Winter Melon Soup

Winter Melon Soup

3 qt vegetable broth

3 c winter melon, peeled and chopped

2 carrots

2 celery stalks

1 onion

12 Chinese mushrooms, stems removed

6 oz tofu noodles or finely sliced baked tofu

1 tsp chives

1 tsp peanut oil

1 Tbsp tamari

Directions: cook together until tender, about 25 minutes, season with chives, tamari and peanut oil.

Serving Size: 4

TCM Evaluation:  winter melon is sweet, bland and cool, detoxifies and drains damp; carrots are sweet and neutral, diuretic and drains damp; celery stalks are sweet, bitter and cold, drains damp and transforms phlegm; onion clear heat, relieve toxicity, transform phlegm and damp; Chinese mushrooms are sweet and cool, rectifies qi and boost wei qi; tofu noodles are sweet and neutral, promotes urination and resolves toxicity

CHAI TEA

makes 2 quarts

Ingredients:

2 qts water

2 cinnamon sticks

¼ c green cardamom pods

1 heaping tsp black peppercorns

½ heaping tsp whole cloves

Several slices of fresh ginger

1-2 black teabags (I like Darjeeling or Earl Gray)

Honey

Goat’s Milk

nutmeg

1) Combine all ingredients except for the tea bags; bring to boil, reduce heat, and simmer, covered, for 45 min.  Add the tea bags and continue to simmer for another 10-15 min.  Strain into a container to store.

2) To serve, reheat a desired amount and add honey and goat’s milk to taste; grate nutmeg over the top.

Variations:

Experiment by adding other dried herbs like dried tangerine peel or dried coconut.

You can substitute soy milk, rice milk, or almond milk for the goat’s milk.

Qi Stagnation with Cold in the Middle Jiao

Cinnamon:  Hot, acrid, and sweet; HT, LV, KD, SP; strengthens stomach, warms body.

Cardamom:  Warm, acrid; KD, SP; aids digestion, warms and resolves dampness, regulates Qi, stops

nausea and vomiting.

Black Peppercorns:  Hot, acrid; ST, LI; warms body, aids digestion

Cloves:  Warm, acrid; KD, SP, ST; warms body, reverses rebellious Qi.

Ginger:  Warm, acrid; LU, SP, ST; releases exterior Wind Cold, stops nausea/vomiting

Black Tea:  Cool, bitter, sweet; clears the head, resolves phlegm, promotes digestion and urination

Honey:  Warm, sweet; LU, SP, ST; lubricates dryness, strengthens digestion

Goat’s Milk:  Neutral, sweet; strengthens, nourishes Qi and Blood, lubricates dryness

This recipe contains very warming and moving herbs that promote good digestion.  Goat’s Milk is

the traditional ingredient in this drink and even though it can be considered an acquired taste, in a

small amount, it works to tonify Qi and Blood.   Goat’s Milk is also much easier to digest than Cow’s

milk.  It can be used for indigestion, fatigue after meals, nausea, vomiting, and diarrhea.

Grilled Shrimp with a Chile Dressing

Grilled Shrimp with a Chile Dressing
Six Servings

-2 lbs large shrimp (16-20 per lb), shelled and deveined (or tempeh if vegetarian)
-6 cloves of garlic, peeled and smashed
-3 small, fresh red Thai chiles, ends trimmed, seeds removed, and cut into thin slices
-1/4 cup rice wine or sake
-1 1/2 tsp toasted sesame oil
-6 skewers for grilling

Chile Dressing:
*3-4 small, fresh red Thai chiles or cherry peppers
*1/2 cup clear rice vinegar
*1/4 cup virgin olive oil
*1 1/2 tsp toasted sesame oil
*1/2 tsp salt

1. Using a sharp knife, cut along the back of the shrimp to butterfly them. Place them in a bowl.

2. Add the garlic, chiles, rice wine or sake, and sesame oil to the shrimp. Toss lightly, cover with a plastic wrap and let the shrimp marinate for at least 3 hours at room temperature or overnight in the refrigerator. Before grilling, thread the shrimp loosely through the skewers so that they lie flat.

