Curry Ice Cream

Curry Ice Cream

2 pitted dates, soaked for 2 hours

½ cup coconut meat

½ cup raisins

1 Tbsp agave nectar

1 ½ tsp curry powder

Directions: Drain dates, reserving about 3 Tbsp of the soaked water. Transfer the dates and the reserved soaked water to a blender with all the remaining ingredients. Process on high speed until smooth and creamy, stopping occasionally to scrape down the blender jar. Pour into an ice cream maker until forms  a sturdy, creamy texture or follow manufactures instructions.

Serving Size: 1 quart

TCM Pattern: SP/ST xu; Yin xu

TCM Evaluation:  Dates are sweet, strengthens SP and nourishes body; coconut meat is sweet, warm, nourishing and strengthens body; raisins are sweet, sour strengthens bones and tendons; agave nectar is sweet, neutral, nourishes and harmonizes MJ; curry powder is pungent, warm and disperses cold, rectifies qi.

 

Raw BlueBerry Blaster Pie

Raw BlueBerry Blaster Pie
2 C Raw Walnuts
1 C Unsweetened Shredded Dried Coconut
¼ t Salt
½ C Medjool Dates (pitted) + ¾ C Medjool Dates (pitted)
4 C Fresh Blueberries  (if you use frozen, thawed and well-drained)

1 T fresh lemon juice

Serves 8-12 (Depending on the slicer)

Crust
Blend Walnuts, Coconut and Salt in a food processor until coarsely ground. Add 1/2 c dates and process until the mixture resembles coarse crumbs and begins to stick together. Don’t over process/blend. (Any extra crust will store for about a month in the refrigerator or 3 months in the freezer).  Scoop Crust into a pie plate or tart pan. Use a light circular motion with your palm and finger to distribute th crumbs uniformly along the bottom and up the sides of the pan. There should be a ¾ inch lip of crumbs along the sides of the pan. After the crumbs are evenly distributed press the crust down on the bottom of the pan using your fingers and palm. Be sure to press especially firmly where the bottom of the pan joins the sides. Then press the crust against the pan’s sides, shaping it so that its edges are flush with the rim. Place in the freezer for 15 minutes.

Now place 1 -½ C of the blueberries along with the dates and lemon juice in a blender and process until smooth. Transfer to a mixing bowl, add the remaining blueberries, and mix well. Remove the crust from the freezer. Pour the blueberry filing into it and press down with a rubber spatula. Put in the freezer for at least 30 minutes. Cut and serve.

Overall Intended Action(s)
Strengthen and regulate the Spleen and Stomach Qi to improve digestion as well as providing the needed food processing to properly form stools, move stagnation and aid in constipation. Adding the Medjool Dates, Blueberries and Lemon Juice provides fluids and lubrication to assist the stool movement.

Easy Coconut Water Kefir – How to make instructions and video (tropical probiotic)

Another of my favorite probiotic treats is homemade, dairy-free Coconut Water Kefir (a naturally fermented beverage) made from young coconuts. Beneficial probiotics feed on the sugar in the water and leave a slightly fizzy, sour, champagne-like elixir that you can add to your healing arsenal. Oftentimes, I make a batch of Coconut Kefir Yogurt at the same time since I’m opening coconuts and have all the ingredients that I need for both.

Coconut Kefir Elixir and Coconut Kefir Yogurt are basically food tools that help maintain a healthy inner ecosystem which keeps immune systems and digestion strong. There are many important benefits of coconut kefir including relief from disease as well as sugar cravings. Shiny hair, clear skin, bright eyes and a flat abdomen are a few more bennies.

While you can make Coconut Water Kefir with kefir grains (and I have many times) or starter packs, I find that you can get a more consistent result, with much less work and expense, by using a simple quality probiotic capsule or two.

According to Donna Gates, author of The Body Ecology, a half cup of the Coconut Water Kefir with meals greatly helps digestion. You can add ginger, stevia, lemon, and/or lime if desired. A half cup at bedtime will help establish a healthy inner ecosystem. Studies from Europe show that when you are lying still during sleep, the microflora reproduce faster. In the morning, combine a half cup of the Coconut Water Kefir with unsweetened cranberry or black currant juice, as a great wake-up tonic.

If you are lactose intolerant or interested in eliminating dairy from your diet, keep your inner ecosystem thriving without the dairy yogurt and enjoy Coconut Water Kefir and Coconut Kefir Yogurt instead.
