Winter Melon Soup

3 qt vegetable broth

3 c winter melon, peeled and chopped

2 carrots

2 celery stalks

1 onion

12 Chinese mushrooms, stems removed

6 oz tofu noodles or finely sliced baked tofu

1 tsp chives

1 tsp peanut oil

1 Tbsp tamari

Directions: cook together until tender, about 25 minutes, season with chives, tamari and peanut oil.

Serving Size: 4

Grilled Shrimp with a Chile Dressing

Grilled Shrimp with a Chile Dressing
Six Servings

-2 lbs large shrimp (16-20 per lb), shelled and deveined (or tempeh if vegetarian)
-6 cloves of garlic, peeled and smashed
-3 small, fresh red Thai chiles, ends trimmed, seeds removed, and cut into thin slices
-1/4 cup rice wine or sake
-1 1/2 tsp toasted sesame oil
-6 skewers for grilling

Chile Dressing:
*3-4 small, fresh red Thai chiles or cherry peppers
*1/2 cup clear rice vinegar
*1/4 cup virgin olive oil
*1 1/2 tsp toasted sesame oil
*1/2 tsp salt

1. Using a sharp knife, cut along the back of the shrimp to butterfly them. Place them in a bowl.

2. Add the garlic, chiles, rice wine or sake, and sesame oil to the shrimp. Toss lightly, cover with a plastic wrap and let the shrimp marinate for at least 3 hours at room temperature or overnight in the refrigerator. Before grilling, thread the shrimp loosely through the skewers so that they lie flat.

3. Meanwhile, prepare the Chile Dressing. Trim the ends and stems from the chiles, remove the seeds and coarsely chop by hand or in a food processor, pulsing the machine by turning it on and off. Place the chopped chiles in a clean jar and add the vinegar, olive oil, sesame oil and salt. Seal tightly and shake the dressing. Store at room temperature for several hours or overnight before using it.

4. Prepare a medium-hot fire for grilling and place the grill 3 inches above the coals. Arrange the shrimp on the grill and cook for about 5-7 minutes on each side or until cooked through, basting with the marinade.

5. Remove the cooked shrimp from the skewers, put them in a serving bowl and toss with the chile dressing or serve the dressing on the side for dipping.

Chinese Cinnamon Barley Soup

Chinese Cinnamon Barley Soup
six servings

*8 whole scallions, ends trimmed, cut into 1.5 inch sections and smashed lightly with the flat side of a knife
*8 cloves garlic, smashed lightly
*8 slices of ginger, about the size of a quarter, smashed lightly
*2 sticks of cinnamon
*1 tsp anise seeds
*1/2 cup soy sauce (or tamari sauce if wheat sensitive)
*1/2 cup rice wine or sake
*7 cups water
-2 lbs chuck or beef stew meat, cut into 1.5 inch cubes (or adzuki beans with tempeh if vegetarian)
-1 cup barley
-1 1/2 lbs spinach, trimmed, rinsed and drained
-3 TBS minced scallions, white part only

1. Place the starred ingredients in a large pot or casserole dish. Bring to a boil.

2. Add the beef and barley, and boil again. Reduce the heat to low, cover and simmer, skimming the surface to remove impurities and fat. Cook for 1 1/2 hours, until the beef is very tender. Scoop out the ginger slices, cinnamon sticks, and anise seeds, and discard.

3. Add the spinach to the beef, cover, and heat till boiling. Ladle the meat with broth and spinach into serving bowls, sprinkling the top with scallions. Serve immediately.

Walnut Sesame Clusters

Walnut Sesame Clusters

Ingredients:

  • 2 C walnuts
  • 2 Tbsp black sesame seeds
  • 1-2 Tbsp toasted sesame oil
  • honey

Instructions:

  1. Toast walnuts and black sesame seeds in a saute pan with the sesame oil until the seeds stick to the nuts. Stir and flip nuts occasionally to prevent burning.
  2. Remove from heat. Pour honey over nuts and seeds. Spoon clumps onto wax paper to cool.

Makes enough clusters to cover one dinner plate.

This recipe deeply tonifies the KD while moistening dryness in the LI. It is an easy-to-make treat for weak or elderly patients with constipation, since it tonifies both KD yin and yang and promotes bowel movements. Honey increases the moistening action of the recipe and makes it easier to digest.

Lamb with Sweet Potatoes

Lamb with Sweet Potatoes
6 servings
(Modified from A Spoonful of Ginger)

1 t oil
8 cloves garlic, sliced thinly
8 scallions, trimmed in 1 inch sections
8 slices fresh ginger
1 t hot chili paste
2 sticks cinnamon
1 t anise seed
5 c water
½ c low-sodium soy sauce
3 T rice wine
1 T sugar
3 lbs lamb stew meat, cut in 1½ inch cubes
4 sweet potatoes, peeled and cubed
½ lb fresh spinach, washed and drained

1. Heat a Dutch oven, add the oil, heat until hot.
2. Add seasonings. Stir-fry until fragrant, about 15 seconds.
3. Add broth, bring to a boil.
4. Add lamb and bring to a boil again.
5. Reduce heat to low, partially cover, simmer for 1 hour, until lamb is tender.
6. Skim the surface to remove any fat or gristle.
7. Add the sweet potatoes. Simmer, partially covered for 20 minutes or until tender.
8. Remove the ginger slices and cinnamon sticks. Discard.
9. Add the spinach. Cook until wilted, 30 seconds to 1 minute.
10. Remove from heat and serve.

