Rice Pudding with Fresh Berries

Rice Pudding with Fresh Berries

1/4 cup long grain rice (washed and drained)
4-5 cups milk
2-3 cardamom seeds (crushed)
2 tbsp almonds (blanched slivered)
A pinch of saffron threads, soaked in a little hot milk
2-3 tbsp sugar or as desired
2 cups fresh berries (especially raspberries & blackberries)

  1. Put the rice, milk and cardamom in a pan, bring to boil and simmer gently until the rice is soft and the grains are starting to break up.
  2. Add almonds and saffron and simmer for 3-4 minutes.
  3. Add the sugar and stir until completely dissolved.
  4. Remove from heat and serve either warm or chilled.
  5. Top with the fresh berries.

This dish is nourishing to the body as a whole.
Milk and almonds are nourishing to the KD jing.
Rice nourishes the SP, and tonifies the qi.
Cardamom provides a spark of yang, and makes the dish easier to digest.
Saffron moves the blood and removes toxins.
Blackberries nourish KD yin, while raspberries nourish the blood. Raspberries also remove toxins and regulate the menstrual cycle.

I would recommend this dish is cases where the jing and yin of the KD and the blood have been depleted. For example, to help replenish reserves in the post-partum period or following a trauma or long-illness.

Mulberry Muffins

Mulberry Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
1/2 cup white sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1 pinch salt
1/2 cup fat free sour cream
1/4 cup skim milk
2 tablespoons applesauce
1 egg
1/2 teaspoon almond extract
1/2 cup mulberries

DIRECTIONS
Preheat oven to 400 degrees F (200 degrees C).Grease 6 jumbo muffin cups or line with paper muffin liners.
Combine flour, sugar, baking powder, soda and salt. In a medium bowl, mix together sour cream, milk, applesauce, egg and almond extract. Stir in flour mixture until batter is smooth. Fold in mulberries. Spoon batter into prepared muffin cups.
Bake in preheated oven for 25 to 30 minutes, until a toothpick inserted into center of a muffin comes out clean.

Tropical Smoothie

Servings: 1 large or 2 small

Prelude: Enjoy the tastes of the tropics with a thick, rich and healthy smoothie. It’s packed with fruits

so make sure to pick seasonal varieties – they’re higher in vital nutrients and they taste so much better.

However, if it’s the dead of winter, frozen fruits will get the job done too.

Ingredients:

½ cup pineapple (chilled or frozen) – clears heat and promotes fluids

½ cup mango (chilled or frozen) –

½ cup watermelon (chilled or frozen) – relieves irritability and dry mouth

1 cup low-fat cottage cheese

1 cup low-fat milk

Instructions: Combine all ingredients in a countertop blender. Blend on high until mixture is a smooth consistency.

Contraindications:  Spleen Qi or Yang Vacuity leading to Damp

Peach-Berry Rice Pudding

Peach-Berry Rice Pudding

Ingredients:

  • 1 C rice
  • 3 C milk
  • dash of salt
  • 1 medium peach
  • ½ pint berries (mix of raspberries, mulberries, cherries, and goji berries)
  • honey

Instructions:

  1. Place rice, milk, and salt in the top of a double boiler and cook over boiling water about 40 minutes, or until rice is soft and all milk absorbed. Watch milk carefully and stir occasionally to avoid burning.
  2. Add sliced pear and berries for last 10-15 minutes to warm and soften them.
  3. Spoon into bowls and drizzle honey on top.

Makes 4 servings.

Overall, this recipe is sweet and neutral to nourish blood, yin, and fluids in general. Its action is primarily directed to the LV and KD, where it supplements blood and yin to promote their smooth function and ability to house yang. The recipe would be good for patients with LV yang rising due to LV blood and yin deficiency. It also moistens the LU. The sweet nature of this recipe is offset with the addition of ingredients to strengthen and nourish the SP and ST (rice, milk, honey). However, caution should be used with damp conditions.

Cream of Wheat with Apples and Mulberries

Cream of Wheat with Apples and Mulberries

Serves 2

1 apple chopped
¼ cup mulberries
2 cups water
2 cups milk (the more fat in the milk, the creamier it will be)
1/2 teaspoon salt
honey (to taste)
1 cup cream of wheat (also known as farina)
2 tablespoons sliced almonds, toasted (good to sprinkle on top) (optional)

In a saucepan, combine 2 cups water with milk and salt; bring to a boil.

Gradually whisk in cream of wheat, and continue to whisk constantly until the mixture thickens (this will take about 4 minutes).

Stir honey, mulberries and chopped apple into the cereal and mix to combine.

Divide into serving bowls and top with sliced banana and toasted almonds if desired.
