduces inflammation.

Soy Sauce- salty, cold, SP, ST, KD. Harmonizes middle jiao, clears heat.

Clove- pungent, warm, ST, KD. Dispels internal cold, warms the KD, stops pain.

Rice wine- pungent, sweet, warm, ST, LV, HT. Expels cold, invigorates blood, stops pain

Goji berries, sweet, neutral, KD, LV, LU. Nourishes LV and KD, moistens LU.

Warm French Lentils

Warm French Lentils

Serves 4 to 6

2 tablespoons plus ¼ cup good olive oil

1 leek, white and light green parts, sliced ¼ inch thick.

2 carrots, scrubbed and ½ -inch-diced

1 teaspoon minced garlic

1 cup French green Le Puy lentils

1 whole onion, peeled and stuck with 6 whole cloves

1 white turnip cut in half

1 teaspoon unsalted butter

4 teaspoons Dijon mustard

2 tablespoons red wine vinegar

1 tablespoon sea salt

1 teaspoon freshly ground pepper

Lentils- Sweet, Neutral, Spleen, Stomach. Strengthens spleen, harmonizes middle jiao.

Leek/Onion-Warm and Acrid. Promotes sweating, resolves phlegm, regulates qi, reduces toxins.

Carrots- Sweet, Neutral, Spleen, Liver, Lung, Heart. Strengthens spleen and heart, nourishes and soothes liver, benefits the lung and drains damp.

Garlic- Hot and Acrid. Dispels cold resolves toxicity.

Turnip- Cool, Sweet, Bitter, Acrid. Clears heat, removes dampness and stagnant food, detoxifies, stops cough.

Butter- Sweet, Neutral, Spleen, Stomach, Lung. Supplements qi, nourishes blood, moistens dryness.

Dijon Mustard- Sweet, Warm, Liver, Stomach. Strengthens stomach, rectifies qi, harmonizes and warms the middle jiao.

Red wine vinegar- Warm, Sour, Sweet, Sl. Bitter, Pungent, Liver, Stomach. Heart. Invigorates blood, expels cold, clears toxin.

Salt- Salty, Cold, Kidney. Clears heat cools blood, eases bowel movement, nourishes kidney.

Pepper- Pungent, Warm, Stomach, Large Intestine. Warms the middle jiao, descends stomach qi, expels cold and damp.

Lactation Cakes

General/promote lactation

Ingredients:

½ lb lean ground pork – benefit the kidney and lactation

1 stalk green onion 1 tspr – warming, upward moving, dispersing to benefit flow of breast milk

1 tsp Soy sauce

1⁄2 tsp salt

50 g (1.5 oz) lily flower ( Bai He) – clear heat, moisten dry and goes to heart channel to benefit lactation.

Serves: 2

Directions:

1. Chop lily flower and mix with rest of ingredients, make into flat patty.

2. Steam for 15 minutes,

Shrimp and Veggie Fettucini

Shrimp and Veggie Fettucini

Servings: 1 large or 2 small

Prep time: 10 minutes

Cooking time:10 minutes

Ingredients:

“Fettuccini”

½ cup carrot: detoxifying and tonify qi

¾ cup zucchini: supports yin and fluids

¾ cup broccoli stalk (imperfections trimmed)

1 cup mushrooms: support free coursing of liver qi

4 oz of cooked and peeled shrimp: salty to soften hardness

Olive oil

Sauce: minimal amount, more for flavor but the sauce tends to be balanced with the warming and moving nature of the nutmeg, pepper and onion matched against the cool and moistening nature of the yogurt and coconut milk.

Olive oil cooking spray

¼ cup onion (finely diced)

¼ cup coconut milk

¼ cup yogurt

1 tablespoon miso paste

1 pinch of nutmeg

1 pinch of pepper

2 tbsp water or vegetable stock

Instructions: Peel the outside layer of the carrots and discard. Now use the peeler and peel the carrots, zucchini and broccoli into strips and then set aside. This is the “fettuccini.” With the zucchini peel down until you reach the seeded soft center and then either mash up and add to the sauce or discard. Next, sauté the sliced mushrooms in a pan with ½ tbsp of coconut oil, season with salt and pepper and let cook for 2-4 min. Drain liquid then mix mushrooms with the veggie fettuccini.

Sauce:

Preheat a small pot on medium heat and lightly coat with spray. Add the onion and sauté. Mix in coconut milk, yogurt, miso, nutmeg and pepper, bring to a simmer and stir until miso is completely dissolved.

Remove from heat.

Clean pan if necessary, pre-heat and re-spray. Add the carrot and broccoli “fettuccini” to the pan and sauté for 3 minutes. Add 2 tablespoons of stock or water and then add the zucchini and sauté for 2 minutes more.

Add the sauce and toss until warm.

Transfer the fettuccini to the center of a plate, top with the shrimp.

Dave’s Mad Mixup- Red Rice Pilaf

Dave’s Mad Mixup-

Red Rice Pilaf– Serves 4-6
Use equal amounts of red rice (3/4 cup) and millet. Place in rice cooker with same volume of water. Toss in lotus seeds (2oz)-lily bulb (2oz) and poria (1oz). Add pinch of fennel and sesame oil if desired.

Stirfry.
Crush 1 oz of whole cumin and 1 oz of whole coriander. Pre heat wok and add cooking oil and sesame oil to taste. Toss in cumin and coriander and mix until their aroma comes out. Toss in firm tofu (8oz) and brown it- then toss in sliced carrots (6oz), green beans (6oz) and shitake (6oz) . Stir so that the seasoning covers the food.
Pour in 6 oz of vegetable stock and cover wok so food is flash steamed for 1-2 minutes.

Serve over the pilaf and garnish with sea salt.
Place your hands either side of your plate and ask please bless my food- wait a few moments and you should feel your hands warm.  Be thankful that you got to eat. About a billion people don’t get the food they need.

Overal I tried to stay bland with a little cooling tonify yin effect. But with easy digestion to promote MJ harmony. I had the idea that the recipe could move fluids in and out to create qi flow cooling and detoxifying at the same time.
