Honey Glazed Peach Tart

Crust ( you can use pre-made pie dough from the grocery store)

* 1 1/2 cups all purpose flour (clears heat)
* 3 tablespoons powdered sugar (tonifies Mother of LU)
* 1/4 teaspoon salt
* 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes (moistens dryness)
* 3 1/2 tablespoons (about) ice water

Filling

* 1/4 cup sugar
* 3 tablespoons all purpose flour (clears heat)
* 2 teaspoons grated lemon peel (regulates qi)
* 6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups) (lubricates lungs, astringes LU Qi, clears heat)
* 2 tablespoons honey (moistens lungs)
* 2 tablespoons chilled unsalted butter, cut into small pieces (Lubricates dryness)
* 2 tablespoons sliced almonds (ventilates lungs, relieves cough)
* 2 tablespoons peach preserves, melted (same as peaches)

For crust:
Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.

Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.

Preheat oven to 400° F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)

For filling:
Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead. Store tart at room temperature.)

SWEET POTATO PIE

Ingredients:

4-6 sweet potatoes, cooked
¼ tsp cardamom
¼ tsp cinnamon
Dash of nutmeg
¼ cup raisins
2 Tablespoons sesame butter
½ teaspoon sea salt
1 pie crust (Whole Foods gluten free pie crust)

Yields 1 pie

Instructions:
Preheat over to 350 degrees. Peel sweet potatoes. Boil enough water to cover potatoes and cook until tender. Drain. Mash potatoes and mix all ingredients together. Fill pie crust with potato mixture. Bake 35-40 minutes.

Cardamom  pungent, warm; Sp, Kd; Warms the Kd, retains the essence and secures the urine, warms the Sp, stops diarrhea and controls salivation.
Cinnamon  pungent, sweet, warm; Sp, St, UB; Invigorates yang, dispels cold, promotes blood circulation, warms the mingmen fire.
Nutmeg  pungent, warm; Sp, St, LI; Warm the Sp and St and promote circulation of qi, astringe the intestines and stop diarrhea.
Raisins  warm, sweet and sour; Tonifies qi, nourishes blood, strengthens sinews and bones, harmonizes St, promotes diuresis, relieves irritability.
Sesame butter  slightly warm, sweet; Nourishes Lv and Kd, lubricates intestines, blackens gray hair, tonifies qi, benefits skin.
Sea salt  salty, cold; Kd; Clears heat cools blood, eases bowel movement, nourishes kidney.

TCM analysis:
This recipe is warm overall. The spices tonify yang, warm the Kd and Sp, and stop diarrhea. The remaining ingredients help tonify qi, yin and blood. In addition, there are several ingredients that facilitate bowel movements by moistening the intestines and generating fluids.
