Honey Glazed Peach Tart

Honey Glazed Peach Tart

Crust ( you can use pre-made pie dough from the grocery store)

* 1 1/2 cups all purpose flour (clears heat)
* 3 tablespoons powdered sugar (tonifies Mother of LU)
* 1/4 teaspoon salt
* 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes (moistens dryness)
* 3 1/2 tablespoons (about) ice water

Filling

* 1/4 cup sugar
* 3 tablespoons all purpose flour (clears heat)
* 2 teaspoons grated lemon peel (regulates qi)
* 6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups) (lubricates lungs, astringes LU Qi, clears heat)
* 2 tablespoons honey (moistens lungs)
* 2 tablespoons chilled unsalted butter, cut into small pieces (Lubricates dryness)
* 2 tablespoons sliced almonds (ventilates lungs, relieves cough)
* 2 tablespoons peach preserves, melted (same as peaches)

For crust:
Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.

Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.

Preheat oven to 400° F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)

For filling:
Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead. Store tart at room temperature.)

Applesauce with Pears and Peaches

Applesauce with pears & peaches
Yields: 8 servings

2 lbs of apples, peeled, cored and chopped
½ lb of pears, peeled, pitted, and chopped
½ lb of peaches, peeled, cored and chopped
3 cups of water
1 cup of white sugar
1 tbsp lemon juice

1. Place all the fruit in a large saucepan and just barely cover with water. Simmer over medium-low heat until fruit is tender, 15-20 minutes.
2. Run cooked fruit through a food mill or blender. Stir in sugar and lemon juice. Cook over medium heat for about 3-5 minutes.

TCM analysis: Overall cools the heat in the LU from LU yin xu
Apples: cool, sweet, slightly sour. strengthens HT, tonfiies qi, quenches thirst, reduces dryness, alleviates thirst, lubricates LU, resolves mucus
Pears: cold, sweet. Regenerates body fluids, quenches thirst, calms HT, lubricates LU, relieves restlessness, promotes urination, clears heat, detoxifies, lubricates throat, dissolves mucus, descends qi and stops cough
Peaches: very cool, sweet and slightly sour. Lubricates LU, clears heat, aids diabetes, promotes body fluids, induces sweating.

Modifications

  • Taste the milled fruit before adding sugar.  Then, just add sugar to taste.  May be sweetened with an alternative sweetener such as honey or maple syrup.
  • Add a little bit of cinnamon for depth of flavor and to change temperature of food to slightly warm.

 

Chocolate Coconut Pot de Creme

Chocolate Coconut Pot de Creme

6 oz fine-quality bittersweet chocolate, finely chopped (Bitter,Tonifies KD)
1 1/3 cups Chocolate Almond Milk
2/3 cup Coconut Cream (Tonifies Yin)
7 large egg yolks (Tonifies Yin & Blood)
1 tablespoon sugar (Tonifies SP, Earth)

Preheat oven to 300°F.  Put chocolate in a heatproof bowl.  Bring coconut cream, almond milk , and a pinch of salt just to a boil in a small heavy saucepan, then pour over chocolate, whisking until chocolate is melted and mixture is smooth.
Whisk together yolks, sugar, and a pinch of salt in another bowl, then add warm chocolate mixture in a slow stream, whisking constantly.  Pour custard through a fine-mesh sieve into a 1-quart glass measure and cool completely, stirring occasionally, about 15 minutes.
Divide custard among ramekins, then bake custards in a hot water bath , until custards are set around edges but still slightly wobbly in centers, 30 to 35 minutes.
Transfer ramekins to a rack to cool completely, uncovered, about 1 hour. (Custards will set as they cool.) Chill, covered, until cold, at least 3 hours.
Serves 6

Asian Pear Tapioca Dessert

Asian Pear Tapioca Dessert (kids will like this)

Lung Yin Xu
Function: nourish the Lung yin, stop coughing blood, or dry cough
Ingredients:  2 asian pears, 1/2 cup tapioca, a little sugar and some water

Function of herbs
Chinese pear: sweet, cold; LU, LI, ST.  Clear heat, nourish fluids, decrease thirst, moisten lung, dissolve phlegm.
Tapioca: strengthen SP, harmonize MJ

How to cook:
1. soak tapioca for 15 minutes
2. Shred one pear.  Chop one pear.
3. In another pot, boil water.   Then, add sugar and tapioca.  Cook over medium flame until sugar melts and tapioca changes to white color.
4. Lower the flame and add pear.  Stir and serve.

Serves: 3-5 people

Dragon Eye Pudding

Dragon Eye Pudding

1 13-oz. can Longans (sweetened)
3 T. Rice Flour
1 tsp. Brandy (flavored brandy or triple sec)

Drain longans and reserve enough syrup to make two cups with added liquor and water if needed (add liquor first).

Combine liquid with rice flour in a saucepan and bring it to a slow boil, stirring constantly, and cook until it thickens (about 10 to 12 minutes).

Add longans and serve hot or warm in individual bowls. You may also substitute lichee fruits if you like.

This takes about 15 minutes to make and serves 4.

