Curried Eggplant

Curried Eggplant
1 eggplant – Cool, moves blood
1 onion chopped- Warm, moves qi
1 cup of water
½ cup coconut milk – Warm, provides taste and ensures other ingredients are not drying.
1 tsp chopped ginger or .5 tsp. dried ginger -Warm, helps alleviate menstrual cramps.
1 tsp. chopped garlic- Warm, moves qi
.5 tsp. turmeric (or to taste),- Warm, moves blood, excellent herb for menstruation
.5 tsp cumin (or to taste),- Warm, helps move qi
1 tbsp. olive oil or ghee For flavor
1 tsp. salt (or to taste) For Flavor
Warm olive oil or ghee on medium heat in a pot. Add garlic, ginger and onion. Cook for a few minutes or until slightly soft. Add eggplant. Cook for another 5 minutes, stirring occasionally. Add 1 cup of water, put lid on pot. Cook until eggplant is soft and tender, about 20 to 25 minutes, add more water if necessary. Stir in turmeric, cumin, and salt. Turn off heat. Add coconut milk. Serve with brown rice or quinoa. For 3 servings
In Chinese medicine, eggplant is sweet and cool but it moves blood. Therefore, it is a nice food to eat during menstruation.
This recipe has a blood moving affect and can help to alleviate symptoms of dysmenorrhea. Contraindicated during pregnancy or heavy menstrual bleeding.

5 Asparagus Spears Cut into 1 inch Pieces LU, SP, K SL. Cool, Sl. Warm Sweet Reduces Dampness, Promotes Urination, Clears Heat, Promotes Blood Circulation
1 Onion Chopped ST, LU,LI Cold Sweet, Sour Clears Heat Transforms Damp
½ Tsp. Tumeric Cool
1 Tsp. Salt ST, K, LI, SI Cold Salty Clears Heat
Pepper ½ Tsp. ST, LI Warm and Pungent Warms MJ, Expels Damp and Cold
3 Tbsp. Butter or Olive Oil
1 and ½ Tbsp. Tomato Paste UB, K, SP ST Cold Sweet, Sour Promotes Urination, Clears Heat, Promotes Fluid, Supplements K
1 cup of water
½ Tbsp. Lemon Juice LV, ST Cool Sour Quenches Thirst, Regenerates Body Fluids

1) Wash and Peel Zucchini, Cut into Strips.
2) Melt Butter in Sautee pan and brown until golden.
3) Add onions to the pan and Sautee for 2 minutes.
4) Add Tomato halves Face side down.
5) Dissolve tomato paste, in water, and add lemon juice, salt pepper, and tumeric.
6) Pour solution over zucchini, Add Asparagus, cover pan with lid and let simmer for 35 minutes.
7) Serve on top of Cooked Pearl Barley.

Overall this recipe is cold and sweet and goes to the UB and K, SP and ST.
The cold counteracts the heat, and the sweet tonifies earth. The vegetables chosen promote urination therefore this recipe cools and drain the damp heat.

Recipe to Nourish SP/ST

Recipe to Nourish SP/ST

3 medium-large sweet potatoes, cleaned & cubed
1/4 c. organic unsulfured molasses
1/4 c. maple syrup
1/4 c. apple cider vinegar
1/2 onion, chopped
Dehydrated orange peel
Salt to taste

Vegetable stock
Yi Yi Ren

For barley:

In a crockpot place 1 part yi yi ren with 10-15 parts veggie stock. Cook until soft. I would set the pot to low throughout the day or the evening before (I cooked them for about 10-12 hours in the crockpot the night before).
I also make my own vegetable stock. I save the vegetable scraps that I do not use in other dishes (like carrot, sweet potato & onion ends, onion & garlic peels, any & all root vegetable parts). I keep a plastic bag full of these veggie odds & ends in my freezer and when I need to make stock I throw them all in a large pot, cover them with water and add salt & a few bay leaves (or any spices you like). I bring the water to a boil, then lower the heat & simmer the veggies for an hour or two. Give it a taste & add whatever seasonings you see fit!

For sweet tots:

Pre-heat oven to 350o.
Scrub sweet tots clean, dry & chop into decent sized cubes. Chop onion to desired consistency. Place both in a 9×13 pan.
In a small saucepan warm the molasses & maple syrup until less viscous. Remove from heat & stir in apple cider vinegar. Spread evenly over sweet tots in pan & stir so that they are all coated.
Sprinkle orange peel throughout the dish.
Cover dish w/ tinfoil and bake at 350o for about 1 hour to 1.5 hours (until sweet tots are tender).

