Pork and Black Beans

Pork ‘n black beans
Yields 6 servings

2 cans of black beans
1/3 up packed brown sugar
1 small onion, chopped
¼ cup catsup
4-6 slices of bacon

1. Add all the ingredients into a 1½ quart casserole, top with slices of bacon and bake for 1 ½ hours at 350 degrees.

TCM analysis: Overall tonifies KD yin.
black beans: sweet, sour, neutral. Strengthens SP, benefits diabetes, counteracts toxins, reduces dampness, benefits KD
brown sugar: sweet, warm. Strengthens digestion, lubricates LU, stops cough, warms up body.
onion: pungent, warm. Promotes sweating, resolves phlegm, diuretic.
Pork: slightly cold, sweet, moistens & nourishes organs, tonifies qi, strengthens digestion

Cool Those Kidneys:
A simple dish to enrich KD yin

2 strips of thick-cut bacon
1 bunch asparagus, trimmed & rinsed (chopped, if you desire)
1 tsp. black sesame seeds
1/4 onion, chopped
Salt to taste

Chop up bacon into small bits and place in a pan over medium heat. Once the bacon grease begins to coat the pan, toss in onion and cook until translucent. Then toss asparagus in pan. Sautee asparagus until tender (about 4-5 minutes). Remove from heat & sprinkle black sesame seeds over top. Add salt to taste & enjoy!

Servings: 3-4 people

TCM analysis:
Bacon & bacon grease — sl. cold & sweet: moistens & nourishes organs, tonifies qi & strengthens digestion; supplements xue & yin
Onion — warm & acrid, sl. sweet: moves qi, loosens phlegm
Asparagus — cool, sweet & bitter: clears heat, detoxifies, promotes blood circulation; supplements LU, supplements KD yin
Black sesame seeds — neutral & sweet: tonifies LV & KD, harmonizes blood, nourishes yin
Salt — cool & salty: strengthens KD in sm. amts

The overall focus of this recipe is to enrich KD yin w/ moistening, fatty substances. The onion prevents stagnation, while the bacon (& bacon grease), asparagus & black sesame seeds improve the state of KD yin. The salt is added for flavor & to strengthen the KD.