Longans: sweet, warm, nourish qi and blood, calm shen
Rice Flour: supplements SP/ST
Brandy: expels cold, invigorates blood

Mulberry Muffins

Mulberry Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup fat free sour cream
1/4 cup skim milk
2 tablespoons applesauce
1 egg
1/2 teaspoon almond extract
1/2 cup mulberries

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

Beet Raita

Beet Raita
Makes 3 cups
(From 3 Bowls)

¾ c plain low-fat yogurt
2 T chopped fresh dill
½ t honey
½ t fresh lime juice
1 medium to large beet (about ½ pound), cooked, peeled, and grated

1. Whisk together the yogurt, dill, honey, and lime juice in a medium bowl.
2. Add the grated beet. Mix thoroughly.
3. Refrigerate and serve cold.

(If you want a thicker raita, first drain the yogurt in a strainer lined with cheesecloth for 10 minutes.)

TCM Analysis
Yogurt: cool, sweet, sour; SP, ST, LU. Nourish yin, clear heat.
Dill: warm; LV, HT. Move qi, calm shen.
Honey: sweet, neutral; SP, LU, LI. Harmonize MJ, moisten dryness, nourish yin.
Lime: cool, sour; ST. Regenerate fluids, regulate qi.
Beet: sweet, neutral; SP, ST, LV, HT. Strengthen MJ, nourish LV blood, calm shen.

Overall, this recipe nourishes yin & blood, clears heat, and calms shen.  With beets as the main ingredient, it goes to the HT and would be particularly good for HT yin xu.

Stuffed Lotus Root

Stuffed Lotus Root

Ingredients:

  • 1 medium lotus root
  • ½ C dry mung beans
  • ½ C carrot, diced

Instructions:

  1. Soak mung beans in water for 30 minutes.
  2. Chop off one end of the lotus root (about 1 inch). You will see several holes in the root. Fill the holes with mung beans and diced carrot. Press stuffing in with a fork or chopstick.
  3. Steam for 1 hour, or until the lotus root is thoroughly cooked. Check tenderness with a fork.
  4. Chop into thin slices and serve.

Makes 3-4 small servings (as side dish, snack, or dessert).

TCM analysis:

lotus root: sweet, cold; SP, ST, HRT; clears heat, strengthens HRT/SP, astringes LI, stops diarrhea
mung beans: sweet, cold; HRT, ST, UB; clears heat, alleviates thirst and irritability, promotes urination
carrot: sweet, neutral; SP, LV, LU, HRT; strengthens HRT/SP, nourishes LV, benefits LU, promotes urination

This recipe clears heat from the HRT that is transmitting to the UB, causing difficult or painful urination. Overall, the recipe is cold and sweet, leading to its ability to clear fire and generate fluids to promote urination. It may also be used to reduce edema or to decrease blood pressure.

Coconut Sweet Rice

Coconut Sweet Rice
(serves 4-6)

1 cup sweet rice
2 cups coconut milk
Pinch of salt

1. Rinse the rice in 1 or 2 changes of water.
2. If making with salt, place the rice in a saucepan, add salt and coconut milk, then bring to a boil. Immediately turn down the heat and continue cooking, uncovered, until nearly all the coconut milk is absorbed and a layer or cream remains. Stir, cover, and let sit 5 minutes.

Analysis:
Sweet rice is sweet, neutral, and slightly binding. It supplements qi while warming and strengthening the Middle Jiao.  Coconut milk is sweet and acrid.  It helps produce fluids, promotes urination, and destroys parasites.  Salt is salty and cold, it clears heat and cools the blood, eases bowel movements and nourishes the KD.  It has a downward direction to help drain the bladder.
These ingredients combine to promote urination while clearing heat. It is a good dish to eat with vegetables (think: squash), stew or curry, and makes an excellent base to add herbs specific to the patient’s condition.

Oysters Steamed in Egg Custard

Oysters Steamed in Egg Custard
(4-6 servings)

1 pint shucked oysters
6 eggs
2 tsp soy sauce
½ tsp white pepper
1 tsp salt
1 tsp sesame oil
1 scallion, green and white parts, minced

1. Drain the oysters well, reserving 3 tablespoons of the juice.
2. In a bowl, stir the eggs with the oyster juice to blend well. Do not beat the eggs with a fork, as no foam should form. Add the soy sauce, pepper and salt. Stir well.
3. Grease a heatproof pie dish with the sesame oil and pour in the egg mixture. Arrange the oysters evenly in the egg mixture and sprinkle with the scallions. Set the dish in a bamboo steamer basket with a lid. Cover and steam over low heat 15 to 20 minutes or until the eggs are lightly set and the oysters are just cooked. Don’t let the water come to a boil, or bubbles will form in the custard, making it spongy.

Analysis:
Oysters are sweet, salty and neutral, consolidate yin, and anchor yang. They are considered especially useful for yin deficiency insomnia.

Eggs are sweet and neutral, nourish yin and blood, supplement SP and ST, and calm the shen. Soy sauce is salty and cold, it harmonizes the MJ and clears heat.

White pepper is cold, pungent and bitter, it tonifies yin, sedates yang, benefits qi and removes stagnant blood.

Salt is salty and cold, it clears heat and cools the blood, eases bowel movements and nourishes the KD.

Sesame oil is cool and sweet, tonifies qi and blood, clears heat and sedates yang. Scallion is warm (green) and hot (white), it expels pathogens, dispels wind and cold, and induces sweating.

Overall: When combined, these ingredients are cool, sweet and salty to nourish yin, clear any heat harassing the HT, and anchor yang to calm shen.