3. Meanwhile, prepare the Chile Dressing. Trim the ends and stems from the chiles, remove the seeds and coarsely chop by hand or in a food processor, pulsing the machine by turning it on and off. Place the chopped chiles in a clean jar and add the vinegar, olive oil, sesame oil and salt. Seal tightly and shake the dressing. Store at room temperature for several hours or overnight before using it.

4. Prepare a medium-hot fire for grilling and place the grill 3 inches above the coals. Arrange the shrimp on the grill and cook for about 5-7 minutes on each side or until cooked through, basting with the marinade.

5. Remove the cooked shrimp from the skewers, put them in a serving bowl and toss with the chile dressing or serve the dressing on the side for dipping.

Chinese Cinnamon Barley Soup

Chinese Cinnamon Barley Soup
six servings

*8 whole scallions, ends trimmed, cut into 1.5 inch sections and smashed lightly with the flat side of a knife
*8 cloves garlic, smashed lightly
*8 slices of ginger, about the size of a quarter, smashed lightly
*2 sticks of cinnamon
*1 tsp anise seeds
*1/2 cup soy sauce (or tamari sauce if wheat sensitive)
*1/2 cup rice wine or sake
*7 cups water
-2 lbs chuck or beef stew meat, cut into 1.5 inch cubes (or adzuki beans with tempeh if vegetarian)
-1 cup barley
-1 1/2 lbs spinach, trimmed, rinsed and drained
-3 TBS minced scallions, white part only

1. Place the starred ingredients in a large pot or casserole dish. Bring to a boil.

2. Add the beef and barley, and boil again. Reduce the heat to low, cover and simmer, skimming the surface to remove impurities and fat. Cook for 1 1/2 hours, until the beef is very tender. Scoop out the ginger slices, cinnamon sticks, and anise seeds, and discard.

3. Add the spinach to the beef, cover, and heat till boiling. Ladle the meat with broth and spinach into serving bowls, sprinkling the top with scallions. Serve immediately.

Walnut Sesame Clusters

Walnut Sesame Clusters

Ingredients:

  • 2 C walnuts
  • 2 Tbsp black sesame seeds
  • 1-2 Tbsp toasted sesame oil
  • honey

Instructions:

  1. Toast walnuts and black sesame seeds in a saute pan with the sesame oil until the seeds stick to the nuts. Stir and flip nuts occasionally to prevent burning.
  2. Remove from heat. Pour honey over nuts and seeds. Spoon clumps onto wax paper to cool.

Makes enough clusters to cover one dinner plate.

black sesame seeds: sweet, neutral; LV, KD, LU, LI; nourishes LV/KD, moistens LI, nourishes jing/marrow
honey: sweet, neutral; SP, LU, LI; nourishes/harmonizes MJ, moistens dryness, antidote to food poisoning

This recipe deeply tonifies the KD while moistening dryness in the LI. It is an easy-to-make treat for weak or elderly patients with constipation, since it tonifies both KD yin and yang and promotes bowel movements. Honey increases the moistening action of the recipe and makes it easier to digest.

Black Bean and Tomato Stuffed Sweet Potatoes

Black Bean and Tomato Stuffed Sweet Potatoes

4 medium sweet potatoes, scrubbed
1 15-oz. can black beans, rinsed and drained (or 1-1/2 cups cooked black beans)

1 15-oz.can diced tomatoes with green chilies, (or a can of tomatoes plus 3 tablespoons of diced green chilies from a can, or 1-2 finely chopped fresh jalapenos)

1/2 cup sliced green onions, white and green parts
2 cloves garlic, minced

1 teaspoon dried oregano
1/4 cup chopped fresh parsley or cilantro (opt.)

