Asian Pear Tapioca Dessert

Asian Pear Tapioca Dessert (kids will like this)

Lung Yin Xu
Function: nourish the Lung yin, stop coughing blood, or dry cough
Ingredients:  2 asian pears, 1/2 cup tapioca, a little sugar and some water

Function of herbs
Chinese pear: sweet, cold; LU, LI, ST.  Clear heat, nourish fluids, decrease thirst, moisten lung, dissolve phlegm.
Tapioca: strengthen SP, harmonize MJ

How to cook:
1. soak tapioca for 15 minutes
2. Shred one pear.  Chop one pear.
3. In another pot, boil water.   Then, add sugar and tapioca.  Cook over medium flame until sugar melts and tapioca changes to white color.
4. Lower the flame and add pear.  Stir and serve.

Serves: 3-5 people

Nighty Night Tea:
A snack & an herbal tea to nourish HT xue & help insomnia

1 Asian pear, fresh sliced & cored
Pinch cinnamon (rou gui)

1 tbsp. Mulberry (dehydrated)
2 tbsp. Longan fruit/ long yan rou (dehydrated)
1/4 c. amaranth, toasted

Lightly bake the asian pear in a baking pan covered w/ tinfoil. Add a pinch of cinnamon & eat a few hours before bed.

Place 1/4 c. amaranth on a baking sheet & toast until slightly brown. Add mulberry, longan & amaranth to a pot. Pour boiling water over top (from the kettle) — enough to cover the ingredients. Steep for 5-10 min. Sip before bedtime.

Pear serves 1 person
Tea makes 2-3 cups

TCM analysis:
Asian pear: cold & sweet: generates fluids, calms HT, relieves restlessness, clears heat, detoxifies
Cinnamon (rou gui): warm, acrid, sweet: enters HT, warms & balances
Mulberry:  sl cold & sweet: nourishes blood, tonifies KD, enriches yin, calms the spirit, goes to HT, LV, KD
Longan:  goes to HT & SP, tonifies & augments HT & SP, nourishes blood & calms the spirit
Amaranth — sweet, bitter & warm: tonifies qi, nourishes blood, calms spirit

The pear snack relieves restlessness & generate fluids, while directing its action to the upper jiao w/ cinnamon.
The drink serves to supplement yin & blood & calm the spirit in order to aid HT blood deficiency-type insomnia.

Watermelon Champagne Sangria

Watermelon Champagne Sangria

Makes 6 servings.
INGREDIENTS:

2 cups chopped seedless watermelon
1 seedless orange, peeled and broken into sections¨
1 apple, wedged
1 Asian pear, wedged
1 cup seedless grapes, cut into halves
1 bottle dry champagne of choice
DIRECTIONS:
Toss the fruit together in a bowl or pitcher. Pour the champagne over and let sit for at least 2 hours or more.

TCM analysis:
Watermelon: Sweet, cold. ST, HT, UB. Clears heat toxin, quenches thirst, relieves irritability, promotes urination.
Orange: Sweet, sour, cool. LV, LU, ST, UB. Clears heat, soothes LV, nourishes fluids.
Apple: Sweet, sour, cool. SP, ST, HT, LU. Supplements LU, SP, ST, moistens LU and LI, clears heat and promotes body fluids.
Asian pear — cold & sweet: generates fluids, calms HT, relieves restlessness, clears heat, detoxifies
Grapes: Sweet, sour, neutral. LV, KD, UB. Tonifies qi and blood, nourishes yin and body fluids, strengthens bone and tendon, promotes urination.
Champagne: Pungent, sweet, warm. ST, LV, HT. Expels cold, invigorates blood, stops pain.
Overall: Clears heat from HT. The heat from the wine is offset by the cooling nature of the fruits. Should be used in small quantities.

How to cook:
1. sock tapioca 15 minetus
2. one pear shred , one pear chopped
3. in another pot, boil water then add sugar and #1 , medium flame cooks until sugar melt and tapioca change to white color
4. lower the flame and add #2
serve size: 3-5 people