Cinnamon: Hot, acrid, sweet; ST, KD. Strengthen ST, warm channels, stop pain, warm KD.
Anise seed: pungent, sweet, warm; ST, LV. Strengthen St, regulate qi, harmonize, warm MJ.
Soy sauce: salty, cold; SP, ST, KD. Harmonize MJ, clear heat.
Rice wine: warm, pungent, sweet. Promote circulation.
Sugar: sweet, neutral; LU, SP. Tonify qi, moisten dryness, harmonize MJ.
Lamb: sweet, warm; ST, SP, KD. Tonify KD yang, warm MJ, nourish blood.
Sweet potatoes: neutral, sweet; SP, ST, LV. Strengthen SP/ST, tonify qi/blood, clear heat, increase milk production, benefit eyes.
Spinach: sweet, cold; ST, LI. Clear heat, stop bleeding, nourish blood, moisten dryness.

Overall, this is a very warming recipe. The sweet potatoes, spinach, and soy sauce bring some cooling nature to balance it. The primary focus is on the KD for tonifying KD yang.

Beef Essence

Beef Essence
(2-4 servings)

1 pound lean beef, cut into thin strips
5 slices fresh ginger
¼ cup rice wine
5 ½ cups water

1. Place the beef and ginger in a pot with a tight-fitting lid. Add the wine and the water and bring it to a simmer. Do not let it boil.
2. Cook over low heat for 2 hours, adding water if necessary. Cover and continue cooking another 2 hours over low heat or until broth is flavorful.
3. Strain and discard the beef. Serve the soup flavored with desired seasonings to taste.

Analysis:
Beef is sweet and warm, it supplements SP and ST, nourishes qi and blood, and strengthens tendon and bone. Ginger is pungent and warm, disperses exterior cold, stops nausea and vomiting, detoxifies other substances, and reduces inflammation. Rice wine is warm, pungent and sweet; it promotes circulation.

Overall, this dish is warm and sweet, nourishing the SP, ST and blood. It provides a boost of energy, and is especially good for someone who is ill and has little appetite.

Note:  Tonifies Kidney Qi and Yang as well.

Cranberry and Goji Berry Chutney with Shu di Huang

Cranberry and Goji Berry Chutney with Shu di Huang

Ingredients

  • 9 grams Shu di Huang
  • 1 1/2 tablespoon fresh grated ginger
  • 12 ounces fresh cranberries
  • 1 teaspoon ground cinnamon
  • 2/3 cup goji berries
  • pinch cayenne pepper
  • 1/4 cup chopped dried apricots
  • pinch allspice
  • 1 medium shallot, chopped
  • 1/2 teaspoon salt
  • 1 cup apple cider
  • 1/3 cup chopped walnuts
  • 2/3 cup white or brown sugar or 1 cup brown rice syrup
  • one orange, Zest of
  • 2 tablespoons maple syrup

 

Directions

  1. Combine cranberries, goji berries, apricots and shallots in saucepan.
  2. Add cider and enough water to cover. Let sit for 20 – 30 minutes.
  3. Bring to a boil, then turn down to a simmer.
  4. Cook for 15 minutes, or until goji berries are soft and plump, and the cranberries pop.
  5. Stir in sugar, maple syrup, spices and salt.
  6. Cook 5 minutes longer.
  7. Adjust seasonings. Remove from heat.
  8. Stir in walnuts and orange zest.
  9. Cool to room temperature.
  10. Store in a covered container in the refrigerator for up to 2 weeks.

Salmon and Black Beans

Salmon and Black Beans

Salmon and black beans are the main ingredients in this recipe.  They both help nourish the kidneys. Along with the onions, they can help relieve toxicity.  This is a great recipe to help tonify kidney yin, yang and jing. It can also help add a little energy and warmth to your day, while also helping to protect the middle jiao.

