Sweet Potato Pie

Sweet Potato Pie

1 Recipe of your favorite pie crust.
2 cups cooked, mashed Sweet potatoes (yams).
3 beaten eggs
½ to ¾ cup brown sugar, barley malt, syrup, or honey.
1 tsp. cinnamon.
½ tsp. cloves.
¼ tsp. nutmeg.
½ tsp. allspice.
1 scant tsp. salt.
1 ½ cups evaporated milk (or mixed nonfat dry milk, goat milk, soy milk, or cashew milk).
Whipped cream for topping (optional).

Prepare crust and put into a 9 to 10 inch pie plate.  In a large bowl, beat together all the other ingredients except whipped cream.  Beat thoroughly and pour into pie shell.  Bake in preheated 375 degree oven for nearly an hour.  Cool before serving.  Serves six to eight people.

Sweet potatoes: neutral, sweet; SP/ST/L.I.; Strengthens SP, Tonifies qi/blood.
Eggs: sweet, neutral; nourishes yin/blood, lubricates dryness.
Milk: sweet, neutral; strengthens weakness, Tonifies qi, blood, and yin, lubricates dryness.
Honey: Sweet, neutral; SP, ST. Harmonizes middle jiao.
Cinnamon: acrid, sweet, hot; HT/KD/LV/SP. Warms and Tonifies yang, disperses cold, moves blood.
Overall, this recipe tonifies the SP/ST, nourishes yin and blood, and benefits KD/LU.

Spiced Wine

8 cups Cabernet Sauvignon
½ cup sugar
8 sticks of cinnamon
4 slices of orange
1 tbsp. fresh squeezed lemon juice
12 whole cloves

Mix all ingredients in a saucepan. Cover and simmer for 1 hour.

This recipe should not be used in excess, but this would be a very blood invigorating, warming recipe to get stagnancy moving- particularly if the patient is also experiencing cold symptoms.
Wine goes to the heart, stomach and liver. It expels cold, invigorates blood and stops pain. The cloves and cinnamon would add to the warming and circulating properties of this holiday specialty.

Mid-East Pilaf

Mid-East Pilaf
3 c Hot cooked rice
1 tb Vegetable oil
1 md Onion; chopped
1 c Chopped dried apricots
1 tb Brown sugar
2/3 c Cashew bits or halves
1/3 c Raisins
1/4 ts Salt
1/4 ts Ground cinnamon
1/4 ts Cracked black pepper
1/8 ts Cardamom
1/8 ts Ground cloves
1/3 c Apple juice

1. Heat oil in large skillet over medium-high heat.
2. Sauté onion with brown sugar 3 to 5 minutes or until onion is golden brown.
3. Add cashews and raisins; sauté 2 to 3 minutes until nuts begin to brown and raisins plump.
4. Add rice, apricots, salt, cinnamon, pepper, cardamom and cloves.
5. Stir in apple juice. Heat thoroughly and serve.

Cardamom- acrid, aromatic, SP/ST/LV, digestive problems
Clove- acrid, warm, ST/KD, warms MJ, dispels cold
Apple Juice- sweet, sour, reduces heat, produces fluids for the body, moistens dryness, cool LU, cleansing and beneficial for LV/GB
Overall Pattern: The acrid ingredients help move the LV qi, and the sweet ingredients help nourish SP/ST.

Seasoned lamb

Seasoned Lamb

Serving Size 4

1/2 cup plain yogurt
1/4 cup water
2 tablespoons fresh lemon juice
1 tablespoon distilled white vinegar
1 tablespoon olive oil
1/2 cup chopped onion
2 cloves garlic, minced
1 tablespoon salt
1/2 teaspoon ground black pepper
1/8 teaspoon ground cloves
1 teaspoon cayenne pepper
5 pounds boneless lamb shoulder, cut into 1/4-inch-thick strips

Directions
Place the yogurt, water, lemon juice, vinegar, olive oil, onion, and garlic into a large mixing bowl. Whisk in the salt, black pepper, cumin, nutmeg, clove, mace, and cayenne pepper until evenly blended. Mix in the lamb strips to coat. Cover the bowl with plastic wrap, and marinate in the refrigerator 12 to 24 hours (the longer the better).
Heat a large skillet over high heat. Cook the lamb strips in a single layer in batches until the fat melts and the meat has browned and is no longer pink on the inside, about 5 minutes, turning occasionally.

This meal is design for a Kidney Yang Xu pattern. The bulk of the recipe is the lamb which is a big Kidney Yang tonifier.
