Morning Sickness Mush: A recipe to help ease nausea in expecting Mommies

This recipe is to be prepared the evening before and placed in a crockpot to cook overnight

1/4 c. green lentils
1/4 c. brown rice
1/2 c. millet
1 slice of ginger (sheng jiang)
A slice of organic orange peel (sm. amount)
Honey to taste

A handful of fresh, organic strawberries

Place lentils, brown rice, millet, orange peel & ginger in a crockpot and cover with 4 cups water. Cook in the crockpot on low overnight.

In the morning add fresh strawberries to your mush & sweeten to taste w/ honey. Enjoy warm.

TCM analysis:
Lentils: neutral & sweet: supplement qi & blood; harmonize digestion, strengthen ST & descends rebellious qi
Brown rice: neutral-warm & sweet: supplements qi, supplements center burner; quenches thirst, relieves irritability
Millet: cool-neutral-warm, sweet: supplements qi & cools heat; stops vomiting, clears heat, soothes morning sickness
Ginger: warm, acrid & sl. sweet: warms middle burner, benefits ST
Orange peel: warm, bitter & acrid: moves qi
Strawberries: cool, sweet & sour: forms body fluids & blood, strengthens SP
Honey: neutral & sweet: supplements qi & blood; nourishes yin, tonifies weakness, strengthens SP

The overall goal of this recipe is to strengthen the middle burner & descend ST qi. There is more millet to cool & supplement the MJ and stop vomiting. The ginger and orange peel help regulate the qi (and are present in very small amounts). The orange peel is bitter to direct ST qi downward. The strawberries then nourish qi & blood. The honey is added for its tonifying properties & for taste!

Dave’s Mad Mixup- Red Rice Pilaf

Dave’s Mad Mixup-

Red Rice Pilaf– Serves 4-6
Use equal amounts of red rice (3/4 cup) and millet. Place in rice cooker with same volume of water. Toss in lotus seeds (2oz)-lily bulb (2oz) and poria (1oz). Add pinch of fennel and sesame oil if desired.

Stirfry.
Crush 1 oz of whole cumin and 1 oz of whole coriander. Pre heat wok and add cooking oil and sesame oil to taste. Toss in cumin and coriander and mix until their aroma comes out. Toss in firm tofu (8oz) and brown it- then toss in sliced carrots (6oz), green beans (6oz) and shitake (6oz) . Stir so that the seasoning covers the food.
Pour in 6 oz of vegetable stock and cover wok so food is flash steamed for 1-2 minutes.

Serve over the pilaf and garnish with sea salt.
Place your hands either side of your plate and ask please bless my food- wait a few moments and you should feel your hands warm.  Be thankful that you got to eat. About a billion people don’t get the food they need.

Overal I tried to stay bland with a little cooling tonify yin effect. But with easy digestion to promote MJ harmony. I had the idea that the recipe could move fluids in and out to create qi flow cooling and detoxifying at the same time.

Donkey Hide Gelatin and Glutinous Rice Congee
(4-6 servings)

30 g e jiao, crushed
50g glutinous rice
50g millet
50g purple rice
50g brown sugar

1. Put the glutinous rice, millet and purple rice in 6-8 cups of water (depending on preferred consistency). Bring to a boil and simmer for 40 minutes.
2. Add the brown sugar and the gelatin. Bring back to a boil, mix thoroughly, and serve.

Analysis:
E Jiao is sweet and neutral, it tonifies and nourishes blood, stops bleeding, and nourishes yin. Glutinous rice is sweet, neutral and slightly binding, it supplements qi, and warms and strengthens MJ. Purple rice is sweet and neutral, it supplements qi and harmonizes the MJ. Millet is sweet, slightly salty and cool, harmonizes MJ, drains damp heat, moistens dryness, and supplements KD. Brown sugar is sweet and warm, supplements MJ, expels cold, and invigorates blood.
Overall, the congee is sweet, acrid, neutral and warm. It goes to the SP and ST, nourishes blood, harmonizes the Stomach, enhances the immune system, and strengthens the body’s resistance to disease.

Creamy Millet Cereal

CREAMY MILLET CEREAL

½ c. millet, soaked 6-24 hours and drained
2-2 &1/2 c. water
pinch of salt (optional)

Bring everything to a boil. Lower the heat to medium. Cook, uncovered, for 25-30 minutes, stirring often, until done.

Options:
Add Longan, dates, walnuts, black sesame seeds, raspberries, goji berries, cinnamon, agave nectar, etc.

For extra creamy millet that only takes 5-10 minutes to cook:
Puree the drained millet and water in the blender before cooking.

Ingredient analysis:
Millet – Sweet, slightly salty, cool; Sp, St, Kd; Harmonizes MJ, Drains damp heat, moistens dryness, and supplements kidneys.

