Cinnamon-Currant Bread
One 9×5-in. loaf

Dry ingredients
2 c brown rice flour
¾ c wheat germ, toasted
½ c dried currants
2 ½ t baking powder
2 t ground cinnamon
½ t baking soda
½ t sea salt

Wet ingredients
1 ½ c milk
¼ c canola oil
¼ c maple syrup
1 lg egg

1. Preheat the oven to 350°F. Coat a 9x5x3-in loaf pan with oil or nonstick spray.
2. Combine the dry ingredients in a large bowl.
3. Whisk together the wet ingredients in a medium bowl.
4. Add the wet ingredients to the dry and mix just until evenly blended (as few strokes as possible).
5. Pour the batter into the loaf pan and spread evenly. Bake for 50 minutes (until toasty brown and a toothpick inserted in the center comes out clean). Cool 10 minutes before slicing.

-Whole wheat flour or whole wheat pastry flour can be substituted for the brown rice flour.
-Rice milk or soy milk can be substituted for the milk.
-Equal amount of applesauce can be substituted for the canola oil for less fat and more moistness.
-For muffins: divide batter into 12 muffin cups and bake for 25-30 minutes.

Brown Rice (flour): Sweet, slightly warm; SP, ST. Tonify qi, soothe ST, drain damp.
Wheat germ: Warm, sweet. Calm shen, benefit diabetic symptoms.
Currants: Sweet. Tonify qi and blood, anti-inflammatory.
Cinnamon: Hot, acrid, sweet; ST, KD. Strengthen ST, warm channels, stop pain, warm KD.
Sea Salt: Cold, salty, slightly sweet; KD. Promote digestion, strengthen KD, fortify bones, brighten eyes.
Milk: Sweet, neutral; SP, ST, LU. Tonify qi, nourish blood, moisten dryness.
Maple Syrup: Sweet, SP, ST. Harmonize MJ.
Egg: Sweet, neutral. SP, ST, LU. Nourish yin/blood, tonify SP/ST, calm shen.

Overall: Mostly warm in temperature, mostly sweet in taste, therefore it primarily tonifies qi, blood (SP qi root of blood fluids and egg nourishes blood). The sweetness and warmth soothes the spirit.

Contraindications: eat in moderation with damp or cold conditions.