Dish will serve 3-4 people.

Analysis of Recipe

Sweet potatoes: neutral & sweet

The overall goal is to tonify SP & ST. By serving it with yi yi ren & adding dehydrated orange peel I am hoping to create a more balanced dish  counteracting the potential for dampness since the dish consists of mostly sweet flavors. The cider vinegar & orange peel also help regulate the qi in the middle jiao, furthering assisting digestion to help the SP call off that good gu qi!


Pork and Black Beans

Pork ‘n black beans
Yields 6 servings

2 cans of black beans
1/3 up packed brown sugar
1 small onion, chopped
¼ cup catsup
4-6 slices of bacon

1. Add all the ingredients into a 1½ quart casserole, top with slices of bacon and bake for 1 ½ hours at 350 degrees.

TCM analysis: Overall tonifies KD yin.
black beans: sweet, sour, neutral. Strengthens SP, benefits diabetes, counteracts toxins, reduces dampness, benefits KD
brown sugar: sweet, warm. Strengthens digestion, lubricates LU, stops cough, warms up body.
onion: pungent, warm. Promotes sweating, resolves phlegm, diuretic.
Pork: slightly cold, sweet, moistens & nourishes organs, tonifies qi, strengthens digestion

Chicken Soup with Mustard Greens

Chicken soup with mustard greens
Yields: 8 servings

1 whole chicken, roaster, cut into 2 breasts, 2 drumsticks, 2 thighs, 2 wings
1 whole bundle of mustard greens, washed and chopped,1/2 inch thick.
5 cloves of garlic, chopped
1 medium onions
1 tbsp olive oil
1 box of Chicken broth
Enough water to cover chicken 1 ½ inches over
Salt and pepper to season.

1. Sautee chopped onions until transluscent and slightly brown in 1 tbsp of olive oil. Add chopped garlic and cook for 1 minute. Season with salt and peper. Add chicken broth and bring to a boil. Add all the chicken and water until the chicken is submerged with 1 ½ inches of water covering. Season with salt and pepper. Bring to a boil again and then bring down to simmer. Cook for 1 hour until the chicken is tender and nearly falls of the bone.
2. Remove chicken, carefully, it’s hot, onto a cutting board and remove bones, skin and cartilage. Place the cleaned chicken back into the soup and add the chopped mustard greens. Let the soup come to a boil and then bring down to simmer for 3 minutes. Wah-lah. Finished.

mustard greens: warm, pungent, relieves common colds, promotes urination, dissolves mucus, strengthens & lubricates intestines, ventilates LU, increases appetite
garlic: hot, pungent. anti-viral, anti-fungal, detoxifies meat/seafood, kills worms, removes stagnant food & blood stasis, reduces abscess
onions: warm, pungent. promotes sweating, resolves phlegm, diuretic.

Barley Casserole

Barley Casserole

(Serves 6-8)

2 cups pearled barley
2 tablespoons olive oil
1 large onion, sliced
3 garlic cloves, finely chopped
2 carrots, grated
2 celery stalks, diced
5 tablespoons shoyu
1/4 teaspoon fine sea salt
1/4 teaspoon dried basil
1/4 teaspoon dried oregano
1/4 teaspoon garlic powder

Preheat over to 350*F. Bring 3 cups of water to a boil in a large saucepan; add the barley, and cook for approximately 55-60 minutes or until tender. Drain off any remaining water and set cooked barley aside.
Heat the old in a large skillet over medium-high heat. Add the onion and garlic, and saute until the onion is tender, about 5 minutes. If the onion starts to stick or get brown, add a bit of water to the pan. Add the carrots, celery, shoyu, salt, basil, oregano, and garlic powder and cook for 5 minutes, stirring often, until the vegetable are tender. Add the barley, and stir over medium-high heat for 3 minutes. Taste the seasoning and adjust if necessary.
Transfer to a 8×12 baking dish and bake uncovered until heated through, about 35 minutes.

pearled barley- bland and cold, tonifies SP and ST, drains damp, promotes urination, reduces pustules, used to treat bi syndrome, edema, and skin conditions.
onion- warm and pungent, promotes sweating, resolves phlegm, diuretic.
garlic- hot and pungent, anti-viral, anti-fungal, detoxifies meat and seafood, kills worms, removes stagnant food and stagnant blood, reduces abscess
carrots- cool, sweet and pungent, clears heat, detoxifies, strengthens all internal organs, benefits the eyes, relieves measles, lubricates the intestines, promotes digestion
celery- cool, sweet, and sl. bitter, tonifies KD, stops bleeding, strengthens SP and ST, clears heat, lowers blood pressure, promotes diuresis, benefits blood

Overall this recipe helps bi syndrome, edema, and causes urination. Its also pungent and can help to detoxify.

