Tomato-Lentil Soup with Spinach, Corn, and Brown Rice Recipe

2 tablespoons unsalted butter
2 tablespoons olive oil
1½ cups chopped yellow onion
¼ cup minced garlic
1 pound carrots, cut into ¼-inch pieces
¼ pound celery, cut into ¼-inch pieces
8 to 10 cups chicken stock
Two 14.5-ounce cans diced tomatoes, with juice
1 pound green lentils
Two 14.5-ounce cans tomato sauce
¾ cup uncooked long-grain brown rice
1 tablespoon chopped fresh thyme
1 tablespoon salt
1 teaspoon ground cumin
Freshly ground black pepper
10 ounces baby spinach
1½ cups frozen corn kernels

Heat the butter and oil in a heavy large pot over medium-high heat. Add the onion and garlic, reduce the heat to medium-low, and cook, stirring occasionally, until the onion is very tender, 8 to 10 minutes. Add the carrots and celery and continue to cook, stirring occasionally, for an additional 10 minutes. Add 8 cups of the chicken stock, diced tomatoes, and lentils. Cover and simmer for 1 hour. Raise the heat to high and bring to a boil. Add the tomato sauce, rice, thyme, salt, cumin, and pepper to taste. Reduce the heat back to medium-low and simmer, covered, for 30 minutes. Stir in the spinach and corn, and cook uncovered for 30 minutes more, adding more chicken stock if necessary.

Celery-sweet, clears heat resolves toxin, subdues liver yang and wind, drains damp transforms phlegm, calms the shen
Tomato-sweet. Sour, cold, promotes fluids, clears heat, promotes urination, supplements kidney.
Lentils- sweet, neutral, strengthens spleen, harmonizes middle jiao
Brown Rice- sweet, slightly warm, supplements qi, soothes stomach, drains damp
Salt-salty, cold, clears heat cools blood, eases bowel movements, nourishes kidney
Black Pepper- pungent, warm, warms the middle jiao, descends stomach qi, expels damp and cold
Spinach-sweet, cold, clears heat, stops bleeding, nourishes blood, stabilizes yin, moistens dryness.
Corn- sweet, neutral, strengthens spleen, soothes stomach, promotes urination

Squash and Potatoes

Locro — Sp qi vacuity

1 pound acorn or butternut squash cut into 2 inch squares —warm, sweet, tonifies sp, st, reduces inflammation.
2 potatoes cubed. Nuetral, sweet, tonifies sp, stomach qi.
½ cup peas Sweet, neutral. Sp. Harmonizes middle jiao and promotes urination.
½ cup corn kernals —Neutral, sweet, diuretic, nourishes heart, improves appetite, regulates digestion, improves kidneys.
1 onion Pungent, neutral, LU, ST. Clears heat, relieves toxicity, transforms phlegm and damp.
1 teaspoon Cumin- Warm, helps move qi
¼ cup Cilantro Cool, acrid, promotes sweat, strengthens digestion, promotes qi flow.
2 tsp. garlic warm, moves qi
Salt and pepper
1 tablespoon olive oil

Boil squash and potatoes in water so that there is 1 inch of water over veggies. Cook until they are very soft and mushy, approximately 25 minutes. In a separate pan, heat oil then add garlic and onion and cook until tender, 5-10 minutes. Add corn and peas, cumin, salt and pepper. Transfer onion mixture to squash. Add cilantro and queso fresco and serve. Serves 4.

This is a nice recipe for spleen qi vacuity. This is really a nuetral and balanced recipe and can be eaten by almost anyone with any pattern. Serve with rice.

Corn, Avocado and Black Bean Salad

Corn, Avocado and Black Bean Salad
Yield: 4 2/3 cups (Serving size: 2/3 cup)

2 medium-size ripe avocados, cubed
1 (15.5-oz.) can black beans, rinsed and drained
1 (15 1/4-oz.) can whole kernel corn, rinsed and drained
1/3 cup chopped red onion
3 tablespoons fresh lime juice
1/2 teaspoon salt
1/4 teaspoon ground red pepper
Gently stir together all ingredients in a large bowl.

This recipe is design for someone with Kidney Yin Xu, and Blood Xu.