1/4 teaspoon salt (if needed)

fresh ground pepper, lots

1 small avocado (or vegan sour cream)

2 tablespoons lemon juice

  • Slice a very small piece from the end of each potato. (Or, you can prick them all over with a fork.) Bake at 425ËšF for about 40 minutes or until nice and soft all the way through. You can bake them right on the oven rack. I like to use the toaster oven for this unless I’m using the big oven to make other stuff, too. When they are ready, place them on a plate to cool slightly while you finish up the filling.
  • Cook the the onion, garlic and oregano (and jalapenos, if using fresh) in the oil for one minute. Add the beans, tomatoes, canned chilies (if using), salt and pepper. Heat gently until hot. Stir in the parsley or cilantro. Taste for seasoning.
  • Open the avocado and scoop out the pulp. Mash and mix with lemon juice, a tiny pinch of salt and fresh ground pepper.
  • Split the potatoes lengthwise and gently push the ends towards each other to create a pocket.
  • Fill the pockets with the bean mixture and top with avocado or vegan sour cream.

This is a good recipe to use for KD deficiency. The three main ingredients- Black Beans, Tomato, and Sweet Potatoes all go to strengthening the KD. The recipe would be a nice tonifying recipe over all, with Avocado as another nice ingredient to nourish blood and yin. The green onions and cilantro keep the dish moving, and the black pepper would help with digestion. Its a nice, healthy dish all around- and fairly balanced in temperature, with many of the ingredients being neutral.

Sweet Potato Pie

Sweet Potato Pie

1 Recipe of your favorite pie crust.
2 cups cooked, mashed Sweet potatoes (yams).
3 beaten eggs
½ to ¾ cup brown sugar, barley malt, syrup, or honey.
1 tsp. cinnamon.
½ tsp. cloves.
¼ tsp. nutmeg.
½ tsp. allspice.
1 scant tsp. salt.
1 ½ cups evaporated milk (or mixed nonfat dry milk, goat milk, soy milk, or cashew milk).
Whipped cream for topping (optional).

Prepare crust and put into a 9 to 10 inch pie plate.  In a large bowl, beat together all the other ingredients except whipped cream.  Beat thoroughly and pour into pie shell.  Bake in preheated 375 degree oven for nearly an hour.  Cool before serving.  Serves six to eight people.

Sweet potatoes: neutral, sweet; SP/ST/L.I.; Strengthens SP, Tonifies qi/blood.
Eggs: sweet, neutral; nourishes yin/blood, lubricates dryness.
Milk: sweet, neutral; strengthens weakness, Tonifies qi, blood, and yin, lubricates dryness.
Honey: Sweet, neutral; SP, ST. Harmonizes middle jiao.
Cinnamon: acrid, sweet, hot; HT/KD/LV/SP. Warms and Tonifies yang, disperses cold, moves blood.
Overall, this recipe tonifies the SP/ST, nourishes yin and blood, and benefits KD/LU.

Lamb with Sweet Potatoes

Lamb with Sweet Potatoes
6 servings
(Modified from A Spoonful of Ginger)

1 t oil
8 cloves garlic, sliced thinly
8 scallions, trimmed in 1 inch sections
8 slices fresh ginger
1 t hot chili paste
2 sticks cinnamon
1 t anise seed
5 c water
½ c low-sodium soy sauce
3 T rice wine
1 T sugar
3 lbs lamb stew meat, cut in 1½ inch cubes
4 sweet potatoes, peeled and cubed
½ lb fresh spinach, washed and drained

1. Heat a Dutch oven, add the oil, heat until hot.
2. Add seasonings. Stir-fry until fragrant, about 15 seconds.
3. Add broth, bring to a boil.
4. Add lamb and bring to a boil again.
5. Reduce heat to low, partially cover, simmer for 1 hour, until lamb is tender.
6. Skim the surface to remove any fat or gristle.
7. Add the sweet potatoes. Simmer, partially covered for 20 minutes or until tender.
8. Remove the ginger slices and cinnamon sticks. Discard.
9. Add the spinach. Cook until wilted, 30 seconds to 1 minute.
10. Remove from heat and serve.

