Winter Melon Soup

Winter Melon Soup

3 qt vegetable broth

3 c winter melon, peeled and chopped

2 carrots

2 celery stalks

1 onion

12 Chinese mushrooms, stems removed

6 oz tofu noodles or finely sliced baked tofu

1 tsp chives

1 tsp peanut oil

1 Tbsp tamari

Directions: cook together until tender, about 25 minutes, season with chives, tamari and peanut oil.

Serving Size: 4

TCM Evaluation:  winter melon is sweet, bland and cool, detoxifies and drains damp; carrots are sweet and neutral, diuretic and drains damp; celery stalks are sweet, bitter and cold, drains damp and transforms phlegm; onion clear heat, relieve toxicity, transform phlegm and damp; Chinese mushrooms are sweet and cool, rectifies qi and boost wei qi; tofu noodles are sweet and neutral, promotes urination and resolves toxicity

Baked Oatmeal with Mixed Berries and Plums

Baked Oatmeal with Mixed Berries and Plums - Makes 6 servings

Ingredients

  • 1 cup Blueberries-sour, sweet, warm, tonifies kidney
  • ½ cup Cranberries-sour, cooling, strengthens kidney
  • ½ cup Raspberries-slightly warm, sweet, sour, tonifies kidney
  • 3 medium plums, sliced-slightly warm, sweet, sour, regulates body fluids
  • 2 cups oats-sweet, warm, supplements vacuity, rejuvenates nervous and reproductive systems
  • 1 cup walnuts, toasted and chopped, divided into ½ cup servings-slightly warm, sweet, tonifies kidney
  • 1/3 cup brown sugar-warm, sweet, strengthens digestion, warms body
  • 1 tsp. baking powder
  • 1 ½ tsp. cinnamon-hot, pungent, sweet, warms body
  • ½ tsp. sea salt-cold, salty, slightly sweet, strengthens kidney
  • 2 cups almond milk-sweet, neutral, supplements spleen
  • 1 large egg-sweet, neutral, supplements qi
  • 1 ½ tbsp. unsalted butter, plus more for greasing the pan- sweet, neutral, supplements qi
  • 2 tsp. vanilla extract

Directions

1. Preheat oven to 375, grease an 8-inch baking dish. Layer sliced plums in the bottom of the dish.  Top with mixed berries.

2. In a medium bowl, combine oats, ½ cup walnuts, sugar, baking powder, cinnamon and salt. Mix well, and pour the dry ingredients over the fruit.

3. Combine almond milk, egg, butter and vanilla, and whisk well.

4. Pour the milk mixture over the oat mixture. Top with remaining ½ cup walnuts.

5. Bake for about 40 minutes, until the top is golden brown and the oat mixture appears solid. Remove the dish from the oven, and allow the oatmeal to cool for a few minutes. Serve warm.

Celery cooked with Tomato and Eggplant

Celery cooked with Tomato and Eggplant

Use 100g of celery pieces
100g shredded eggplant
100g tomato pieces

Put celery and eggplant into boiling water for a few minutes and then remove. Add tomato pieces, salt, olive oil, green onion and a little sugar. Combine all ingredients and it is ready to eat or serve over brown rice or with aduki beans for an additional damp draining effect!

Indications: edema (from Kidney yang xu)

Celery – sweet, bitter, cold. Liver, stomach. Clears heat resolves toxin; subdues liver yang and wind, drains damp and transform phlegm, calms shen
Tomato – sweet, sour, cold. Spleen, Stomach, UB, Kidney. Promotes fluids, clears heat, promotes urination, supplements Kidney
Eggplant – sweet, cold. spleen, stomach, LI. Clears heat relieves toxicity, moves blood breaks stasis, reduces swelling, stops pain, moves qi & opens chest
Olive oil – nourishes yin (body will retain dampness when there is yin xu)
Sugar – warm, sweet. Tonify Spleen
Green onion – pungent, warm. Lung, LI. Releases ext. WC, invigoates xue, drains damp.
salt – salty. Kidney. Consolidates Kidney. Eases bowel movement. Clears heat cools xue.

Overall this recipe tonifies Kidney as it disinhibits water and drains damp. It therefore treats the root and the branch at the same time.

Breakfast Quinoa

Breakfast Quinoa

Ingredients
1 cup quinoa
2 cups water
4 tablespoons dry milk (** you can omit this ingredient and just use 2 cups of milk to begin with, or just use water)
zest and juice of 1/2 orange
1 Granny Smith apple, cored and cubed
1/3 cup dried cranberries
pecans
Rinse quinoa in a fine strainer. Add to a pot with water and dry milk. Bring to a boil, reduce heat, cover and simmer for 15 minutes or until the grain is cooked through.
Combine quinoa with the rest of the ingredients.
You can serve this dish hot or cold. Add a bit of sugar if you like your breakfast on a sweeter side. Try to experiment with different dried fruit!

Quinoa — sweet, warming, tonifies qi, strengthens spleen,warms yang, relieves internal coldness
Milk — sweet, neutral, supplements qi, nourishes blood, moistens dryness
Apple — goes to heart, spleen, stomach and lung, clears heat, promotes body fluids, supplements lung, spleen, stomach, moistens lung and LI
Orange — cool, sweet and sour, lubricates lungs, resolves mucus, increase appetite, strengthens spleen, quenches thirst,promotes body fluids
Cranberry — sour cooling, promotes urination, relieves painful urination, strengthens kidneys and reproductive system
Pecans- sweet, slightly warm, tonifies qi, strengthens lung, stops cough, strengthens kidney, promotes bowel movement

Azuki Bean & Pork Soup (Chi Xiao Dao Pai Gu Tang)

CHI XIAO DAO PAI GU TANG (AZUKI BEAN PORK SOUP)

INGREDIENTS:
DONG GUA (Winter melon),  peeled and chopped, 60g

CHI XIAO DAO (Azuki Beans),  rinsed, 6g

CHEN PI (dried tangerine peel),  4 PCs

PORK (Belly or Shoulder), chopped,   120g

salt and a little sugar

HOW TO COOK:
1. SUBMERGE  PORK IN BOILING WATER 1-2 MINS; REMOVE PORK AND SET ASIDE

2. DISCARD WATER

3. BRING 2 LITRES WATER TO A BOIL; ADD THE INGREDIENTS AND SIMMER UNTIL BEANS ARE DONE, ABOUT 1-2 HOURS.

( YOU COULD ALSO USE RICE COOKER TO MAKE THIS SOUP)
