Whole Wheat Coconut Pancakes

The best way to calm your shen is through sweet whole-wheat coconut pancakes. Sweet coconut helps strengthen heart qi, while the whole wheat nourishes the heart and calms the shen. This recipe will also help nourish your blood and yin. It is a great breakfast to help start your day.

• 2 cups whole wheat flour

• 4 1/2 tsp baking powder

• 2 tsp cinnamon

• 2 tsp sugar

• 2 large eggs

• 2 cups + 2 tbsp coconut milk

• 2 tsp of coconut flakes

• Olive oil

Directions:

Mix all dry ingredients in a bowl. Add wet ingredients to the mixing bowl and mix well with a spoon until there are no more dry spots; don’t over-mix.

Heat a large skillet on medium heat. Lightly put oil to coat and pour 1/4 cup of pancake batter. When the pancake starts to bubble, you may add your fruit if you wish (lychee, strawberry, peach or pear). When the bubbles settle and the edges begin to set, flip the pancakes. Repeat with the remainder of the batter.

Baking helps build yin and yang.

Whole wheat flour- Sweet, slightly cool; spleen, heart, kidney; supplements qi, nourishes heart and calms shen, reduces thirst.

Baking powder- Moderates the affect of the other ingredients

Cinnamon- Acrid, sweet and warm; spleen, stomach and urinary bladder; Invigorates yang, dispels cold, promotes blood circulation, warms the mingmen fire.

Sugar- Sweet, neutral; lung and spleen; boosts the qi, harmonizes the center and moistens the lungs, treats lung dryness, lung vacuity, wind cold, taxation and fatigue. coughing and panting, mouth sores, wind-fire toothache.

Egg- Sweet, neutral; lung and large intestine; strengthens blood, jing and yin.

Coconut milk- Sweet, neutral; spleen, stomach, kidney; nourishes blood, yin and jing.

Coconut- Sweet, warm; heart and lung; strengthens heart and lung qi

Olive oil- Sweet, cool; liver, gallbladder; moistens, benefits the liver and gallbladder.

Contraindicated in anyone who is allergic to coconut. It is also very sweet and should be cautioned in diabetics.

Beet and Apple Muffins

Beet and Apple Muffins

Makes 30 muffins

Ingredients

  • 4 eggs-cool, sweet, nourishes yin, tonifies blood
  • 1.5 cups light brown sugar-warm, sweet, strengthens digestion
  • ¾ cup olive oil- neutral, sweet, sour, astringent
  • ¾ cup orange juice-cool, sweet, sour, clears heat, soothes liver, strengthens spleen
  • 3 cups whole wheat flour-sweet, slightly cool, nourish heart, calm shen
  • 1 ½ tsp. baking soda
  • 2 tsp. baking powder
  • 4 small green apples, peeled and shredded-cool, sweet, slightly sour, strengthens heart
  • 1 tsp. cinnamon-pungent, sweet, warm, promotes blood circulation, warms the mingmen fire
  • 1 tsp. lemon juice- cool, sour, regulates qi, benefits liver
  • 2 cups shredded, cooked beets-cool, sweet, nourishes blood, tonifies heart, calms spirit

Directions

1. Preheat the oven to 350

2. Put all four eggs into the mixer and beat for 3 minutes. Then add in the oil, orange juice, flour, baking soda and baking powder in the exact order listed, while the mixer is beating on a low speed. When the batter is smooth, turn off the mixer.

3. Toss the shredded apples with the cinnamon and the extra bit of sugar and lemon juice. Add them into the batter, together with the shredded beets. Using a spatula, gently turn and mix it into the batter until it is all incorporated. The batter should turn a deep pinkish color.

4. Line your muffin trays with muffin liners and fill a little over halfway with batter.

5. Bake about 15 minutes

Mushroom Millet Casserole for cooling

Mushroom Millet Casserole for cooling

Ingredients

4. cups cooked millet
Sauce: 1/2 cup whole wheat flour
½ onion finely chopped
1/4 lb of mushrooms
1 teaspoon oil (optional)
I 1/2 – 2 cups of water
2-3 tablespoons soy sauce
Parsley

Directions
Preheat oven to 350 F
Place millet in an oiled casserole dish
Sautee onions/mushrooms until soft
Add flour and coat vegetables well
Add water. Stirring constantly to keep from clumping
Bring almost to a boil
Reduce heat and simmer for 5-7 minutes
Add soy sauce, cover and simmer for 10 minutes
Poke holes in the millet so that the sauce can be absorbed
Pour sauce over the millet and bake for 20 minutes
Serve hot or cold

Millet: Qualities:”Queen of the Grains” sweet, slightly salty, cool SP/ST/KD
Cooling and strengthens Kidneys. Builds fluids.
Good for fighting against bacterial growth, Millet is one of the best grains for anti-fungal purposes. Can be used for diarrhea.
Cautions: Not recommended for cases of weak digestion

Mushroom regular: cooling food that reduces heat signs. (Sweet cool SP/ST)

Whole Wheat Biscuits

Whole Wheat Biscuits

(Makes 10 biscuits)

Ingredients:
2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon fine sea salt
1/2 cup safflower oil
1/2 cup nondairy milk (More or less as needed)

Preparation:
Preheat oven to 450* F.
Combine the flour, baking powder, and salt in a large bowl. Slowly pour in the oil, mixing with a fork until the mixture is combined. It will be quite crumbly. Add the milk a little at a time, stirring with a fork. You want to use just enough milk to bring the mixture together.
Gather the dough into a ball, and place it on a lightly floured surface. Knead the dough about 25 times, then sooth the dough into a ball and pat it into a 1/2 inch thick round disk. Use a 2-1/2 inch biscuit cutter or the rim of a glass or jar to cut out biscuits, gathering the scraps and re-rolling them to make a few additional biscuits. Place the biscuits on an un-greased baking sheet. If you like the sides crispier, place them about 1 inch apart. For softer sides, have the biscuits touching.
Bake on the center rack for 10-12 minutes or until the bottoms are golden.

Analysis:
Wheat- Sweet and sl. cold, supplements qi, nourishes heart and calms the shen, reduces thirst, good for qi xu, insomnia, and restlessness
Sea Salt- Cold, salty, and sl. sweet, harmonizes and promotes digestion, strengthens KD, fortifies bones, tendons and teeth, brightens eyes, and detoxifies

Overall this recipe is used for HT fire because it calms the shen, nourishes the HT, is good for insomnia, restlessness and reduces thirst.
