Lamb Kofta Kebabs

12 oz ground lamb
1 purple onion, minced in food processor
2 cloves garlic, minced in food processor
1/4 c fresh parsley, chopped fine
1/2 tsp each ground fenugreek, cumin, black pepper
1/4 tsp ground cloves
pinch of salt
8 wooden skewers, soaked in water

mix ingredients well in a large bowl, divide into 8 portions. mold the mixture around the skewer evenly to form a log. grill about 3 minutes on each side. conversely, form into balls and bake at 400 on a foil lined sheet pan, about 15 minutes. serve with a squeeze of lemon and a side of rice and cucumber salad.

lamb is hot and tonifies KD yang. onions are warm and pungent, transform phlegm, expel cold, stop dysentery. garlic is hot and pungent, warms the ST/LI. parsley is warm, pungent, bitter, salty; improves digestion, promotes urination. fenugreek is bitter, warms the KD/LV, disperses damp and cold, stops abdominal pain; cumin is acrid and warm and promotes digestion. black pepper is pungent and hot, warms the ST/LI, expels cold and phlegm; cloves are pungent and warm, tonify KD/SP yang.

this is an excellent recipe for someone recovering from a cold illness in which the yang has been damaged; it will treat cold diarrhea and abdominal pain.
