Indian Beef and Berry Soup

Serves 4
2 tbsp vegetable oil
1 pound tender beef steak
2 onions, finely sliced
2tbsp butter
1quart good beef stock or bouillon
½ tsp salt
1 cup fresh huckleberries, blueberries or blackberries, lightly smashed
1 tbsp honey

Heat the oil in a heavy- bottomed saucepan until almost smoking. Add the steak and brown on both sides over medium-high heat. Remove the steak from the pan, set aside.

Lower the heat to low and add the sliced onions and butter to the pan. Stir well, scraping up the meat juices. Cook over low heat for 8 to 10 minutes until the onions are soft.

Add the beef stock or bouillon and salt and bring to a boil, stirring well. Stir the mashed berries and the honey and simmer for 20 minutes.

Meanwhile, cut the steak into thin, bite-sized slivers. Taste the soup and add more salt or honey if necessary. Add the steak to the pan. Simmer for 30 seconds, stirring all the time. Serve.

Beef – sweet, warm; SP, ST, KD; tonifies qi and xue, strengthens SP/ST, dispels dampness, relieves edema, strengthens bones and tendons; treats edema, abdominal distention and fullness, weak back & knees, deficient SP/ST.

Blue and black foods: Blueberries, blackberries, mulberry, black beans — The colors blue and black correspond to the Water element of the Kidneys. It is possible to strengthen the Water element by eating blue/black foods.

Onions – warm, acrid; promotes sweating, resolves phlegm, regulates qi, reduces toxins; treats common cold, acute or chronic sinus infection, upper respiratory infection, allergies, difficulty urinating, intestinal worms, certain types of boils and lesions.

Salt – cold, salty, sl. Sweet; harmonizes and promotes digestion, strengthens KD (in small amounts), fortifies bones, tendons and teeth, brightens eyes, detoxifies, used as a natural preservative; treats food poisoning, KD weakness from lack of sodium in diet, sore throat.
