Minty Peach and Jicama Salad

Minty Peach and Jicama Salad

2 cups water
1 cup white rice
4 tbsp lemon juice
2 tbsp extra virgin olive oil
1 tbsp raw honey
½ tsp salt
¼ tsp pepper
2 medium peaches, diced
2 cups diced jicama
1 cup fresh chopped mint

Cook rice in water. Mix lemon juice, oil, honey, salt, and pepper together to make a dressing. Add mint, peach, and jicama to cooked rice and toss. Pour dressing over salad. Serves 6. (Adapted from Cooking Light magazine).

White rice: sweet, cool; SP, ST. Harmonizes middle jiao, generates fluids, clears heat.
Peach: sweet, sl. sour; ST, L.I., LU. Lubricates LU, generates body fluids, clears heat.
Jicama: No info available. (I would venture to say is has a cool temp. and a moistening/heat-clearing quality).

Lemon: Sour, cool; ST, LV, LU. Generates body fluids, harmonizes ST, regulates qi, quenches thirst.
Raw Honey: Sweet, neutral; SP, ST. Harmonizes middle jiao.

Overall, this recipe generates fluids, clears heat, harmonizes the middle burner, and regulates LV qi.
Contraindicated in those with severe cold or phlegm-damp conditions.

Brown Rice Porridge

Brown Rice Porridge

1 cup brown rice (coarsely ground)
2 cups water
1/2 cup gou qi zi
2 tbsp raw honey
2 tbsp unrefined, expeller pressed flaxseed oil

In medium sauce pan, bring rice to a boil and reduce heat. Add gou qi zi and let simmer for 5-8 minutes, stirring occasionally. When a pasty consistency is achieved, remove from heat and add honey and flax oil. Serves 2 people.

Brown rice: Sweet, sour, warm; SP/ST. Strengthens SP/ST, drains damp, relieves irritability, stops diarrhea, cold hands and feet and nervous debility (contains B vitamins).
Gou qi zi: sweet, neutral; LU/LV/KD. Benefits LV/KD, moistens LU, benefits essence and brightens the eyes.
Raw honey: Sweet, neutral; SP, ST. Harmonizes middle jiao, reduces inflammation and pain.
Flax seed: sweet, neutral; Strengthens immunity, relieves inflammation, reduces pain, benefits heart, lowers cholesterol.
Overall, this recipe tonifies SP/ST, nourishes LV/KD yin, and clears heat.

Mulberry & Longan Granola Mix

Mulberry & Longan Granola Mix

6 cups rolled oats
1 cup raw honey
1 cup dried mulberries
1 cup longan
1 cup dried coconut shavings
1 cup da zao
1/3 cup coarsely ground flax seed
1 tsp ground cinnamon
dash of salt

Preheat oven to 350 degrees. Mix oats, honey, coconut, da zao, longan, cinnamon, and salt in large mixing bowl. Spread the mixture out on a sheet pan and bake for about 30 minutes, stirring occasionally. Remove from pan and add mulberries and flax seed. Cool on a rack or plate, stirring occasionally until granola mix reaches room temperature. Cover and store in the refrigerator. Yields 16 servings.

Oats: Sweet, warm; SP/KD. Supplements vacuity. Rich in Silicon (strengthens nerve and heart tissue).
Mulberry: Sweet, cool; HT/LV/KD. Nourishes blood/yin, calms the shen.
Longan: Sweet, warm; HT/SP. Nourishes qi/blood, calms the shen.
Coconut: Sweet, warm. Strengthens the body, activates heart functions
Da zao: Sweet, neutral. Strengthens qi/blood/yin, calms the shen.
Raw honey: Sweet, neutral; SP, ST. Harmonizes middle jiao, reduces inflammation and pain.
Flaxseed: sweet, neutral; Strengthens immunity, relieves inflammation, reduces pain, benefits heart, lowers cholesterol.

Overall, this recipe tonifies HT blood/yin, strengthens the middle jiao, and calms the shen.
Contraindicated in those with prominent phlegm, dampness, or qi stagnation. Eat no more than 1 cup per day.
