Lamb with Sweet Potatoes

Lamb with Sweet Potatoes
6 servings
(Modified from A Spoonful of Ginger)

1 t oil
8 cloves garlic, sliced thinly
8 scallions, trimmed in 1 inch sections
8 slices fresh ginger
1 t hot chili paste
2 sticks cinnamon
1 t anise seed
5 c water
½ c low-sodium soy sauce
3 T rice wine
1 T sugar
3 lbs lamb stew meat, cut in 1½ inch cubes
4 sweet potatoes, peeled and cubed
½ lb fresh spinach, washed and drained

1. Heat a Dutch oven, add the oil, heat until hot.
2. Add seasonings. Stir-fry until fragrant, about 15 seconds.
3. Add broth, bring to a boil.
4. Add lamb and bring to a boil again.
5. Reduce heat to low, partially cover, simmer for 1 hour, until lamb is tender.
6. Skim the surface to remove any fat or gristle.
7. Add the sweet potatoes. Simmer, partially covered for 20 minutes or until tender.
8. Remove the ginger slices and cinnamon sticks. Discard.
9. Add the spinach. Cook until wilted, 30 seconds to 1 minute.
10. Remove from heat and serve.

TCM Analysis:
Garlic: hot, acrid; Relieve food stagnation, move blood, dispel cold.
Scallions: sweet, pungent, warm; ST, LV, KD. Warm MJ, warm KD yang, invigorate blood.
Ginger: pungent, warm; LU, SP, ST. Disperse cold, stop nausea/vomiting, detoxify, reduce inflammation.
Hot chili paste: (pepper) hot, pungent. Warm digestion, dispel cold.
Cinnamon: Hot, acrid, sweet; ST, KD. Strengthen ST, warm channels, stop pain, warm KD.
Anise seed: pungent, sweet, warm; ST, LV. Strengthen St, regulate qi, harmonize, warm MJ.
Soy sauce: salty, cold; SP, ST, KD. Harmonize MJ, clear heat.
Rice wine: warm, pungent, sweet. Promote circulation.
Sugar: sweet, neutral; LU, SP. Tonify qi, moisten dryness, harmonize MJ.
Lamb: sweet, warm; ST, SP, KD. Tonify KD yang, warm MJ, nourish blood.
Sweet potatoes: neutral, sweet; SP, ST, LV. Strengthen SP/ST, tonify qi/blood, clear heat, increase milk production, benefit eyes.
Spinach: sweet, cold; ST, LI. Clear heat, stop bleeding, nourish blood, moisten dryness.

Overall, this is a very warming recipe. The sweet potatoes, spinach, and soy sauce bring some cooling nature to balance it. The primary focus is on the KD for tonifying KD yang.

Cinnamon-Chestnut Congee

Cinnamon-Chestnut Congee 3 to 4 servings

In northern China, chestnuts are dubbed “the king of dried fruits” (gan guo zhi wang)

6 fresh, unshelled chestnuts
1/4 cup chopped walnuts
1/2 cup uncooked short-grain rice, rinsed and drained
1/4 teaspoon salt (optional)
4-5 cups water
1 teaspoon ground cinnamon, or to taste
1-2 teaspoons honey or other natural sweetener, or to taste (optional)

Boil chestnuts in a pot of water for 1/2 hour. Remove from water and cut in half (a serrated knife is helpful). Scoop out the firm flesh with a spoon, discarding the skins and shells. Chop chestnuts into 1/4-inch pieces.

Combine walnuts, chestnuts, rice, salt (if using) and water in a pot.

Bring to a boil, then lower heat and simmer, covered with lid slightly ajar for 45 to 60 minutes, stirring occasionally. Add a little extra water if the congee is dryin out and/or sticking to the bottom of the pot.

Add cinnamon and cook for 2 to 3 more minutes.

Add honey, if desired, then serve.

Harmonizes HT & KD, augment KD essence and strengthen SP qi.

Especially good for anyone with cold extremities, weakness, impotence, diarrhea, low back pain, poor memory, insomnia or frequent nighttime urination.

Corn Spoon Bread Pudding

Corn Spoon Bread Pudding

3 cups corn meal (tonifies the heart)
5 cups water
2 1/2 cup cubed butternut squash (diuretic, helps with edema)
1 1/2 tsp. salt

3 grated apples (Strengthens HT)
3 T. almond butter ( Benefits Lungs)
1/2 cup honey (nourishing to Spleen for post-natal qi)
1/2 cup whole wheat flour (nourishes HT)
2 T soy flour
1 1/2 tsp cinnamon (Strengthens Ht, according to Shang han lun)
1 T. grated orange peel (moves qi)

Place corn meal, water, squash, and salt in pot, bring to boil. Lower heat and simmer for 20 minutes.
Puree mixture in blender, then add remaining ingredients.
Pour into buttered 2qt casserole dish and bake at 350* for 1 1/2 hours

Serves 6 -8

Brown Sugar Baked Apples

Brown Sugar Baked Apples
Makes 8 servings
Ingredients:
•8 large Golden Delicious apples
•1/2 cup (packed) dark brown sugar
•1 teaspoon ground cinnamon
•1/2 teaspoon ground nutmeg
•6 tablespoons pure maple syrup
•4 tablespoons (1/2 stick) unsalted butter, cut into small pieces
•1 cup water
•Chilled whipping cream (optional)

Method:
Peel skin off top quarter of each apple. Using melon baller, scoop out core, leaving bottom intact. Stand apples in 13x9x2-inch baking pan. Mix sugar and spices in bowl. Reserve 2 tablespoons mixture. Fill apple cavities with remaining sugar mixture. Spoon 1/2 tablespoon maple syrup into each cavity. Scatter 3 tablespoons butter pieces over apples. (Can be made 4 hours ahead. Cover; chill.)
Preheat oven to 350°F. Pour 1/2 cup water into pan with apples. Bake apples 35 minutes. Add reserved 2 tablespoons sugar mixture, 2 tablespoons maple syrup, 1 tablespoon butter, and 1/2 cup water to pan. Bake until apples are tender when pierced with skewer, about 25 minutes longer. Transfer apples to 8 bowls. Place baking pan atop 2 burners; boil over medium-high heat until syrupy, about 2 minutes. Spoon sauce over apples. Serve with whipping cream, if desired.

TCM Analysis-Apples promote body fluids, lubricates the Lung, strengthens the Heart, and tonifies the Qi. Brown sugar is warm and lubricates the Lung, warms the body, and moistens dryness. Cinnamon and Nutmeg are both warm and help to move Qi and warm up the entire body. Overall, this recipe moistens the Lung and warms the body and moves Qi.

Lily and Rehmannia Egg Soup

Lily and Rehmannia Egg Soup (Sweet)

PER SERVING:
Dried lily bulb (bai he) – 40gm (sweet, sl. bitter, sl. cold, HT and LU YIN tonic)
Processed rehmannia (shu di) – 40gm (sweet, bitter, cold, nourishes YIN and blood, clears HT fire)
Egg – 2 (neutral, sweet, supplements blood and yin)
1. Rinse herbs. Boil eggs and remove shell.
2. Put all ingredients in a pot with adequate water (about 2.5 cups).
3. Cook with medium heat for one hour to one cup of water left.
4. Add a bit of honey to serve.
5. Drink soup and eat eggs.
THERAPEUTIC EFFECTS:
Enrich blood, nourish yin and moisturize dryness, clear away heart fire and tranquilize the mind. Especially good for irritability, insomnia, dreaminess, palpitation and absent-mindedness, missing period and of irregular quantity.
USAGE:
Not suitable for people with weak digestion and loose bowel.
