Ginseng & Walnut Tea

3 grams ginseng, 3 whole walnuts (without shells)
Cook ginseng and walnuts in 2 1/2 cups of water over low flame for about one hour. Drink and eat on an empty stomach in the morning or 1 hour before bedtime
Serves 1-2

Chicken soup for lung qi xu

INGREDIENTS
1 Black Silkie Chicken- LV KD/ sweet neutral- nourish LV KD
2 Silver Ear Fungus, LU ST —neutral sweet
60 GM Astragalus,
60 GM American Ginseng,
30 GM Solomon seal,
.5 LB Dry Scallops
1 cup Lily Flower
1 cup Black mushroom
10 slice Fresh Ginger
To taste Shaoxing wine or other high quality liquor

DIRECTIONS: Soak all herbs overnight in water except for the ginger and gingko nut. Shell the gingko and remove the skin. Add all ingredients to the ginseng cooker and fill the water to the top. Place both lids onto the ginseng cooker and place it in a larger pot and fill the outer pot with water until it reaches the handles. Cook on medium heat for 2 hours. 20 minutes before shutting off the stove add the apricot seeds.

Indications: This soup nourishes the lung and Qi. It boosts Lung Qi and yin, relieves asthma, moistens lungs, and alleviates chronic fatigue.

American Ginseng and Abalone Soup

American Ginseng and Abalone Soup
PER SERVING:
Lean pork-150gm (Cooling, sweet, fatty, supplements blood and YIN)
Dried Abalone-one (120 to 150gm) (cold, salty, tonifies YIN)
American ginseng-20gm (sweet, bitter, cooling, nourishes LU YIN and clears fire from LU Yin Xu)
Dried lily bulb-20gm (sweet, bitter, cold, moistens the LU and clears heat)
1. Soak abalone overnight until soft, rinse well with warm water and cut into thin slices. If fresh abalone is used, only cut into slices after it is cooked.
2. Wash pork and cut into big pieces. Rinse herbs.
3. Put all ingredients in a pot with adequate water (about 6 to 8 cups) and simmer for 3 hours until abalone is tender and soft.
4. Add salt to serve. Eat abalone with soup.
THERAPEUTIC EFFECTS:
Nourish lungs and tonify yin, quench thirst and promote vital fluids, clear phlegm, relieve insomnia. Especially good for abnormal thirst and hot, weak lungs, phlegm, or restless sleep.

Ginseng, antler and sea cucumber soup

Ginseng, antler and sea cucumber soup

Ingredients
Ginseng (6g)
deer antler (1g)
dried sea cucumber (250g)

Soak the sea cucumber overnight, clean and cut into small cubes; slice the ginseng, and grind the deer antler. Bring to the boil 750ml water in a pot, add in the sea cucumber and cook for 15 minutes; discard floating foam and add in salt, millet wine and ginseng slices; cook for a further 30 minutes; add in deer antler powder and cook for 5 more minutes, add pepper and sesame oil to taste, and thicken with cornstarch paste. Sprinkle green onion on top and serve hot.

Benefits
Ginseng enriches the primordial energy of the body; deer antler warms the kidney; sea cucumber replenishes essence and promotes storage of marrow.