Garlic: hot, acrid; Relieve food stagnation, move blood, dispel cold.
Scallions: sweet, pungent, warm; ST, LV, KD. Warm MJ, warm KD yang, invigorate blood.
Ginger: pungent, warm; LU, SP, ST. Disperse cold, stop nausea/vomiting, detoxify, reduce inflammation.
Hot chili paste: (pepper) hot, pungent. Warm digestion, dispel cold.
Cinnamon: Hot, acrid, sweet; ST, KD. Strengthen ST, warm channels, stop pain, warm KD.
Anise seed: pungent, sweet, warm; ST, LV. Strengthen St, regulate qi, harmonize, warm MJ.
Soy sauce: salty, cold; SP, ST, KD. Harmonize MJ, clear heat.
Rice wine: warm, pungent, sweet. Promote circulation.
Sugar: sweet, neutral; LU, SP. Tonify qi, moisten dryness, harmonize MJ.
Lamb: sweet, warm; ST, SP, KD. Tonify KD yang, warm MJ, nourish blood.
Sweet potatoes: neutral, sweet; SP, ST, LV. Strengthen SP/ST, tonify qi/blood, clear heat, increase milk production, benefit eyes.
Spinach: sweet, cold; ST, LI. Clear heat, stop bleeding, nourish blood, moisten dryness.

Overall, this is a very warming recipe. The sweet potatoes, spinach, and soy sauce bring some cooling nature to balance it. The primary focus is on the KD for tonifying KD yang.

Sweet Potato Soup

Sweet Potato Soup
(8 servings)

1 ½ pounds sweet potatoes
3 cups chicken stock
1 head garlic, peeled
1 tbsp vegetable oil
1 ½ tbsp curry powder
2 tsp minced ginger
1 cup cream (or nonfat evaporated milk)

1. Preheat the oven to 350 degrees. Rinse the potatoes and roast them in the oven for 40 minutes or until tender.
2. Bring the stock to a boil and blanch the garlic for 5 minutes; remove garlic from the stock with a slotted spoon.
3. Scoop the potato pulp out of the skins. Puree the potato and garlic cloves. Combine with stock.
4. Heat oil in a saucepan and sauté the curry powder until aromatic, about 2 minutes. Add the curry and ginger to the soup and simmer for 15 minutes (the soup may be held at this point, and refrigerated or frozen until ready to serve).
5. Add the cream or evaporated milk and simmer a few minutes until hot. Serve.

Analysis:
The sweet potatoes are neutral and sweet, strengthen SP and ST, tonify qi and blood, clear heat, and detoxify. Chicken stock is warm and sweet, supplements qi of SP and ST, nourishes blood, boosts wei qi and consolidates the KD. Garlic is hot and acrid, it detoxifies, removes stagnant food and blood, aids vomiting and diarrhea. Vegetable oil seems neutral and lubricating. Curry ???? Ginger is pungent and warm, disperses exterior cold, stops nausea and vomiting, detoxifies other substances, and reduces inflammation. Cream/milk is sweet and neutral, supplements qi, nourishes blood, and moistens dryness.
Overall, the recipe is warm and sweet, nourishing to the ST and SP, yet moving and detoxifying. The soup tastes rich, but is soothing to the ST and can be especially good if the patient has overeaten the night before. It aids retention of food in the ST and symptoms of indigestion.

Beef Essence

Beef Essence
(2-4 servings)

1 pound lean beef, cut into thin strips
5 slices fresh ginger
¼ cup rice wine
5 ½ cups water

1. Place the beef and ginger in a pot with a tight-fitting lid. Add the wine and the water and bring it to a simmer. Do not let it boil.
2. Cook over low heat for 2 hours, adding water if necessary. Cover and continue cooking another 2 hours over low heat or until broth is flavorful.
3. Strain and discard the beef. Serve the soup flavored with desired seasonings to taste.

Analysis:
Beef is sweet and warm, it supplements SP and ST, nourishes qi and blood, and strengthens tendon and bone. Ginger is pungent and warm, disperses exterior cold, stops nausea and vomiting, detoxifies other substances, and reduces inflammation. Rice wine is warm, pungent and sweet; it promotes circulation.

Overall, this dish is warm and sweet, nourishing the SP, ST and blood. It provides a boost of energy, and is especially good for someone who is ill and has little appetite.

Note:  Tonifies Kidney Qi and Yang as well.
