Honey Glazed Peach Tart

Honey Glazed Peach Tart

Crust ( you can use pre-made pie dough from the grocery store)

* 1 1/2 cups all purpose flour (clears heat)
* 3 tablespoons powdered sugar (tonifies Mother of LU)
* 1/4 teaspoon salt
* 1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes (moistens dryness)
* 3 1/2 tablespoons (about) ice water

Filling

* 1/4 cup sugar
* 3 tablespoons all purpose flour (clears heat)
* 2 teaspoons grated lemon peel (regulates qi)
* 6 ripe medium peaches, peeled, halved, pitted, cut into 1/2-inch-thick slices (about 4 cups) (lubricates lungs, astringes LU Qi, clears heat)
* 2 tablespoons honey (moistens lungs)
* 2 tablespoons chilled unsalted butter, cut into small pieces (Lubricates dryness)
* 2 tablespoons sliced almonds (ventilates lungs, relieves cough)
* 2 tablespoons peach preserves, melted (same as peaches)

For crust:
Blend flour, sugar, and salt in processor. Using on/off turns, cut in butter until pea-size pieces form. With machine running, add enough ice water by tablespoonfuls to form moist clumps. Gather dough into ball; flatten into disk. Wrap in plastic; refrigerate 1 hour.

Roll out dough on lightly floured surface to 12-inch round. Transfer to 9-inch-diameter tart pan with removable bottom. Trim overhang to 1 inch. Fold overhang in and press to form double-thick sides. Press inside edge of crust to push it 1/8 to 1/4 inch above top edge of pan. Pierce bottom of crust with fork. Refrigerate 1 hour.

Preheat oven to 400° F. Bake tart crust until golden, piercing with fork if bubbles form, about 25 minutes. (Can be made 1 day ahead. Cool; wrap in plastic and store at room temperature.)

For filling:
Mix sugar, flour, and lemon peel in large bowl to blend. Add peaches and toss to coat. Pour into baked crust. Drizzle honey over peach mixture; dot with butter and sprinkle with almonds. Bake until peaches are tender and almonds are toasted, about 35 minutes. Brush fruit and almonds with peach preserves. Cool 15 minutes before serving. (Can be made 6 hours ahead. Store tart at room temperature.)

Mulberry Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup fat free sour cream
1/4 cup skim milk
2 tablespoons applesauce
1 egg
1/2 teaspoon almond extract
1/2 cup mulberries

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

Ingredients: (makes 1 loaf)

2 ripe bananas, mashed
2 eggs
1 ¾ C Flour
1 ½ C Sugar
1 C Chopped Walnuts
½ C Vegetable Oil
¼ C + 1 Tbs buttermilk
1 Tsp Vanilla
½ Tsp salt
1 Tsp Baking Soda

Grease and Flour a 9×5 inch pan
Combine all ingredients and mix
Bake at 325° for 1 hour and 20 minutes
Do not double recipe

Analysis:

Banana: Cold and sweet, Clears heat, lubricates lungs and intestines, lowers blood pressure, helps alleviate alcohol intoxication.

Eggs: Cool and sweet, Nourishes yin, tonifies blood, lubricates dryness and stablizes hyperactive fetus.

Whole Wheat Flour: Slightly cool and sweet, clears heat, quenches thirst, relieves restlessness, promotes diuresis, calms spirit and stops sweating

Sugar: cold and sweet

Walnuts (Hu Tao Ren): Slightly warm and sweet, tonifies the kidney, strengthens back, astringes lung, relieves asthma, lubricates intestines, aids erratic or rebellious qi, and reduces cholesterol.
Oil:

Buttermilk: Neutral and sweet, strengthens weakness, nourishes qi and blood, lubricates dryness

Salt: Cold, salty, slightly sweet, Harmonizes and promotes digestion, strengthens kidney, fortifies bones, tendons and teeth, brightens eyes, detoxifies and acts as a natural preservative.

Overall: This recipe is sweet and moist, lubricating, good for cooling and clearing heat in Lung, calms shen/spirit and good for dry or hot type constipation

Steamed Corn Bread

Main Action: Liver Yang Rising

Serves 6 people

INGREDIENTS:
1 C grated apple — Cool, sweet and slightly sour. Strengthens HT, tonifies qi, quenches thirst, resolves mucus and lubricates LU
2 C pineapple-coconut juice — Pineapple = warm, sweet and sour. Aids digestion, stops diarrhea, dispels summer heat. Coconut = warm and sweet. Strengthens the body, reduces swelling, stops bleeding, kills worms and activates heart function
1 medium banana —Cold and sweet. Clears heat, lubricates lungs, lubricates intestines, lowers blood pressure, helps alleviate alcohol intoxication.
1/3 C whole-wheat flour — Slightly cool and sweet, clears heat, quenches thirst, relieves restlessness, promotes diuresis, calms spirit and stops sweating.
1 C cornmeal — neutral and sweet. Tonifies qi, strengthens the ST and SP, benefits the HT, is a diuretic and stimulates the flow of bile.
½ C. oatmeal — warm and sweet, strengthens spleen, tonifies and regulates qi, harmonizes ST
1/8 C goji berries — sweet, sour, neutral, nourishes blood and yin, strengthens the LU, benefits LV and KD, improves vision.

Preparation and cooking:
Blend the liquid with the banana. Add the rest of the ingredients and mix well. Pour into a pie plate and steam 30 minutes over medium flame. The bread is done when the toothpick inserted in the center comes out clean.
