Amaranth-Almond Cereal

Amaranth-Almond Cereal


  • 1 C amaranth
  • 1 ½ C water
  • ½ cup almond milk
  • handful almonds, chopped
  • 1-2 Tbsp agave nectar


  1. Combine water and amaranth. Bring to a boil, then turn heat down and let simmer 20-25 minutes until the water is absorbed. Be careful to avoid burning at the end of cooking.
  2. In a bowl, combine amaranth, almond milk, chopped almonds, and agave nectar.

Makes 2 servings.

amaranth: bitter, sweet, cool; ST, ST, LU; dries damp, clears heat, benefits LU, tonifies qi
almonds: sweet, neutral; LU, LI, SP; ventilates LU, relieves cough & asthma, transforms phlegm
agave nectar: sweet, neutral; nourishes middle jiao

Overall, this recipe is cooling to clear heat. The main ingredients (amaranth and almonds) both go to the LU and dispel pathological fluids (amaranth dries damp and almonds transform phlegm). For these reasons, I would recommend this recipe to patients with hot phlegm in the LU.

Almond Horchata

Almond Horchata — Serves 8

2 quarts of Almond Milk
1 teaspoon of cinnamon
1 teaspoon of vanilla
1/2 cup rice syrup

Combine ingredients in a large pot and let it come to a boil. Once boiling, reduce heat and let it simmer for 5 minutes. Serve hot.

Almond milk – neutral, sweet – ventilates lungs, relieves cough and asthma, transforms phlegm
Cinnamon – hot, pungent, sweet – strengthens stomach, warms coldness, stops pain
Rice Syrup – moistens dryness, Nourishes lung yin and tonifies lung qi
