Cold Sour Cherry Soup

Cold Sour Cherry Soup

Serves 6

3 cups cold water
1 cup sugar
1 cinnamon stick
4 cups pitted sour cherries
1 tablespoon arrowroot
¼ cup heavy cream, chilled
¾ cup dry red wine, chilled

Combine the water, sugar and cinnamon stick. Bring to a boil and add the cherries. Partially cover and simmer over low heat for 35 to 40 minutes. Remove the cinnamon stick.

Mix the arrowroot and two tablespoons of cold water into a paste, then beat into the cherry soup. Stirring constantly, bring the soup almost to a boil. Reduce the heat and simmer about 2 minutes until clear and slightly thickened. Pour into a shallow bowl and refrigerate until chilled. Before serving stir in the cream and wine.

Directions For Hawthorn Schnapps:

  • Rinse the hawthorn berries and leave them to dry in the shadow – on paper towel.
  • Fill 2/3 of a clean glass jar with berries.
  • Cover well with clear, unflavoured vodka – 40% alcohol content (80 proof).
  • Close the jar with a tight-fitting lid.
  • Let the berries steep for 5-6 weeks – in a dark place at room temperature, 18-20°C (64-68°F).
  • Shake lightly and taste it from time to time.
  • Strain and filter your infusion into a clean glass bottle or jar with tight-fitting lid.
  • Store (age) it for a couple of months in a dark place at room temperature before serving.
