Squash and Potatoes

Locro — Sp qi vacuity

1 pound acorn or butternut squash cut into 2 inch squares —warm, sweet, tonifies sp, st, reduces inflammation.
2 potatoes cubed. Nuetral, sweet, tonifies sp, stomach qi.
½ cup peas Sweet, neutral. Sp. Harmonizes middle jiao and promotes urination.
½ cup corn kernals —Neutral, sweet, diuretic, nourishes heart, improves appetite, regulates digestion, improves kidneys.
1 onion Pungent, neutral, LU, ST. Clears heat, relieves toxicity, transforms phlegm and damp.
1 teaspoon Cumin- Warm, helps move qi
¼ cup Cilantro Cool, acrid, promotes sweat, strengthens digestion, promotes qi flow.
2 tsp. garlic warm, moves qi
Salt and pepper
1 tablespoon olive oil

Boil squash and potatoes in water so that there is 1 inch of water over veggies. Cook until they are very soft and mushy, approximately 25 minutes. In a separate pan, heat oil then add garlic and onion and cook until tender, 5-10 minutes. Add corn and peas, cumin, salt and pepper. Transfer onion mixture to squash. Add cilantro and queso fresco and serve. Serves 4.

This is a nice recipe for spleen qi vacuity. This is really a nuetral and balanced recipe and can be eaten by almost anyone with any pattern. Serve with rice.

Celery cherry salad

Celery Cherry Salad

Serving Size 2-3

3/4 cup sliced celery
1/3 cup dried sweet cherries
1/3 cup frozen green peas, thawed
3 tablespoons chopped fresh parsley
1 tablespoon chopped pecans, toasted
1 1/2 tablespoons fat-free mayonnaise
1 1/2 tablespoons plain low-fat yogurt
1 1/2 teaspoons fresh lemon juice
1/8 teaspoon salt
1/8 teaspoon ground black pepper

Directions
In a medium bowl, combine the celery, cherries, peas, parsley and pecans. Stir in the mayonnaise, yogurt and lemon juice. Season with salt and pepper. Chill before serving

Beet, Pea and Carrot salad

Beet, Pea and Carrot salad.

6 beets, peeled and steamed and chopped into small 1 inch squares
1 cup peas.
1 cup carrots
2 eggs hardboiled, chopped
 1 teaspoon vinegar
2 tablespoons mayonnaise or vegan version, added for flavor, similar properties to eggs and vinegar.
Salt and pepper to taste (less than 1 teaspoon each)

Steam veggies. Add all ingredients and mix. Serves 6 as a side dish.

This recipe will tonify the heart blood and spleen qi and calm the shen. Contraindicated for damp conditions or for food stagnation.

Beets– sweet, neutral. Sp, St, LV, HT. Stengthens middle jiao. Nourishes the heart, calms the shen.

Peas–Sweet, neutral. Sp. Harmonizes middle jiao and promotes urination.

Carrots- Sweet, neutral. Steamed and chopped into small 1 inch squares. SP, LV, LU, HT. Strengthens spleen and heart, nourishes and soothes liver, benefits the lung, diuretic, anti-inflammatory.

Eggs– Sweet, neutral, SP, ST, LU. Nourishes yin and blood, supplements spleen and stomach, calms the shen.

Vinegar-Sour, warm, bitter. Lv. Invigorates blood, clears toxin, astringes.