Chickpea Soup

2-hour preparation time Serves 4
1.5 cups chickpeas (garbanzo beans) – neutral, sweet; HT, ST
1 medium carrot diced- neutral, sweet; LV, LU, SP & Improves Qi Circulation
1 onion diced — warm, pungent, LU, ST & promotes sweating
1 stalk of celery sliced-Bitter, sweet, cool, LV, ST — reduces damp & clears heat
5 cloves sliced garlic-acrid, warm/hot, sweet, salty, HT, LV, LU, SP — strengthens Yang, drains damp and phlegm
1 teaspoon minced garlic
2 twigs rosemary- warm, sweet, pungent, HT, KD, LU, SP — strengthens yang, reduces phlegm and warms the cold
2 twigs thyme-warm, bitter, pungent, LU, SP —resolves phlegm
black pepper-hot, sweet, pungent, KD, HT, LI, ST- warms, reduces damp and phlegm, reduces toxins
salt-salty, cold, KD, LI, ST,SP- clears heat and reduces phlegm and toxin
olive oil-neutral, sweet, SP, LV
Preparation and cooking:
Soak the chickpeas overnight in water. Drain chickpeas and cover again with water to 2 inches above the lever of the chickpeas. Add sliced garlic, rosemary, and thyme. Simmer partially covered for one hour. Remove thyme and rosemary twigs. Add carrot, onion, celery, salt and pepper. Cook for another 30 minutes or so. Add some more water. Beat the soup with and egg beater until partially pureed. Add minced garlic and cook a few more minutes. Add olive oil and serve.

Lentils with Brown Rice

Lentils with Brown Rice

3 tbs of water
1 medium onion, chopped
1 clove garlic, chopped
1 cup chopped up mushrooms
1 medium carrot, chopped
1 cup lentils
1 8 or 10 oz can tomato sauce
2 cups veggie stock
2 c water
1 tsp dried basil
1 tsp dried oregano
Crumbles of goat cheese (optional)

1 cup brown rice (shortgrain)

chopped parsley to taste – 2 tsp at least; I like about 1/3 cup.

Serves 4-6

Rice Cooker:
Put the onion into the rice cooker with the sherry or stock, and turn on the machine. Let the onion saute, as you chop and add the garlic, mushrooms, and carrot. Give the pot a quick stir as you add each
veggie. Add water if the vegetables start to stick, add the lentils, rice, liquids, basil, and oregano. Cover, let it cook, and allow recipe to stand about 10 minutes when the cooker shuts off. Stir in the parsley and serve. Sprinkle goat cheese on top.

Saute the veggies, add everything but the parsley, cover and bring to a boil. Reduce heat and simmer about 40-45 minutes, or until liquid is absorbed. Stir in parsley. Sprinkle goat cheese on top.

Quinoa Chard Pilaf

Quinoa Chard Pilaf

1-1/2 teaspoons olive oil
1/2 onion, diced
1-1/2 cloves garlic, minced
1 cup uncooked quinoa, rinsed
1/2 cup canned lentils, rinsed
1/4 pound fresh mushrooms, chopped
2 cups vegetable broth
1/2 bunch Swiss chard, stems removed

Heat the oil in a large pot over medium heat. Stir in the onion and garlic, and saute 5 minutes, until onion is tender. Mix in quinoa, lentils, and mushrooms. Pour in the broth. Cover, and cook 20 minutes.
Remove the pot from heat. Shred chard, and gently mix into the pot. Cover, and allow to sit 5 minutes, or until chard is wilted.

Serves 4

Kasha Cereal

Kasha Cereal

1 cup buckwheat groats
4-5 cups boiling water
½ onion, diced (optional)
A few grains sea salt

1. Place all ingredients in a pot with the boiling water. Bring to a boil again.
2. Cover. Reduce heat to low. Simmer 30 min until soft.
3. Place in a bowl.

Serves 2-4
