Carrot squash soufflé

The carrot squash soufflé is meant to help strengthen your digestion. It strengthens the spleen and large intestine, in order to stop diarrhea. The recipe is warm and nourishing, and will not be hard to digest. It also has anti-inflammatory properties to help your overall health.

Ingredients

  • 2 cups carrots, grated
  • 3 cups squash puree
  • 1 teaspoon grated ginger
  • ½ teaspoon each coriander and cumin
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt
  • ¼ cup ground almonds

Directions

  1. Preheat oven to 350 degrees.
  2. Sauté onion and ginger.
  3. Mix all the ingredients together.
  4. Sprinkle with almonds, bake for 35 minutes. (Healing with whole foods page 565).

 

Carrots- Sweet, neutral; spleen, liver, lung heart; Strengthens spleen and liver, nourishes and soothes liver, benefits the lung, diuretic drains damp, anti-inflammatory.

Squash- Cool, sweet; spleen, stomach; clears heat, detoxifies, promotes diuresis, quenches thirst, relieves restlessness.

Ginger-Pungent, warm; lung, spleen, stomach; disperses exterior cold, stops nausea and vomiting, detoxifies other herbs, reduces inflammation.

Coriander- Pungent, slightly cool; lung and spleen; promotes sweating, strengthens digestion, promotes qi flow.

Cumin- Pungent, bitter, slightly warm; spleen, stomach, large intestine; helps with abdominal pain and distention, protects against diarrhea and dysentery.

(Ginger, coriander and cumin together help with problems of flatulence (Healing with Whole Foods 210)).

Salt- Salty, cold; kidney; clears heat, cools blood, eases bowel movement, nourishes kidney.

Dijon mustard- Acrid, warm; lung, large intestine; harmonizes middle jiao, opens chest, descend qi.

Almonds- Sweet, neutral; lung, large intestine, Spleen; moistens lung and large intestine, supplements spleen and lung.

Butternut Squash Soup
Overall Recipe: Nourishes Kidney yin, engenders fluids, benefits spleen and stomach.

Onion: acrid, warm. Warms interior, moves qi and blood.
Butter: sweet, neutral. Tonifies deficiency, engenders fluids, moistens intestines.
Squash: warm, sweet. Tonifies spleen & stomach, nourishes yin, stops pain, moves qi.
Red Pepper: cool, acrid. Courses blood, improve appetite, reduce swelling.
Carrots: sweet, acrid, neutral. Strengthen spleen & stomach, clears heat, anti-inflammatory
Seaweed, e.g. kombu: cold, salty. Nourishes yin, moistens dryness, clears heat, softens hardness.
Broth: sweet, salty, warm. Nourishes qi, yin, blood & fluids.
Cumin: warm, acrid. Courses qi, releases exterior.
Eggs: sweet, neutral. Nourishes yin & blood, moistens dryness.

Butternut Squash Soup
Serves 4-61 onion, diced
1 Tbsp butter (or olive oil)
1 butternut squash, chopped
2 roasted red peppers, sliced
2 carrots, chopped
1 handful of seaweed of your choice (dulce or arame is good)
4 c. broth, chicken, beef or vegetable
1 tsp cumin
Salt and pepper to taste
4 poached eggs

Saute onions in the butter/oil until soft. Add squash and carrots and saute for a few minutes. Add the broth, seaweed, cumin and salt & pepper; simmer on medium heat. Meanwhile, slice and then roast the peppers in the broiler, for a few minutes on each side. Set aside, and peel when cool. Add to the soup when the carrots and squash are soft. Blend the whole thing with a handheld blender. In another pot, boil about 3 inches of water with 1-2 tsp of vinegar. Once it’s gently boiling, crack the eggs in (1 per person) and let it simmer for 3 or so minutes, until the whites are firm. Drop one egg into each bowl of soup.

Squash and Potatoes

Locro — Sp qi vacuity

1 pound acorn or butternut squash cut into 2 inch squares —warm, sweet, tonifies sp, st, reduces inflammation.
2 potatoes cubed. Nuetral, sweet, tonifies sp, stomach qi.
½ cup peas Sweet, neutral. Sp. Harmonizes middle jiao and promotes urination.
½ cup corn kernals —Neutral, sweet, diuretic, nourishes heart, improves appetite, regulates digestion, improves kidneys.
1 onion Pungent, neutral, LU, ST. Clears heat, relieves toxicity, transforms phlegm and damp.
1 teaspoon Cumin- Warm, helps move qi
¼ cup Cilantro Cool, acrid, promotes sweat, strengthens digestion, promotes qi flow.
2 tsp. garlic warm, moves qi
Salt and pepper
1 tablespoon olive oil

Boil squash and potatoes in water so that there is 1 inch of water over veggies. Cook until they are very soft and mushy, approximately 25 minutes. In a separate pan, heat oil then add garlic and onion and cook until tender, 5-10 minutes. Add corn and peas, cumin, salt and pepper. Transfer onion mixture to squash. Add cilantro and queso fresco and serve. Serves 4.

This is a nice recipe for spleen qi vacuity. This is really a nuetral and balanced recipe and can be eaten by almost anyone with any pattern. Serve with rice.