  • 1/3 cup olive oil
  • 5 garlic cloves (2 pressed, 3 minced)
  • 1 tbsp dried thyme
  • Pepper
  • Salt
  • 14 ozs salmon fillets
  • 1 onion (chopped)
  • 3 celery ribs (chopped)
  • 1 roma tomato (chopped)
  • 30 ozs black beans
  • 1 tsp cumin
  • cilantro (small handful, chopped) Makes 2 whole salmon filets

Directions

  1. Whisk the olive oil, pressed garlic, thyme, and ½ teaspoon salt in a small baking dish.  Place the salmon, skin-side down, in the dish.  Brush the marinade over the top and sides of fish.  Let chill in fridge for at least 30 minutes.
  2. Meanwhile, heat 3 tablespoons olive oil in a large skillet over medium high heat. Add onion, celery, tomatoes, jalapenos, and minced garlic. Cook until vegetables are starting to soften, about 5 minutes.
  3. Stir in black beans and cumin. Reduce heat and cook for about 5 more minutes.  Season with salt and pepper to taste. Stir in cilantro and set aside.
  4. Arrange the salmon on the grill, skin side up and spray skin with nonstick spray.  Grill salmon for about 4-5 minutes.  Carefully flip over and grill for about 3 more minutes, or until opaque all the way through.
  5. Serve fish with black beans and dig in.

Pepper- Acrid, warm; stomach, heart; warms the middle jiao, expels cold, invigorates blood.

Salt- Salty, cold; kidney; clears heat, cools blood, eases bowel movement, nourishes kidney.

Salmon fillets- Sweet, neutral; spleen, kidney; strengthens spleen, nourishes yin, blood, and kidney jing.

Onions- Pungent; lung; clears heat relieves toxicity.

Celery- Sweet, bitter, cold; liver, stomach; clears heat, tonifies kidneys, strengthens spleen/stomach, lowers blood pressure, benefits blood, calms liver and shen, promotes diuresis, drains damp transforms phlegm.

Roma tomato- Sweet, sour, cold; spleen, stomach, urinary bladder, kidney; promotes fluids, clears heat, promotes urination, supplements kidney.

Black beans- Sweet, neutral; spleen, kidney; nourishes kidney, invigorates blood, promotes urination, resolves toxins.

Cumin- Pungent, bitter, slightly warm; spleen, stomach, large intestine; helps with abdominal pain and distention, protects against diarrhea and dysentery.

Cilantro- Acrid, warm; promotes digestion, regulates qi, promotes sweating, warms the middle, warms the lungs.

Baked Oatmeal with Mixed Berries and Plums

Baked Oatmeal with Mixed Berries and Plums - Makes 6 servings

Ingredients

  • 1 cup Blueberries-sour, sweet, warm, tonifies kidney
  • ½ cup Cranberries-sour, cooling, strengthens kidney
  • ½ cup Raspberries-slightly warm, sweet, sour, tonifies kidney
  • 3 medium plums, sliced-slightly warm, sweet, sour, regulates body fluids
  • 2 cups oats-sweet, warm, supplements vacuity, rejuvenates nervous and reproductive systems
  • 1 cup walnuts, toasted and chopped, divided into ½ cup servings-slightly warm, sweet, tonifies kidney
  • 1/3 cup brown sugar-warm, sweet, strengthens digestion, warms body
  • 1 tsp. baking powder
  • 1 ½ tsp. cinnamon-hot, pungent, sweet, warms body
  • ½ tsp. sea salt-cold, salty, slightly sweet, strengthens kidney
  • 2 cups almond milk-sweet, neutral, supplements spleen
  • 1 large egg-sweet, neutral, supplements qi
  • 1 ½ tbsp. unsalted butter, plus more for greasing the pan- sweet, neutral, supplements qi
  • 2 tsp. vanilla extract

Directions

1. Preheat oven to 375, grease an 8-inch baking dish. Layer sliced plums in the bottom of the dish.  Top with mixed berries.

2. In a medium bowl, combine oats, ½ cup walnuts, sugar, baking powder, cinnamon and salt. Mix well, and pour the dry ingredients over the fruit.

3. Combine almond milk, egg, butter and vanilla, and whisk well.

4. Pour the milk mixture over the oat mixture. Top with remaining ½ cup walnuts.

5. Bake for about 40 minutes, until the top is golden brown and the oat mixture appears solid. Remove the dish from the oven, and allow the oatmeal to cool for a few minutes. Serve warm.

Lamb and Bean Stew

LAMB AND BEAN STEW serves 4-6

  • 3 tbs coconut oil
  • 2 onions, chopped
  • 2 lbs Lamb chops or spareribs, chopped in large pieces (including bone)
  • Bone broth
  • 2 tsp curry powder
  • 3 cloves garlic, minced
  • 2 Thai chilies, minced
  • 4 cups beans (black beans, kidney beans, or a combination of both) cooked in bone broth
  • Juice of ½ lemon
  • Salt

1) Heat the oil, medium high, and sauté the onions until golden, 8-10 minutes.

2) Add the Lamb pieces with about a ¼ cup of broth, cover, and simmer for 20 minutes, adding more broth if needed.

3) Add the curry, garlic, and chilies, cover and simmer for 10 minutes.

4) Add the beans, adding more broth if necessary, until heated through, about 10 min.

5) Sprinkle with the lemon juice and season to taste with salt.

6) Serve over quinoa (with predominant Yang Deficiency) or white rice (with predominant Yin Deficiency)