TCM analysis:
The actions and properties of millet mainly focus on Stomach yin deficiency. However, millet can also be used for dysentery and Lin syndrome. In addition, by adding other ingredients (dates, walnuts, goji berries, etc.), the recipe can be further enhanced for other signs and symptoms (i.e. blood xu, yang xu, etc.)

Mushroom Millet Casserole for cooling

Ingredients

4. cups cooked millet
Sauce: 1/2 cup whole wheat flour
½ onion finely chopped
1/4 lb of mushrooms
1 teaspoon oil (optional)
I 1/2 – 2 cups of water
2-3 tablespoons soy sauce
Parsley

Directions
Preheat oven to 350 F
Place millet in an oiled casserole dish
Sautee onions/mushrooms until soft
Add flour and coat vegetables well
Add water. Stirring constantly to keep from clumping
Bring almost to a boil
Reduce heat and simmer for 5-7 minutes
Add soy sauce, cover and simmer for 10 minutes
Poke holes in the millet so that the sauce can be absorbed
Pour sauce over the millet and bake for 20 minutes
Serve hot or cold

Millet: Qualities:”Queen of the Grains” sweet, slightly salty, cool SP/ST/KD
Cooling and strengthens Kidneys. Builds fluids.
Good for fighting against bacterial growth, Millet is one of the best grains for anti-fungal purposes. Can be used for diarrhea.
Cautions: Not recommended for cases of weak digestion

Mushroom regular: cooling food that reduces heat signs. (Sweet cool SP/ST)

Millet Patties with Mushroom Gravy

Ingredients
• 1 cups millet (washed)
• 1 cup garbanzo beans (1 cup corn, squash- be creative)
• 4 cups water
• 1 medium onion- chopped

Directions
• Put everything into a pot
• Bring to a boil without a cover
• Add salt, turn down to simmer and cover for 20 minutes
• Stir, and cool- put in fridge till cold (1 hour- over night)

To make patties take the cold millet/beans and combine with 2 Tablespoons flour (rice or starch) —makes 8 patties

• Combine into a texture that is neither too dry nor too wet, and mold the patties into round and flat “burger†shapes until it holds together
• Dust each side with a bit of flour
• Pour virgin sesame oil into a frying pan (enough to cover the bottom) and fry both sides of the patties until golden brown

Mushroom Gravy Ingredients (makes 8 oz)
• 1 cup scallions diced
• 1 cup mushrooms (sliced)
• 1 cup water
• 1 TBS flour (or Kudzu)
• 2 tsp Soy Sauce (or Tamari- shoyu)
• Sesame oil

Directions
• Pour some sesame oil into a pan and sauté the scallions and mushrooms until soft and golden
• Add the soy sauce and cook for a couple of minutes on a low heat
• Dilute the flour with a little bit of water first and then add the rest of the cup of water while stirring
• Add the water and kudzu to the leeks and mushrooms, bring to a boil while still stirring
• As you are stirring and the water comes to a boil, the gravy will thicken
• When the gravy has reached the desired consistency, adjust the seasoning by adding whatever spice or flavoring you would like to add

Autumn Millet Bake

Autumn Millet Bake
Serves 4 to 6.
INGREDIENTS:
1/4 cup extra virgin olive oil, plus oil for the dish
3/4 cup millet
1 medium butternut or other winter squash or 1 small pumpkin, peeled seeded and cut into 1-inch cubes
¾ cup fresh mullberies
¼ cup goji berries
Salt and freshly ground pepper
1 tablespoon minced sage leaves or 1 teaspoon dried
3 whole cloves
2 tablespoons maple syrup or honey
1 cup vegetable stock or water, warmed
1/4 cup pumpkin seeds
DIRECTIONS
1. Preheat the oven to 375F and grease a 2-quart casserole, a large gratin dish, or a 9×13-inch baking dish with olive oil.
2. Put 2 tablespoons of the oil in a small skillet over medium-high heat. When hot, add the millet and cook, stirring frequently, until fragrant and golden, about 3 minutes (note: don’t overdo it). Spread in the bottom of the prepared baking dish.
3.Scatter the squash or pumpkin cubes and the mulberries and goji berries on top of the millet. Sprinkle with salt and pepper and the sage and drizzle with syrup.
4.Carefully pour the warmed stock over all.
5. Cover tightly with foil and bake without disturbing, for 45 minutes.
6. Carefully uncover and turn the oven to 400F. As discreetly as possible, sneak a taste and adjust the seasoning. If it looks too dry, add a spoonful or two of water or stock. (note: This is key! The millet should be close to being cooked through at this point, if not you need to add liquid and keep it moist and cooking).
7. Sprinkle the pumpkin seeds on top, and return the dish to the oven. Bake until the mixture bubbles and the top is browned (note: and the millet is cooked through), another 10 minutes or so. Serve piping hot or at room temperature
